Mar 26, 2008 · I can tell you that crayfish are pretty cheap here, mainly because they just aren't as prized as the plethora of salt-water crustaceans (cigalas, langostinas, gambas, camarones, etc.). I do know that the species of crayfish native to Spain is nearly extinct due to persistent droughts and plagues. The farmed crayfish are obviously another story...

The regulations is that you can capture a crayfish for use as live bait (if use of live bait is allowed in the waterbody you are fishing) but it can only be used in the waterbody that it came from. This is in place so that crayfish are not released / transported from one water body to another.

Unforunately, the bigger/older/fatter the animal (fish, crayfish, birds, people, etc) the more toxins are present. Now back to your regularily scheduled question. Lots of crayfish in Paulina Lake.

In Australia there are numerous different types of closely related fresh water crayfish and they taste quite different. N. Yabbies and Marron are very different in quantity of meat and flavour for instance.

Crawfish shells (really, any arthropod exoskeletons) are mostly chitin, a polysaccharide that doesn't break down as easily as the cellulose compounds in plants (which are also polysaccharides, but not nearly as strongly bonded or as long-chain as chitin).
