Seattle’s weather is so unpredictable, it drives me nuts. Last week it was in the 80s, so warm that I even thought about getting an air conditioning system installed in our house! And this week, it has just been grey and cold and I basically have my heat on.

Seriously, I really wish that the weather stops playing hide and seek with us and just gives me ample amount of sunshine!

So because it was hot last week, I made myself lassi. And not just any lassi, I made myself 4 delightfully refreshing summer lassi! I am so excited to share these recipe with you guys!

How to Make Lassi?

I am sure most of you are very well familiar with this popular drink. But for those who don’t know lassi is a yogurt based drink, quite popular in the Indian subcontinent.

Lassi can be sweet or savory. It is made by blending together yogurt with water (or milk sometimes) salt or sugar and spices.

The savory lassi is usually flavored with cumin and salt. You can also add chaat masala to it, tastes really good!

The most basic sweet lassi just has yogurt, water and sugar in it.

The most popular lassi here in the United States is Mango Lassi. I wonder why it’s so popular here. Anyone knows? Because clearly mango lassi is not the most common/popular one in India!

4 Different Lassi Flavors for Summer!

Let’s see how we make them!

Saffron Lassi

Saffron and cardamom are 2 flavors which are usually used in Indian desserts. We combine the same flavors in this saffron lassi!

Start by making saffron water by mixing warm water with a generous pinch of saffron. To a large measuring jar/blender, add yogurt, saffron water, sugar and cardamom powder.

Rose Lassi

I have very fond memories of drinking rooh afza milkshake. Rooh afza was/is a very popular rose syrup readily available in India and my mom used to mix it with milk and give us all the time during summers! This one has the same flavors.

To a large measuring jar/blender, add yogurt, cold water, rose syrup and cardamom powder.

Pineapple Ginger Lassi

The sweetness of pineapple pairs so well with the strong flavors of ginger in this refreshing pineapple ginger lassi!

To a measuring jar/blender, add yogurt, pineapple, ginger, sugar, cardamom and pinch of black salt (optional).

I love making lassi with fresh fruits, just like this Strawberry Lassi. This raspberry coconut lassi is my new favorite!

To a measuring jar/blender, add yogurt, coconut milk, raspberries, sugar and cardamom.

  1. I don’t have any Rose syrup where I am though I know there’s an Indian grocery here in town and they might have it…But could you reccomend a substitute or better yet a {DIY version; like maybe combine with some amt. of Rosewater and lots of sugar or what have you? Rose essence? Let me know, I am not crazy about most sweet Lassi, love salty lassi, but will try something ‘exotic’ (to us Firengi at least) that sounds good to me. Thank you in advance

    1. use rose water and sugar! Rose water is available at all Indian/Mediterranean grocery stores. also available online!

  2. I think the mango lassi is most popular here because it’s usually the only kind on the menu in an Indian restaurant.

  3. Ooooh saffron! That sounds interesting. I’m going to have to give that a try. Though I’ve had this serious rose craving lately.

Fellow Seattle-ite here… yeah it seems we sometimes just alternate between summer and mild winter instead of a proper spring. We had 87F in May, now Monday’s high forecast is 65. I don’t mind as I have no air conditioning. I can cook more without ending up roasting behind my computers.

  4. Yeah… I know what you are talking about – in other parts of the country we get those as ‘Punjabi lassi’.. so yes, flavored lassi is probably not “the lassi” for Punjabis and Delhi-ites! 🙂

    1. well didn’t lassi originate from Punjab/Multan?..so the classic lassi will always remain that – simple without any fruity addition! 🙂

      1. 5 stars
Lassi, the traditional Indian drink has always been my favorite since childhood. There are many flavors of lassi. Origin of lassi can be traced back to the lands of Punjab in India. Lassi being a colder Punjabi drink is consumed all over India with different variants.

  5. Great flavor combinations, Manali! Although you will be surprised to know the mango lassi is quite favorite in Maharashtra, particularly Mumbai/Pune. Mango lassi the most favorite summer drink in my family. 🙂

    1. good to know Prajakta! Its not that mango lassi is unheard of in India but in Delhi and around where I grew up, lassi usually meant plain sweet or salty lassi…it was the same in Punjab..but I guess things are different now..
