We cook our pork shoulders and beef briskets in wood smoke ovens. The pork shoulders are cooked low
& slow for 12 hours using hickory wood. The beef briskets are cooked low & slow for 14 hours using
mesquite wood. The different regional woods used in our smoke ovens impart a unique smoked flavor into
