This lovely coffee cake is loaded with fresh berries. It’s perfect for anyone with a sweet tooth. Serve with hot coffee or tea.

⅓ cup butter, softened
⅔ cup sugar
1 large egg, room temperature
2 tsp. grated lemon zest
¾ cup all-purpose flour
¾ cup whole wheat flour
½ tsp. baking powder
¼ tsp. salt
¼ tsp. baking soda
½ cup reduced-fat sour cream
TOPPING
⅓ cup sugar
2 tsp. all-purpose flour
½ tsp. ground cinnamon
1 cup fresh or frozen blueberries, thawed
½ cup fresh or frozen unsweetened raspberries, thawed
GLAZE
⅓ cup confectioners’ sugar
2 tsp. fat-free milk
⅛ tsp. vanilla extract
1. Preheat the oven to 350°. Grease a 9-in. springform pan.
2. Cream butter and sugar until light and fluffy. Beat in egg and lemon zest. In another bowl, whisk together flours, baking powder, salt and baking soda; add to creamed mixture alternately with sour cream, beating well (batter will be thick). Spread into prepared springform pan.
3. For topping, mix sugar, flour and cinnamon; toss gently with berries. Distribute over batter to within 1 in. of sides. Bake until a toothpick inserted in center comes out clean, 45-50 minutes. Cool on a wire rack 10 minutes. Remove rim from pan.
4. Mix glaze ingredients. Drizzle over warm coffee cake.

When I start my day with a real breakfast, I stave off hunger all morning. You can, too, with these easy burritos. Make a batch on a day you have extra time and store them in the freezer. Then zap one in the microwave before you leave the house.

TAKES: 25 min. • MAKES: 10 burritos
12 bacon strips, chopped
12 large eggs
½ tsp. salt
¼ tsp. pepper
10 flour tortillas (8 in.), warmed
1½ cups shredded cheddar cheese
4 green onions, thinly sliced
1. In a large cast-iron or other heavy skillet, cook bacon until crisp; drain on paper towels. Remove all but 1-2 Tbsp. drippings from the pan.
2. Whisk together eggs, salt and pepper. Heat skillet over medium heat; pour in egg mixture. Cook and stir until eggs are thickened and no liquid egg remains; remove from heat.
3. Spoon about ¼ cup egg mixture onto center of each tortilla; sprinkle with cheese, bacon and green onions. Roll into burritos.
FREEZE OPTION: Cool eggs before making burritos. Individually wrap the burritos in paper towels and foil; freeze in an airtight container. To use, remove foil; place paper towel-wrapped burrito on a microwave-safe plate. Microwave on high until heated through, turning once. Let stand 15 seconds.

DAD’S BLUEBERRY BUTTERMILK PANCAKES
My dad makes blueberry pancakes every Saturday. The combination of oats, cornmeal and buttermilk in the batter gives the pancakes a heartiness we can’t resist.

1 cup all-purpose flour
3 Tbsp. cornmeal
3 Tbsp. quick-cooking oats
3 Tbsp. sugar
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
Dash ground nutmeg
1 large egg
1½ cups buttermilk
2 Tbsp. canola oil
1 tsp. vanilla extract
1 cup fresh or frozen blueberries
1. In a large bowl, whisk the first 8 ingredients. In another bowl, whisk egg, buttermilk, oil and vanilla until blended. Add to flour mixture; stir just until moistened (batter will be lumpy). Let stand 15 minutes.
2. Lightly grease a griddle or large nonstick skillet; heat over medium heat. Stir blueberries into batter. Pour pancake batter by ¼ cupfuls onto griddle or skillet. Cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is brown.
