I lost a document that I thought Id saved on my

that Im a technical moron. I still have VHS tapes
at home. I just dont understand the modern world.

if they did the same job they would all be paid
the same but currently that doesnt happen.
I drive an adorable little black Golf that
I got 13 years ago. I dont believe in fancy
cars they make me nervous.
The shop I cant walk past is Marks
& Spencer for their prawn sandwiches, black
opaque tights, macaroni cheese and Percy Pigs.
The most expensive thing Ive ever splashed
out on is a pair of very expensive boots from
Azzedine Alaa. I felt very guilty but I wear them
a lot. Theyre a deep-red ankle boot and sound
disgusting, but they werent an impulse buy

I just want to lick them! I wont say how much

It was fun, she recalls, but
I dont think it crossed my mind that
I could do it for a living. Having seen
her mother raising three children by
herself, she wanted a more secure
life and opted to study economics
and fine arts. But the lure of acting
was too strong and, after taking a
year off to travel, she moved to
Sydney to study at the National
Institute of Dramatic Art.
The business has been good to
her. After graduation, she worked in
theatre and TV before breaking into
film. Although she still loves theatre
work, its her many movie roles that
have made her an international star.
Shes had diverse roles in films such
as Elizabeth, The Aviator (for which
she won a best supporting actress
Oscar), Blue Jasmine (a second
Oscar, this time for best actress)
and the Lord Of The Rings franchise.
Shes as comfortable in Middleearth as she is in Manhattan and
as brilliant in period dramas such
as Carol as she is in contemporary
dramas like Babel, prompting one
journalist to ask her what she thought
made her such a great actress. Her
response? Oh God, I am utterly the
wrong person to answer that question.
I have no idea. Hopefully a rich set of
life experiences Im able to draw on.
That said, she wont just play
variations of herself. Im not
interested in imposing my own
value system on to a character.
Its like having conversations
continually with like-minded people.
You get a very skewed perception
of the way the world works.

according to Dr Peter
Lovatt aka Dr Dance,
who runs the Dance
Psychology Lab at the University of
Hertfordshire, thats sound advice.
The health benefits of dancing are
well-established, he explains. When
people engage in different types of
social dance, theres a measurable
change in their mood. They become
less fatigued, less depressed, their
levels of vigour go up and there are
positive changes in their cognitive
processing. Even five minutes of
dancing makes people think more
sharply and laterally.
Dancing also promotes physical
fitness it contributes to heart and
lung health, is a great workout for
toning and strengthening muscles,
helps maintain a healthy weight
and strengthens the bones.
Dancing is healthy, fun and back in
the day was the way many of us met
our partners. Its unfortunate then that,
as a nation, we seem to be hanging
up our dancing shoes. Almost half
the nightclubs in Britain have closed
over the last decade, including the
legendary Hammersmith Palais,
which was recently rebuilt as halls of
residence with dancing restricted to
Zumba classes in the gym. Industry
experts blame a range of factors
the smoking ban, people pre-loading
with cheap drinks before they go out,
the recession but whatever the
reason, and our addiction to Strictly
Come Dancing notwithstanding, our
dancehall days are in decline.
According to Dr Lovatt, another part
of the problem is cultural. Years ago
a lot of social dancing happened
cross-generationally. At a Butlins,
there would be one entertainment
hub where everybody would dance
and enjoy themselves together. Now
we segregate dancing into age groups
for children, for teenagers or the
elderly. In France and Italy, where
on summers evenings there might

What is your favourite product
from your HairWise range? The
anti-frizz argan oil. Our brief was
to create something like an existing
product but our finished version was
actually a lot better. Its much lighter
and easier to use. Sometimes its
better not to be the first.
What have been the high points
of your career? Opening my Mayfair
salon in 1991 and getting an OBE in
2008. But Im fortunate that Ive had
many aspects to my career and its
hard to pin down certain moments.
I love doing what I do. Its a great
opportunity to get up close and
personal with people I admire.
Whose hair would you love to
do? I used to say the Queen, but
I dont really want to change her
hair. Madonna has eluded me, too,
and Im a big fan of hers. Someone
once told her so she called me up,
but I missed her call. I was gutted!
Whats the most expensive item in
your wardrobe? Probably my Savile
Row suits, which were two or three
grand each, or a John Galliano coat,
which was about 1,800. Ive had
it for about 15 years but Ive got
so much wear out of it.
And whats the oldest item? A Bill
Gibb sweater from the 70s. I bought
it when I was about 17 and it cost me
three weeks wages. My girlfriend,
Kelly, wears it now.

Fig, prosciutto and Gorgonzola tartlets
Makes: 24
Preparation time: 30 minutes
Cooking time: 30 minutes
250g (8oz) plain flour, plus extra for dusting
150g (5oz) cold butter, cut into cubes
2 large eggs, 1 beaten
200ml (7fl oz) cream
A pinch each of salt and pepper
6 fresh figs
12 prosciutto slices
150g (5oz) Gorgonzola cheese
OPreheat the oven to 180C/350F/gas mark 4.
OPut the flour and butter in a food processor then
blitz on the pulse setting until the mixture resembles
fine breadcrumbs. With the motor running, slowly
add the beaten egg and blend until the mixture
begins to come together.
ORemove the pastry from the food processor, gather
into a ball and flatten slightly. Roll out on a lightly
floured surface, to the thickness of a 50p piece. Cut
out into 6cm (2in) rounds using a biscuit cutter.
Use the pastry to line 2 shallow 12-hole bun tins (the
sort you would use for fairy cakes but not a muffin or
Yorkshire pudding tin as it will be too deep). Press the
pastry into the base and sides then chill in the fridge.
If you only have 1 tin, make the tartlets in 2 batches.
OBeat the other egg and cream together then
season with the salt and pepper.Remove the tops
from the figs and cut into quarters. Into each case,
put in half a scrunched-up prosciutto slice and a
crumbling of Gorgonzola. Cover to the top with the
cream and egg mixture then top with a piece of fig.
OBake in the oven for 18-20 minutes or until the
pastry is nicely browned and the filling has cooked.

OBreak up the trout into chunks and mix thoroughly
in a bowl with the rest of the pt ingredients using
a fork until well combined.Serve by scooping a
spoonful of the pt on to each knckerbrd piece.

Smoked salmon on beetroot rostis
with cream cheese horseradish
150g (5oz) cream cheese, at room temperature
2 tbsps chopped fresh chives
2 tsps creamed horseradish
1 tbsp drained capers, coarsely chopped
Zest of 1 lemon
Salt and freshly ground black pepper
2 large raw beetroots, peeled and grated
2 large potatoes, peeled and grated
2 eggs, beaten
1 pack good-quality smoked salmon
O Preheat the oven to 150C/300F/gas mark 2.
O In a medium bowl, combine the cream cheese,
chives, horseradish, capers, lemon zest and
teaspoon each of salt and pepper until smooth.
Set aside until later.
O Mix together the beetroots and potatoes. Squeeze

I nearly fainted when, in 1984,
I was asked to co-host the Sundaynight ITV show with her. Id grown
up listening to her music and was
terrified of meeting her for the first
time. But when we met and hugged
at our first rehearsal, I realised she
was nervous, too. This show was
a huge deal for both of us and
somehow, without words, we
knew wed support each other.
Sure enough, the series was an
instant hit and regularly attracted
more than 15 million viewers.
A lot of the sketches are forgotten
now. What people remember are the
reunions the surprise element that
ran through each programme. We
soon discovered lots of those reunited
people had split up for good reason
and it took careful editing to keep
the tone light.
Everything on the show was lavish
and I was swept along in Cillas wake.
She had her own driver, so I had
my own driver. She had a new
dress every week, so I had to
have a new suit. We were treated
like old-fashioned movie stars.
But as the fourth series
approached, the producers said
they wanted to take me out into
the audience with a microphone
and a film crew. However much
they tried to reassure me, I felt
I was being demoted, so I walked
away. It was one of the worst career

Telly is getting a bit like Groundhog Day where the
same programmes come round year after year. In
the case of Im A Celebrity the show where some
of our favourite and, lets face it, least favourite
celebrities get the chance to try their hands at
surviving in the wild this is its 15th straight year
and not much has changed in terms of format.
One slight tweak that has been made is that the
challenges now begin the minute the celebrities
arrive in the jungle. But apart from that, its pretty
much business as usual with Ant and Dec at the
helm. Among those rumoured to be heading into
the jungle is Dragons Den star Duncan Bannatyne.
