Ingredients

  • 2 tablespoons olive oil

  • 1 pound fresh okra, ends trimmed

  • 1 teaspoon olive oil

  • 1 clove garlic, minced

  • salt and ground black pepper to taste

Directions

  1. Heat 2 tablespoons oil in a large skillet over medium-high heat. Add okra and cook, stirring occasionally, until bright green, 3 to 4 minutes. Push the okra to the sides and add 1 teaspoon oil and garlic to the center of the skillet; cook for 1 minute. Stir the garlic and okra together until combined.

  2. Serve hot, seasoned with salt and pepper.

Cook's Note:

Use only okra less than 3 inches in length.
