The wires coming to the old garbage disposal come from the switch
You should not have to rewire anything at the switch
Just cut the switch on an if the old disposal turns on then turn it off . Leaving the switch off remove the wires from the old disposal.
One will be neutral most likely white . The other hot when the switch is on most likely black.
Wire the white ( neutral) to the neitral terminal on the new disposal and the hot from the switch to the hot usually copper colored or marked . It will be isolated from the disposal housing.
I will be right back with an illustration
Backing up a bit your new disposal will likely have a black and white wire and possibly a green.

i have already replaced the disposal but im not sure how the wires connect in the box with the on off switch both black to the top off position and the two white to the on position i dont remember two wires to each post
Black to black or hot from switch. White to white (neutral) green to ground.
black from the disposal goes to the top screw on the switch black feed (hot) to the bottom
White from the disposal wire nuts to white in the box with the switch
This is of course if you dont have a box like in the disgram
