About Goldilocks

Goldilocks Bakeshop is a bakeshop chain based in the Philippines, which produces and
distributes Philippine cakes and pastries. The chain was named after Goldilocks, a character from
the fairy tale Goldilocks and the Three Bears.
In 1976, Goldilocks of Southern California opened its doors for the first time in North
America. This was followed in the early eighties with store openings in Vermont and West
Covina.
The Panorama City store was inaugurated on Valentine's Day 2001. The
central manufacturing was also opened in Santa Fe Springs at the end of year
2001 and now supplies most of the Southern California stores' needs. Cerritos,
Eagle Rock (Los Angeles), and North Hills were opened thereafter. The central manufacturing
facility was built to better meet the growing demand of its loyal customers.

Goldilocks first made its appearance in the San Francisco Bay Area in 1979. Goldilocks Canada
on the other hand, opened its stores in Vancouver in 1984. Although it has only one retail store,
it supplies Goldilocks products to Asian food stores across Canada. Today, the Northern
California operations consist of eight retail stores in San Francisco, South San Francisco, San
Jose, South San Jose (Aborn), Union City, Concord, Mountain View, and Milpitas. Plans are also
underway to open more stores in other locations to serve loyal customers in the
near future.
The commissioning on August 1996 of this 57,000 sq. foot central commissary
marked an important milestone in the history of Goldilocks in North America.
This paradigm shift moved Goldilocks from a suburban mom-and-pop operation into the
forefront of state-of-the-art manufacturing, with the ability to provide products not only for its
own affiliate retail stores but for other institutional accounts such as Costco, Ferntrade,
Supermarkets, and other wholesale customers. Over the last year, it has been able to
accommodate its customers' unique requirements for products to meet the current market
demands. With the addition of automated equipment and USDA
approval in 1998, Clarmil Manufacturing, with its highly skilled
workforce (over 150 employees including management), has the
capacity to cater to over 20 stores and manufacture for its Private Label
and Co-Packing customers.

It all started with the fairy tale dream of the founders, who set out to bake and decorate cakes and
pastries that would please brides, children, and customers with all sorts of celebration needs.
The goal of Goldilocks remains the same: For customers to come out of any Goldilocks store
not only satisfied but delighted.

Healthy Breads from Goldilocks
In the age when people are concerned about eating healthy, can they still indulge in their favorite
breads without worrying about their health? They actually can with the bread products from Goldilocks,
the favorite Filipino bakeshop.
Bread products from Goldilocks are now fortified with iron and Vitamin B complex vitamins
Thiamine, Riboflavin, Niacin and Folic Acid. Their breads are cholesterol-free, ideal for those
who want to eat healthy.
The Goldilocks breads have 0 grams trans fats per serving. Trans fat, according to the U.S.
Food and Drug Administrations website, is made when manufacturers add hydrogen to
vegetable oil. This process of hydrogenation increases the shelf life and flavor stability of foods
containing these fats. Trans fat can be found in vegetable shortening, some margarines, crackers,
cookies, snack foods, and other foods made with or fried in partially hygrogenated oils.
The healthier Goldilocks bread products are guaranteed to taste good but are, at the same time, a
healthy alternative. Now, aside from the pan de sal, sandwich bread and ensaymada, Goldilocks
breads like the monay, pan de leche, banana bread, pandeciosa, raisin bread, ube bun, cream
cheese bun and hopia can be enjoyed without the worry.
Breads
Monay -Milk and Egg bread; This is a heavier and finer textured Bread.
Pan de Sal-The traditional Filipino dinner rolls. In Spanish the term literally means "salted
bread".
Pan de Leche-Sweet dinner rolls; the name is misleading, however, because it means "milk
bread literally in Spanish.
Banana Bread -A bread loaf or a slice from a banana bread loaf; ripe bananas mashed and
mixed with dough.
Sandwich Bread-White slice bread.

Sweet breads
Pandeciosa - Loaf of Soft sweet bread topped with a Sugar glaze.
Raisin Bread - Sweet bread with Raisins.
Ensaymada - Sweet butter bread twisted and twirled into a turban. Special fillings include Ham,
Macapuno, and Ube.
Ube Loaf - Sweet bread filled with Ube Halaya (purple yam).
Mongo Loaf - Sweet bread bun filled with Mung Bean.
Hopia - Paper-thin layers of flaky pastry filled with black beans, yellow beans, taro, ube, or
flavored with pork.
Meat-Filled Breads
Beef Pie (Empanada) - Sauted Ground Beef wrapped in Flaky pastry.
Chicken Pie (Empanada) - Sauted chicken wrapped in Flaky Pastry.
Pork Bun Bread filled with sauted chunks of pork in sweet gravy.
Siopao - Literally means "hot bun" in Chinese; steamed white bread filled with sauteed pork in
sweet gravy. Other fillings available are chicken and bola-bola.
Native Cakes
Biko - Glutinous rice pudding cooked in Coconut milk and Brown sugar, garnished with Latik;
also comes in the Ube flavored variety.
Cassava - Native cake made from the Yucca plant (Kamoteng-Kahoy) and Coconut milk, topped
with Macapuno (coconut strings) and Cheese.
Cutchinta - Steamed chewy light brown to deep Orange rice cakes.
Leche Flan - Crme Caramel but with a Spanish influence. It is heavier and creamier than the
commercially available variety.
Puto - Steamed rice muffins; comes topped with Cheese or Ube flavored.
Native Treats & Candies
Banana Chips - Thin slivers of sweet Bananas glazed with Caramel and cooked to the right
crispness and golden color.
Boat tarts - Boat-shaped tarts made from Short Pastry and filled with tropical fruit fillings:
Macapuno, Langka (Jackfruit), Ube (purple yam).
Candies - Tropical fruits made into chewy candies and rolled in sugar.
Caramel Popcorn - Caramel coated popcorn.
Chicharon - Seasoned fried pork skin with two flavors, salt & vinegar and hot & spicy.
Fresh Pastillas - Soft candy made from milk and sugar.
Cookies
Broas - Light cookies similar to Lady Fingers.
Camachile - Yellow finger cookies.
Chocolate Crinkles - Deliciously soft, fudge-like chocolate cookie that is encased in a coating
of confectioners (powdered or icing) sugar.
Galletas - Egg crackers.
Lengua de Gato - Literally, the "cat's tongue" in Spanish; Thin crisp tongue-shaped cookie with
prominent buttery taste. Come in different flavors (Vanilla, Mocha, Chocolate, and Marble).
Polvoron - Similar to the English Shortbread; a mixture of Toasted flour, Milk, Butter, and
Sugar cooked and then molded; available in the plain and flavored variety ( with Cashew,
Pinipig-rice crispy, Peanut); name is derived from "pulbos" in Tagalog to denote a powdery
candy.
Snack Cakes
Brownies - Chewy Chocolate squares with Hazel nuts.
Chiffon Slice - Light buttery cake with two flavors, Mocha and Vanilla, joined together with
Butter icing.
Pound Cake - Dense smooth buttery cake; the Marble variety has swirls of Chocolate; comes in
a loaf and in individual slices.
Mamon - A soft and fluffy French Sponge cake; the "Special" variety is brushed with Butter
and sprinkled with Cheese and Sugar; also comes in Mocha flavored variety.


Rolls
Rolls - Sheets of Sponge cake filled with a specific filling and icing, then rolled to form a log.
Available in the following flavors : Mocha, Chocolate, Vanilla, Mocha-Macapuno, Ube, Ube-
Macapuno.
Brazo de Mercedes - Rolled meringue filled with Lemon flavored custard. Literally, it means
"the arm of Mercedes" in Spanish.
