Hello @ekowreel  ,Welcome on Google Cloud Community.
By saying "default" you mean SA with [email protected] email? Basically, once your VM is powered off, you can change service account attached to your VM without any problems. So :
1. create dedicated SA,
2. grant needed roles for Compute tasks handling , like Compute Admin ( of course stick with least privilege rule),
3. choose your SA when editing powered of VM,
4. save, start VM.
