I. Breakfast Cheese Omelette
BREAKFAST
CHEESE OMELETTE
Ingredients
1 organic large egg
1 teaspoon whole milk or water
1 tablespoon cheddar cheese, shredded (you can use other types of cheese)
1 teaspoon butter or oil
Procedures
1. Whisk the egg and milk in a bowl with a fork until thoroughly combined.
2. Melt butter in a 6 or 8-inch omelette pan over medium heat (approximately 30
seconds) making sure it coats the bottom of the pan. As soon as the butter stops
bubbling (and before it starts to brown) slowly pour in the egg mixture.
3. Pour in the egg mixture tilting the pan to spread it evenly. Let the egg firm up a
little, and after about ten-seconds shake the pan a bit and use a spatula to
gently direct the mixture away from the sides and into the middle. Allow the
remaining liquid to then flow into the space left at the sides of the pan.
4. Continue to cook for another minute or so until the egg mixture holds together.
Do not let the underside of the eggs brown.
5. Sprinkle the top with the shredded cheese and with a spatula; gently fold the
omelette in a half moon shape.
6. Continue to cook another 30 seconds or until the omelette is thoroughly cooked
through.
7. Cool, cut into bite size pieces and serve.
II. LUNCH
PORK SISIG
Ingredients
1 lb. pig ears
1 1/2 lb pork belly
1 piece onion minced
3 tablespoons soy sauce
1/4 teaspoon ground black pepper
1 knob ginger minced (optional)
3 tablespoons chili flakes
1/2 teaspoon garlic powder
1 piece lemon or 3 to 5 pieces calamansi
½ cup butter or margarine
¼ lb chicken liver
6 cups water
3 tablespoons mayonnaise
1/2 teaspoon salt
1 piece egg (optional)
Procedures
1. Pour the water in a pan and bring to a boil Add salt and pepper.
2. Put-in the pig’s ears and pork belly then simmer for 40 minutes to 1 hour (or
until tender).
3. Remove the boiled ingredients from the pot then drain excess water
4. Grill the boiled pig ears and pork belly until done
5. Chop the pig ears and pork belly into fine pieces
6. In a wide pan, melt the butter or margarine. Add the onions. Cook until onions
are soft.
7. Put-in the ginger and cook for 2 minutes
8. Add the chicken liver. Crush the chicken liver while cooking it in the pan.
9. Add the chopped pig ears and pork belly. Cook for 10 to 12 minutes
10. Put-in the soy sauce, garlic powder, and chili. Mix well
11. Add salt and pepper to taste
12. Put-in the mayonnaise and mix with the other ingredients
13. Transfer to a serving plate. Top with chopped green onions and raw egg.
14. Serve hot. Share and Enjoy (add the lemon or calamansi before eating)
III. DINNER
Ingredients
12 pieces chicken wings
1/2 teaspoon chili powder
1/3 cup all-purpose flour
1/2 teaspoon paprika
5 tablespoons butter
3 tablespoons hot sauce
1/8 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon garlic powder
4 cups cooking oil
Procedure
1. Combine flour, chili powder, salt, and paprika in a mixing bowl. Mix well.
2. Put the chicken in the mixing bowl and coat with the flour mixture.
3. Heat a cooking pot and pour-in cooking oil.
4. Deep fry the chicken wings until golden brown. Set aside.
5. Melt the butter in a sauce pan.
6. Put-in hot sauce, ground black pepper, and garlic powder. Stir.
7. Pour-in the butter mixture over the fried chicken wings. Mix to distribute the
sauce evenly.
8. Transfer on a serving plate.
9. Serve with your favorite dip. Share and enjoy!
POTATO CHIPS
Ingredients
4 medium potatoes, peeled and sliced paper-thin
3 tablespoons salt
1 quart oil for deep frying
Procedures
1. Place potato slices into a large bowl of cold water as you slice. Drain, and rinse,
then refill the bowl with water, and add the salt. Let the potatoes soak in the
salty water for at least 30 minutes. Drain, then rinse and drain again.
2. Heat oil in a deep-fryer to 365 degrees F (185 degrees C). Fry potato slices in
small batches. Once they start turning golden, remove and drain on paper
towels. Continue until all of the slices are fried. Season with additional salt if
desired.
V. AFTERNOON SNACKS
VANILLA PANCAKE
Ingredients
1. 1 cup all-purpose flour
2. 2 tablespoons white sugar
3. 2 teaspoons baking powder
4. 1 teaspoon salt
5. 1 egg, beaten
6. 1 cup milk
7. 2 tablespoons vegetable oil
Procedures
1. In a large bowl, mix flour, sugar, baking powder and salt. Make a well in the center,
and pour in milk, egg and oil. Mix until smooth.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the
batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on
both sides and serve hot.
