Crock Pot Ground Beef Enchilada Casserole is an easy layered Mexican dish the whole family will love!
We love these Burrito Style Beef Enchiladas and I am always looking for quick and easy alternatives and that’s how this recipe came about! We have to feed at the farm every night and that usually means by the time we get back home everyone is starving. I love short cook time crock pot recipes for those nights! They also work great if you need to run kids to practices and then are all able to sit down for a meal when you get home.
Crock Pot Ground Beef Enchilada Casserole
Now these are not traditional enchiladas by any means. Our family prefers flour tortillas so that is what I used. But corn would taste great and be closer to the traditional version.
You can also omit the cream of mushroom soup and add another can of Red Enchilada Sauce for a more traditional taste.

Crock Pot Ground Beef Enchilada Casserole
Ingredients
- 1 lb Ground beef browned and drained
- 1 package Taco seasoning
- 1 16 oz can Refried beans
- 8 6- inch Tortillas (flour or corn- whatever you prefer)
- 1 10 oz can Red enchilada sauce
- 1 10.5 oz can Cream of mushroom soup
- 1/2 cup Milk
- 2 cups Shredded Mexican Style Cheese
- Toppings: sour cream, black olives, etc. (optional)
Instructions
- In a medium skillet brown ground beef until no longer pink; drain.
- Add the taco seasoning, 1/3 cup of water and refried beans; stir until combined.
- In a medium bowl add the enchilada sauce, cream of mushroom soup and milk; mix until blended.
- Spray your slow cooker with non-stick cooking spray.
- Layer half the meat mixture, half the tortillas, half the sauce and half the cheese.
- Repeat layers and top with remaining cheese.
- Cook on high for 2 hours or on low for 4 hours or until bubbly and warm throughout.
