Ina Garten's twelfth cookbook is on its way, and she even pushed up the release date so it can be in our hands by October 6. If you're still antsy to see what great dishes will be included, Ina gave her followers a sneak peek of one of the easy appetizers that will be found inside the book, and it's a delightfully fresh fig and goat cheese toast.
"Sneak peek from my new book Modern Comfort Food (available Oct 6th) - easiest appetizer ever! Fig & Cheese Toasts. Fig jam, goat cheese, a slice of fresh fig on toast and a drizzle of balsamic vinegar. Yum," she wrote in the caption. Yum, indeed! And for those who need step-by-step instructions, she published the recipe on her Barefoot Contessa website.
You'll need some country bread, fig spread, plain creamy cheese such as goat cheese or cream cheese, kosher salt, fresh ground pepper, fresh figs, microgreens, and thick balsamic vinegar. Then, you'll toast the bread to your desired crispiness, lather up that fig jam, soften the cheese in the microwave for about 30 seconds before spreading it on top, then sprinkle the salt and pepper, add fig slices and a few microgreens onto the toast, and finish it off with the balsamic glaze. It's really that simple, and it can probably be made with whatever similar spreads or fruits you have in your house already.
Although it's quick, the finished product looks like a work of art, so if it's any indication of what else Modern Comfort Food will include then it's totally worth the wait until October. And don't worry, Ina's still making her signature Cosmopolitans in quarantine. Bless her heart.
