Pineapple Cucumber Lime Spritzers- pineapple juice served with cucumber, lime, and mint infused sparkling water makes for a light and refreshing drink that’s perfect for summer!
Is it just me or have you also been fantasizing about a tropical beach for the last couple of months?
I feel like this happens to me every summer. I get so excited for the warm weather and then I sit around and day dream of Hawaii the entire time. I think I need a summer vacation home in Kauai. Ha! Can you imagine?
That definitely won’t be happening anytime in the near future so for now I’ll have to settle for drinking tropical spritzers and listening to Bob Marley while I sit on the patio in front of a fan. It helps, trust me.
So I’ve been on a bit of a pineapple/cucumber /mint kick lately. If you follow me on Instagram you might of seen this smoothie made with coconut milk. It is superbly refreshing, as are these spritzers. Albeit, these are a little lighter and more of the cocktail hour variety.
They start with sparkling water infused with cucumber slices, fresh mint and a bit of lime. Then that gets mixed with pure pineapple juice for a bubbly drink that will instantly transport you to the tropics.
The recipe is written sans alcohol but you can easily turn them into a cocktail by replacing a few ounces of the sparkling water with vodka or rum. I personally prefer vodka. Rum and I don’t have a good history with one another.
Whichever way you decide to serve them, they’re sure to help get you through these hot summer days. Cheers to that!
Pineapple Cucumber Lime Spritzers
Yield: 4 (8-ounce) spritzers
Prep Time: 5
Total Time: 5

Ingredients:
- 25 ounces sparkling water
- 1 medium-size cucumber, sliced
- 8 mint leaves
- 1 lime
- 32 ounces pineapple juice (no sugar added)
Directions:
Open bottle of sparkling water and pour out about 4 ounces. Stuff add 1/2 of the cucumber slices, 4 mint leaves and juice of 1 lime. Note: I had to quarter the cucumber slices in order to fit them the top of the bottle. I also only used 1/2 lime since my sparkling water was lime flavored. Reseal and refrigerate for at least 4 hours.
When ready to serve, add ice to each 8-ounce glass then fill half way with pineapple juice. Add a few slices of cucumber. Pour in sparkling water until filled to the brim. Serve cold with remaining fresh mint for garnish and/or lime and cucumber slices.
To make this alcoholic, replace a few ounces of the sparkling water with your favorite vodka or rum.

These were so good. I made them a couple weekends ago to sip while I was by the pool. It really made me feel like I was in Hawaii. David and my dad added rum to theirs and liked it too. I did skip the mint step because we never seem to have any in the stores here.

My mind always goes to Hawaii too…there’s no happier place on earth for me! This drink would make me feel like I’m on a tropical vacation and I’d love to try it as a cocktail too!
This looks so good! I always have sparkling water in the house and we’ve got a fresh mint plant outside begging for a job to do. I agree it would be good with vodka too, depending on your mood!

I don’t think there’s ever a time I’m not dreaming of Kauai… that deserted beach, waves crashing, toes in the sand, Albatross flying over head and lazy Monk Seals coming ashore… ahhhh…. it’s time to go back (insert crying emoji)!! Lakewood juices are absolutely fabulous! Just finished off a bottle of pineapple this morning – I love how they have little pieces of pineapple in the juice. I’ll take a glug of vodka in these refreshing sippers. The mint is a fabulous addition. Delicious Sarah!
