Wann up cn of Malt in pan of water so that it can be poured. Measure I l/3 cup,
dissolve in ll2 gal cold fresh watr in galton pot with heating and stining.
Continue heating solution, adding sugar (or IQro synrp) with stining to prevent buming
While monitoring the temperature, cautiously heat to boiling. Do NOT boil over. Have
hot pads ready to remove from heat.
Add2 gal fresh cold watcr to 5 galjug, then add hot sugar solution with a funnel,
avoiding sides ofjug or the jug may crack from heat.
Filljug to the hip ofthejug with fresh cold water (approxmately 4 1/2 gal). This
rclution of sugars is termed the 'wort.'
Add the bubbly yeast suspension to thejug (pitch the wort'). Place air lock on top, and
let sit at RT (5'F is best for brewer's yeast).
Afr l-2 days, the fermenting brew should have good head (Ihis is called tlre high
kreusenen stage). After 4 days, the frothing should subside, whereupon you 4.s. to neck
of jug with water.
After about 8-10 days, bubbling should have decreased o very slow rate. In each of the
l0 2 Liter soft drink bottlqs, bottles, add 2 teaspoons of sugar with rnnel. Fill by
siphoning, avoiding diment of yeast at bottom ofjug. 0.J. to neck of bottles with

10. Screw on caps securely (not roo tighg ad store in 6G70oF place for at least lGl5 days
for 'bottle conditioning'. During this time, the residual yeast ferments the additional
sugar which esul in effervescence.

To taste, place in fridge for at least 12 hs. Do not disturb. Decant into pitcher,
