Little Sunny Kitchen 20-minute potatoes
This recipe from Little Sunny Kitchen has minimal ingredients, a five minute prep time and only 20 minutes in the air fryer.
Ingredients
- 1 and 1/2 pounds potatoes cut into 1 inch pieces
- 2 tablespoons olive oil
- 1/4 teaspoon smoked paprika
- 1/2 teaspoon garlic powder or granules
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
Method
1. In a large bowl, toss the potatoes with olive oil, smoked paprika, garlic granules, and season with salt and pepper. Make sure that the potatoes are well coated.
2. Place in the Air Fryer basket, and roast at 380°F (195°C) for 10 minutes. Flip the potatoes, and roast for 10 more minutes.
Tips
- Little Sunny Kitchen advises that the best potatoes for roasting are Yukon Golds, red potatoes, and russet potatoes. But you can use any potatoes for roasting.
- Use tongs or turner to flip the potatoes halfway through, shaking the basket might break some of the potatoes and won’t flip them all.
- If you’re using starchy potatoes, then it helps to soak them in cold water for 10-15 minutes prior to roasting them to get rid of the extra starch. Make sure to pat dry the potatoes, as otherwise, they will steam rather than roast.
- You don’t have to preheat the Air Fryer, but if you have time, then preheating it for 5 minutes will result in crispier potatoes.
This recipe from Curlys Cooking results in potatoes with a crisp exterior with a super fluffy interior.

- 1 tsp sea salt
Method
1. Peel 1.5kg potatoes and cut into large chunks. Add to a large pan
2. Par boil the potatoes for 7 or until you can insert the tip of a sharp knife
3. Drain the potatoes thoroughly in a colander
4. Toss the potatoes in the colander to rough up the edges. Leave the potatoes to steam dry for a few minutes
5. Preheat your air fryer if needed
6. Put the potatoes back in the pan and add 2 tbsp oil and 1 tsp sea salt
7. Add the potatoes to your air fryer basket – you might need to do this in batches. Make sure you don't over crowd the basket
8. Cook the potatoes for 25 minutes at 190°C, turning half way
9. If you want them even more crisp you can cook them for a little longer, just check them every few minutes
Tips
You can make these roasties ahead of time because reheating them couldn’t be easier. Just put them back into the air fryer and heat through for 5-7 minutes until they are piping hot in the centre and crisp on the outside.
One of the most important things to remember when air frying is to not overcrowd your basket. You want the air to be able to circulate properly around the food to get it nice and crisp.
Before you put the potatoes in the air fryer, make sure you let them steam dry. Wet potatoes won’t crisp up as well. All you need to do is to leave them sitting in the colander for a few minutes to dry and then you’re good to go.
