Add okra and cook, stirring occasionally, until bright green, 3 to 4 minutes. Push the okra to the sides and add 1 teaspoon oil and garlic to the center of the skillet; cook for 1 minute. Stir the garlic and okra together until combined. Serve hot, seasoned with salt and pepper. Cook's Note: Use only okra less than 3 inches in length.
