Sweet and Sour Pork Spareribs

RECIPE
For boiling ribs

 700 grams (1.5 pounds) pork spare ribs, trimmed to 4 centimeters (1.5 inches) in
length (*footnote 1), cut into one-bone sections
 2 tablespoons shaoxing wine
 1 thumb-size ginger, sliced
 5 – 6 green onion, white part (save the green part for garnish)
 1 whole star anise
 2 dried chili pepper

For the stir-fry

 2 tablespoons Chinese black vinegar


 1 tablespoon light soy sauce
 4 tablespoons peanut oil
 3 tablespoons sugar

PROCEDURE

1. Rinse pork ribs with running water and transfer to a large pot. Add water to cover
the ribs. Add shaoxing wine, ginger, green onion, star anise and chili pepper to the
pot. Cover and bring to a boil. Uncover and continue to cook for 5 minutes. Use a
ladle to skim the foam from the surface and discard it.

2. Transfer the ribs to a colander to drain. Scoop ginger, green onion, star anise,
and chili pepper from the broth and discard. You can save the broth and use it to
make soup later (*see footnote 2).

3. Mix black vinegar and light soy sauce in a small bowl, set aside.

4.Add peanut oil and sugar to a wok and cook over medium heat. Stir constantly
with a spatula to dissolve the sugar slowly. When the sugar is fully dissolved,
use spatula to scoop some liquid mixture to observe its color.

5.Turn back to medium high heat. Pour the vinegar and soy sauce mixture over the
ribs and quickly stir to mix well. Continue to stir until the sauce has reduced and is
thick enough to coat the ribs. Stop heat immediately and transfer the ribs to a plate.
Braised Pork Belly Humba

RECIPE

1 kilo pork belly slab

2 heads garlic, minced


1 pc red onion, quartered
3/4 cup white vinegar
1 cup soy sauce
1 cup brown sugar
2 tbsps salted black beans, drain and wash
1 tsp ground black peppercorns
3 pcs bay leaves
2 pcs star anise
1/4 cup peanuts, skin off
Water as needed

PROCEDURE
1.In a stockpot, place the water, onion and pork belly.
Season with salt and ground peppercorns.

2. Boil the pork belly until tender.

3. Drain, set aside and let it cool.

4. In a mixing bowl, combine vinegar, soy sauce, sugar, and salted black beans.

5. Marinate the pork belly in the sauce mixture.

6. In a deep pan, place pork belly and the marinade.

7. Boil, reduce the heat into simmer and let it cook until tender. Add water as needed
while the pork is not yet tender.

8. Once the pork is tender, remove the sauce and slice thinly.

9. Serve in a dish. Reduce the sauce mixture and drizzle on top of the pork belly.
PORK BELLY SISIG

RECIPE

500 Grams Lechon Kawali (Chopped thinly)


200 Grams Atay
1 Large Onion (Chopped)
2 Tbsp Soy Sauce
1 Tbsp Liquid Seasoning
1 Thumb Ginger (Chopped)
2 Pcs Green Chili (Sliced)
2 Tbsp Garlic (Minced)
3 Tbsp Mayo
Salt
Pepper
Butter
Calamansi

PROCEDURE

1. Heat pan then saute onion, garlic, ginger and chili until fragrant.

2. Add in chopped lechon kawali.

3. Add in soy sauce and liquid seasoning then continue to cook for a
minute.

4. Add mayo and mix well.

5. Preheat sizzling plate then put butter.

6. Transfer sisig into sizzling plate.


Reflection (positive):

Cooking class has really helped me to realize that cooking and


eating healthy are two really great things that you can do for your
body. It has also helped me realize that eating healthy isn’t bad
at all. If you cook the right dish and you cook it well it can be a
very delicious meal. Dave and all of the other people that came
and helped were really nice and make the whole experience
much more fun. I’ve also noticed that eating healthy really does
make you feel good, as well as giving you more energy than - for
example - a hotdog warmed up in the microwave. It feels really
good to help my mom make dinner, and it’s very easy once you
get the hang of it. It’s pretty amazing; to make a meal and listen
to your family talk and bond over it at the dinner table.
Overall, cooking class was a really great experience that I’m glad
I had the chance to take part in. Without it, my poor mom would
still be working in the kitchen all by herself and I would be much
less healthy.

Reflection (negative):

In this task I had to record what I ate and the amounts of each serving over
three consecutive days during the week. This tasks aim was to get us to be
aware of what we are eating and what we should change in our diet to be as
healthy as we possibly can be. Having a healthy weight can reduce risk of
chronic diseases such as cardiovascular disease, diabetes and obesity
Reflection (positive):

Foods and nutrition is an important course to participant in since it


teaches you how to be clean being healthy how to make food and
teamwork. Foods and nutrition teaches you how to clean your kitchen
and cooking materials properly. So you stay healthy and don’t get sick
yourself sick or anyone else using the pan or pot sick. and so your
food doesn’t like the last thing you cooked in the pot or pan. Cooking
also teaches you the important nutrition and the basic food groups and
how to balance them and how to stay healthy. When you cook the
food you make in this class you will learn why it’s important to have a
healthy and balanced diet.

Reflection (negative

I learned that the life of a chef is not an easy one. They work long
hours and work almost every day of the week. I would still like to be a
chef in the culinary field, but I would like to have more time to myself.
Reflection (positive):

I learned mostly about vocabulary that have to do with cooking


such as directions/steps, cooking and kitchen supplies. The
steps are first(primero), second(segundo), third(third),
finally(finalmente), antes(before)and después(after). Also, I
learned the three vocab about cooking such as to fry(fritar), to
cut(cortar), and to wash(lavar). And this lesson I have to
memorize that the frying pan is actually la sarten instead of el
sarten. The best part of this unit is learn to understand the
procedure and instructions.

Reflection (negative):

The cleaning was a pain to do. I alone had to clean up the table
pick up the plates and put the food away then wash the dishes. It
took up to thirty minutes and made me realize how much work it
takes to do all of the cooking and the cleaning.
