Masala Milk – Masala Doodh
Masala milk is a very delicious sweetened milk, flavored with masala milk powder. Masala milk powder is made with almonds, cashew nuts, pistachios, nutmeg, saffron, and green cardamom.
This masala doodh is usually prepared on Sharad Purnima or Kojagiri Purnima. In Maharashtra, people worship the goddess Lakshmi on this day since it is believed that she visits her devotees on a full moon night. This milk is kept under the moonlight for a couple of hours and then it can be distributed among everyone.
Today is a Kojagiri Purnima and every year my family enjoys having this milk while chit chatting or playing some board games before going to bed.
You can enjoy this drink throughout the year. Serve this warm, super cozy, and soothing drink in the winter or as a cold and refreshing drink during summer.
Masala milk powder is readily available in the stores but you can make it very easily at home. Readymade powder contains preservatives and is loaded with sugar to increase their profit by adding less nuts in the mix. Additionally, you can add fresh and good quality ingredients in the masala milk powder.
You can simply skip adding sugar in the masala and add a little while boiling the milk as per your preference.
Masala doodh has various health benefits. Saffron may help to improve your sleep quality, reduce depression, and help to relieve stress. Nutmeg boosts your blood circulation, treats symptoms of indigestion, relaxes your tired muscles, and gives a good night’s sleep.

- Almonds
- Pistachios
- Cashew nuts
- Cardamom
- Nutmeg
- Saffron
- Milk
- Sugar
Masala Milk Step By Step Recipe
Masala Milk Powder
In a pan, add almonds, pistachios, and cashew nuts, roasting them for 2-3 minutes on low heat. Set it aside to cool down completely.
Combine all the nuts into a chopper or food processor and make a coarse powder.
Add cardamom powder, nutmeg powder, and mix it well.
Combine some saffron, mix everything well, and store it into an airtight container until ready to use.
Masala Milk
In a heavy bottom pot, add some milk and heat it on medium low heat for about 5-7 minutes.
Once the milk is warm, add some sugar, masala milk powder, and boil the milk. Keep stirring occasionally. Add some more saffron strands if you wish or adjust the sugar at this point.
For the best tasting milk, let it sit for 2-3 minutes on low heat by stirring frequently, and serve.
Tips For Making Masala Milk
- Slightly roasting the nuts is very important to remove the moisture from them, release the aroma from the nuts, and increase masala milk powder’s shelf life.
- Make the masala milk powder in a smaller quantity to keep it nice and fresh.
- This masala milk powder recipe makes around 12 servings of masala doodh.
- While grinding the nuts make sure to lightly pulse them. If you grind them on a high speed continuously, they will release natural oil and it will change the taste of the masala doodh. I prefer using my mini chopper.
- Use full fat milk for the best tasting masala milk and keep it on low heat once it’s boiled.
Variations
- You may add ⅛ tsp of turmeric powder in the milk to give an awesome color to the milk.
- Skip adding nutmeg powder if you wish.
- You may increase the quantity of some nuts and reduce the quantity of other nuts.
- Simply use any two nuts like almonds and pistachios or cashews and pistachios.
- Use any kind of dairy free milk of your choice for this recipe but full fat milk or 2% milk taste the best.
- Add any sweetener of your choice or completely skip adding it.
- You may add more or less masala milk powder as per your preferences.
How To Store Masala Milk?
Masala milk powder has a very good shelf life. It can be stored in an airtight container for a month or you can store it in the refrigerator for 3-4 months.
Store the masala doodh in an airtight jar or in a steel pot for 3-4 days. Reheat the required portion in the microwave and serve. You can have it chilled as well.
How To Serve Masala Milk?
It can be served piping hot on cooler days. Consuming it before going to bed will give you a good night’s sleep.
Serve it chilled on hot summer days as a refreshing and soothing drink.
Masala milk can be served warm along with sabudana khichdi, sabudana vada, farali pattice, or sabudana thalipeeth on a fasting (vrat) day.
