Background.
In the food industry, pasteurization is an important step in many
production processes. The FDA requires (double check for latest
regulation from this federal agency), to meet pasteurization
requirements for dairy products, that the milk be kept at 72 degrees
centigrade for at least 15 seconds (or at a lower temperature for a
longer time, how low?). Most modern (high production) dairy
processes are continuous systems (in contrast with old batch
systems) and the milk is passed through holding pipes from one
phase to the next. To be able to raise the temperature and hold it for
the requisite time, serpentine piping is used. This requires long pipes

exposed to the pasteurization temperature. The length of the holding
pipe depends on the flow rate and diameter of the pipe. The longer
the pipe, however, the longer the time required to wash the pipes at
the end of the production cycle or when the product type is changed
(if the pasteurizer is used for different dairy products).
Additionally, it has been found that holding the milk for longer periods
of time promotes de precipitation of additional whey protein from the
whey (typically thrown away) that amalgamated with the casein
(another protein). This increases the protein yield resulting in a
bulkier curd and higher production ( with attendant higher profits).

The milk enters centrally from the bottom and moves upwardly in a
non-turbulence, preferential (first in, first out) fashion, until the central
cylinder overflows laminarly in a non-preferential ( first in, first out)
fashion and it is deposited on the annular space between the inner
and outer cylinders.
