Chorizo vs. Pork Sausage

For instance, Mexican chorizo commonly includes chilis for added heat. Chorizo is cured and dried, similar to salami, and is available as ground meat or sausages in casings. Ingredients

  • 12 ounce chorizo or pork sausage

  • 2 cups frozen whole kernel corn

  • 1 (14.5 ounce) can diced tomatoes, undrained

  • 1 cup uncooked instant rice

  • ½ cup water

  • 2 teaspoons chili powder

  • ½ teaspoon ground cumin

  • 1 (15 ounce) can pinto beans, rinsed and drained

  • ¾ cup shredded Mexican-blend cheese or Colby and Monterey Jack cheese

  • Chopped cilantro (optional)

Directions

  1. Brown the Meat

    If present, remove the casings from the sausage. In a large skillet, cook the pork over medium heat for 10 to 15 minutes or until brown. Drain in a colander and set aside.

  2. Simmer Veggies, Rice, and Spices

    Add the corn, tomatoes, uncooked rice, water, chili powder, and cumin to the skillet. Bring to a boil then reduce heat. Cover and simmer for about 5 minutes or until the liquid is absorbed and the rice is tender.

  3. Add Meat, Beans, and Cheese

    Stir in the beans and cooked sausage; heat through. Sprinkle the Mexican skillet dinner with cheese, then cover the pan and let stand for 2 to 3 minutes until the cheese is slightly melted. Top with cilantro, if desired.
