Slow Cooker Dixie Chicken

As we ease into winter and the weather continues to cool, our thoughts turn to comfort food.
And what could be more comforting than a hearty meal cooked slowly in a crock pot?


Chicken is always a popular choice for slow cooker recipes, and this Dixie chicken dish is sure to please. Inspired by the classic Lonestar Dixie Chicken, our resident foodie Sammy has added her own special twist to the recipe. The result is a flavourful dish that will leave your mouth watering. Best of all, it's easy to prepare and requires very little effort on your part. Serve it over some delicious mashed potatoes or your favourite vegetables for an extra-special treat.

Slow Cooker Dixie Chicken

Ingredients:

  • 2 large chicken breasts, cut into tenderloins
  • 1/2 cup all-purpose flour
  • 1 tbsp oil for frying
  • 3 garlic cloves, minced
  • 2/3 cup white wine
  • 400ml cooking cream
  • 1/3 cup chicken stock
  • 1 1/2 tbsp chopped parsley
  • 1/4 cup chopped spring onion
  • salt & pepper, to taste
  • 1 can corn kernels in spring water, drained
  • vegetables or mashed potato to serve



Method:


  • Coat chicken breast in flour. Heat oil in a large frying pan and proceed to brown the chicken evenly on all sides.
  • Add the minced garlic and white to the pan and allow to simmer for 1-2 minutes.
  • Add the chicken, garlic & wine into a slow cooker with the cream, chicken stock, chopped parsley, spring onion, corn and salt & pepper.
  • Stir together and pop the lid on; cook on a low heat for 2-3 hours (or more) until the chicken is cooked and tender. Stir occasionally.
  • Serve warm over mashed potato, roasted sweet potato or your vegetables of choice. Season with more salt & pepper as desired.
