However, the therapy does have its limits. There are many variables and factors
involved in determining whether a person will successfully recover from chronic and serious
diseases such as cancer. These factors can include age, family history, occupational or
environmental exposures, dietary and lifestyle habits, inherited traits or genetic weak links
and pre-existing conditions. There are many factors that can influence a cancer prognosis
such as the type and stage of the cancer, how much time has elapsed since the initial
diagnosis and whether it is a recurrence, and whether the patient has been treated with
chemotherapy, radiation or surgery. These are all factors that will affect the prognosis. In
the past fifty years, the population has been exposed to more toxins, prescription drugs and
poor quality food, water and air than ever before. We now find that many people are
initially diagnosed at a more advanced stage of disease. Many often have multiple
additional health issues complicating their cancer diagnosis. Some cancers are now more
aggressive and progress faster. For all these reasons, and more, determining whether the
Gerson Therapy is the most optimal stand-alone primary treatment approach for you
requires serious consideration and investigation.
Another very important factor to consider is whether one is willing to comply with the
rigid and strict therapy protocol. People must seriously consider whether they have the
discipline and determination to fully commit to the Gerson Therapy for two plus years.
After gathering the information from a complete diagnostic work-up, your doctor
(either a Gerson clinic doctor, a Gerson practitioner, or your own physician) will have the
1

information needed to help you make a more realistic decision about whether the Gerson
Therapy is the best starting point for you. In certain cases, patients may need a surgical
intervention or other conventional therapy before starting or while doing the Gerson
Therapy. Ultimately, it isn’t possible to predict with 100% accuracy who will be able to
reverse their condition using the Gerson therapy. What the Gerson Therapy can truly offer
anyone is a better quality of life even in cases where full recovery is not possible.
Successful recovery is on a case- by-case basis. In some cases, the disease process is too
far advanced and the immune system is too weakened to respond fully to the therapy.
Some diseases are not treatable with the Gerson Therapy and others do not respond
sufficiently for the Gerson Therapy to be used as the sole form of treatment. The bottom
line is to determine, after having evaluated all the diagnostic information, which approach
will provide you with the best chance of recovery or extend the quality and length of life.
After making your decision to start the Gerson Therapy, it is very important to monitor your
progress carefully so that any adjustments or changes in approach can be made in a timely
manner.

Gerson Institute Gerson Basics
The decision making process regarding the type of treatment approach to cancer or
other chronic degenerative illness involves taking many things in consideration.
In regard to the initiating the Gerson Therapy, the first consideration is to determine if
the interested person is eligible for the therapy. There are a number of factors to consider.
3
Gerson Institute Gerson Basics
Upon reviewing your current blood work, there are several things you can screen
yourself for possible contraindications to starting the therapy.
1. Severe anemia with hemoglobin below 8.5 (if corrected, the therapy can be started).
2. Bilirubin elevated above normal range can indicate a tumor blockage. If a stent can
be placed and bilirubin levels normalize, then the therapy can be started.
3. Elevated bilirubin in conditions such as hepatitis, cirrhosis, or other liver diseases,
may prevent beginning the therapy as the liver may be too compromised. Consult
with a doctor.
4. Elevated BUN and creatinine indicating compromise of kidney function.
5. Lymphocytes below 10% indicate poor healing response due to low function of the
immune system.
6. LDH greater than 1,000 is a poor prognosis.

Chemotherapy
Hormonal Therapy
Hormone therapies, commonly used in treatment of prostate and breast cancers, do
not appear (anecdotally) to have significant impact, positive or negative, on the
effectiveness of Gerson Therapy management or outcomes, except when abruptly
discontinued after long-term use. In such cases, a few instances of sudden metastasis have
been observed. Patients on Tamoxifen® do not exhibit the usual healing reactions and heal
more slowly. Although these treatments may have some liver toxicity, one must weigh
benefit verses risk in cases with rapidly progressing disease and bone metastasis. One
should never abruptly discontinue these medications.
**For clarification or if you have questions about conditions not listed above, please
call the Educational Department at the Gerson Institute at 888-443-7766.**

Gerson Institute Gerson Basics
The duration of the therapy cannot be identified within any definite time frame. It
can vary for each person and is typically determined on a case by case basis.
Dr. Gerson said it took 18 months to 2 years for someone who was responding well
with no signs of cancer left before they could safely go to a maintenance level of the
therapy. He said it takes that amount of time to totally restore all organs and to capture all
unripe cancer cells that may be hiding in the lymph or other tissues. However, that was
back in the 1950s. Today, we know that it takes longer, at least 2-3 years. However, this
18-24 month time frame is for people who are responding well and whose cancer is
regressing and/or show no signs of disease progression.
On the other hand, if someone who is on the therapy shows signs of disease
progression (such as tumor growth, metastatic spread, weakness and unfavorable blood
work) then a person should be evaluated by their doctor. If they are doing everything
possible to correctly implement the Gerson Therapy but their disease is still progressing, it
may not be advisable to continue the Gerson Therapy even if they have not yet completed
two years on the therapy. It may be advisable to seek other medical options.
The amount of time it takes for a patient to begin to respond to the therapy can vary
for each person, depending upon their diagnosis and overall health condition. However, it is
reasonable to give it at least 3-6 months before assessing their status, unless someone is
rapidly declining. Two to three years is not an absolute deadline to determine the end or
maintenance of your therapy. It is only a guidepost or approximation of how much time it
could take to heal on the Gerson Therapy when there is a favorable response.
Sometimes a patient is not certain what is happening inside their body, and without
further diagnostic imaging, they do not have a clear picture of their status. While it is not
desirable to get tests such as x-rays, CT scans, PET scans and MRIs too frequently, it may
be very important for some people at a particular junction to know whether they are making
progress, or if they need to alter their Gerson Therapy protocol, seek another form of
treatment or add something in addition to the Gerson Therapy. It is reasonable to consider
diagnostic imaging for certain cases within six months of previous testing. Each case needs
to be evaluated based on its unique circumstances.

Gerson Institute Gerson Basics
Pediatric cancers are often of embryonic origin or genetically influenced. Since the
Gerson clinics cannot accept children, we have very little experience with how well the
Gerson Therapy works for these conditions. Conventional medicine recommends
chemotherapy for most of these conditions. We are not in a position to advise for or against
chemotherapy, due to our lack of experience with these types of childhood cancers.
However, utilizing the healthy organic Gerson diet, fresh organic carrot juice and removing
all adverse environmental exposures could certainly provide a more optimum condition for
healing and perhaps lessen side effects of chemo, if that is chosen.
We can share the case of a 12 year-old girl who was diagnosed with a Wilm’s Tumor.
After being given large amounts of chemotherapy and radiation, she was given up by the
medical community in 2002 and given 6-8 months to live. She started the Gerson Therapy
and lived for another 3 years. The Gerson Therapy allowed her to manage her cancer,
increased the quality of her life and extended her life. Her story is published in our Gerson
Newsletter, Vol.19 #4, Jul/Aug/04 pg.1. You may request a copy of this issue from the
Gerson Institute. Another case is a 5 year old boy, with a diagnosis of eosinophilic
esophagitis from birth. He incorporated carrot juice, the Gerson foods and small amounts of
the coffee enema, and has greatly improved his health.
For less serious conditions of a chronic nature, such as allergies, asthma, chronic ear
infections, frequent flus and colds, behavioral and learning disorders, etc., the Gerson diet
and juices can help tremendously. Following a predominately organic, plant-based diet and
eliminating all processed foods, food additives, unhealthy fats and oils, sugar and soft drinks
will go far to alleviate these conditions. In many cases, children have sensitivities to wheat
and dairy and eliminating these foods can be a major factor in restoring health. It is very
important to prevent constipation in children. Following a Gerson-like diet which is high in
fiber as well as consuming plenty of fluids, including water, will aid in regular elimination.
In this day and age, toxic exposures from many environmental sources can be a
detrimental influence on everyone’s health, especially children who have smaller bodies and
detoxification systems that may not be fully developed. A typical household may contain
many hazardous products that range from cleaning products, to insecticides and pesticides
to plastics in food and juice containers. It is extremely important to make every effort to
provide a healthy non-toxic environment. There are many good books on creating a healthy
home which can be a helpful tool.

Now that you have chosen the Gerson Therapy as your healing approach, it is time
to embark on your path to wellness! There are many steps involved, so you can expect this
beginning stage to take some time.
The following checklist will provide a guideline for the initial steps to get started. The
Home Set-Up section will provide details on many of these steps, but keep in mind that you
do not need to complete every step in order to start the therapy.
It is wise to utilize the Gerson Institute’s website, www.gerson.org, and free phone
helpline, 888-443-7766, as a resource not only in the beginning stages, but throughout
the course of the Gerson Therapy. It is normal to feel a bit overwhelmed, but doing things
one step at a time will help you transition smoothly.
This book contains the essential information you need for the Gerson
Therapy, such as instructions on the diet, juicing, detoxification and
supplementation, as well as hourly schedules. It is crucial to become fully
knowledgeable about the Gerson Therapy protocol and how it works.
2) Establish your Gerson protocol with the help of the Gerson Institute.
If options “2a” and “2b” are not possible, then you will need to find another source of
medical supervision in order to address any medical situations that may arise. You can
continue to work with your primary care physician or oncologist if they support your
decision to do a natural therapy. Otherwise, you may want to consider finding a licensed
Naturopathic doctor. See “Resources” at the end of this section.
B. Find help locally – see “Help at Home” at the end of this section for more
information.

Gerson Institute Gerson Basics
A. Talk to the produce manager at your local health food or grocery store to see
if they can order in bulk for you. Often times they are will offer a discount and
may be able to order produce that they do not normally carry.
B. Talk to vendors at your local Farmer’s Market to see if they can offer produce
in bulk, a small plot of land where you can grow your own vegetables, or if
they are agreeable to trade systems or volunteer-for-produce type program.
F. Use the “Weekly Menus” on page 69 to plan out meals for the week.
G. In the beginning, select simple, basic recipes from Healing the Gerson Way,
The Gerson Therapy Handbook or The Gerson Institute’s Recipe Book.
H. Based on the week’s meal plans, formulate a shopping list. Use the “Shopping
List” on page 71 as a guide.
6) Obtain Supplies
You do not have to complete the following steps in this exact order. Your financial
situation, the equipment you already have and other factors may contribute to what
you can do first. The following suggestions are listed from what is typically easiest to
what may take longer.
A. Organize your kitchen and rid it of any processed foods, salty snacks and all
other foods forbidden on the Gerson Therapy and replace it with fresh,
organic fruits and vegetables.
-See the “Food/Diet” chapter of the Gerson Basics Manual for a list of the
staples you can stock up on now.
B. Remove toxic cleaning supplies and personal care products and begin
replacing them with non-toxic alternatives.
9
Gerson Institute Gerson Basics
G. Purchase supplements
H. Determine the water purification system that is best suited to your home and
purchase it.
7) Get Set-Up
A. Take a few days to practice juicing, making the foods (according to the
sample menu) and doing the coffee enemas.
B. Write down any questions or concerns and contact the Gerson Institute for
assistance.
9) Schedule
Develop a daily schedule for patients and helpers. (See sample Daily Schedule
chart on page 32)

Finding Help
While it is very important for Gerson patients to get adequate rest, the Gerson
Therapy itself is rather labor intensive, with most of the time being spent in the kitchen.
Even the patient’s caretaker will need time to rest and otherwise keep the therapy moving.
The following suggestions can be utilized to help relieve the patient and/or caretaker.
You can ask people to volunteer, even if it is only for a few hours, to do basic tasks such as
wash vegetables, wash dishes, make the Hippocrates soup, make juices, go grocery
shopping etc. No task is too small.

Home Set-Up
Organizing the home to start the Gerson Therapy is a vital step when embarking on
this treatment. Knowing where to locate the equipment and supplies will make a world of
difference and it will save much needed time and energy.
The following is a guide that will outline the various steps to setting up your home
and will provide helpful tips, resources, and information that you need to know.
It is normal to feel overwhelmed as you get started; make sure to take things one at
a time. As you begin to cross items off your check lists, and you get into a routine, the
process will become easier.
Kitchen
Most of the kitchen cookware, utensils and staples can be obtained from major retail
stores. See www.gerson.org and www.store.gerson.org for additional places to purchase a
food mill, coffee enema supplies and more.
Equipment
1) Juicer: see page 41 for information on the appropriate juicers for the Gerson
Therapy. More information can also be found at www.gerson.org.
a. Two-step masticating juicer (grinds and then pressed separately, i.e. Norwalk
or Champion w/press) or
b. One-step masticating juicer (grinds and presses at the same time i.e.), which
is an acceptable alternative for non-cancer patients
c. Citrus Juicer
2) Additional Refrigerator: It is typically necessary to purchase a second refrigerator, or
other cold storage container, due to the large amounts of produce required for juices
and food.
a. Check www.craigslist.org for used refrigerators, including the “Free” section.
b. Use a mini-fridge
c. Use a large cooler
Cookware
Obtain various sizes of pots and pans.
Consider: large pot for Hippocrates Soup, medium/large pots for coffee enema
concentrate, cooked vegetable and oatmeal, small pot for stewed fruit or apple
sauce.
Ok to Use:
Stainless steel with heavy clad bottoms and tight-fitting lids (PREFERRED)
Glass cookware with tight-fitting lids
Cast iron, but MUST be covered in high-quality enamel
12
Gerson Institute Gerson Basics
Do Not Use:

13
Gerson Institute Gerson Basics
CAUTION: avoid using plastic utensils and storing food in plastic containers, especially if
the food is hot. Do not use aluminum.
Organize
Use the second refrigerator to store bulk items and overflow.
o A large cooler can be used for additional storage.
Store juicing ingredients (carrots, apples, romaine lettuce, bell pepper, etc.) in
labeled bins inside your refrigerator for easy access, storage and inventory.
o If there isn’t enough room for bins, designate sections for produce and label
the designated area.
Designate a space in the refrigerator for pre-washed juicing ingredients.
o TIP: wash all of the juice ingredients for the day in the morning, and then
separate the ingredients for each juice by wrapping them in a damp/moist
cloth rag. This will keep them from wilting before they’re used and will be
easy for you to “grab and juice”.
If possible, place the juicer next to the sink for ease of cleaning.
Designate a drawer near the juicer to store unused juice cloths and plastic storage
bags for freezing.
Place a trash can or compost bin as close to the juicer as possible.
Store cookware as close to the stove as possible.
Designate and label areas for the most used kitchen essentials, such as the wire
strainer, colander.
Clear countertops of everything but the juicer, cutting boards, knives and pots.
Post your current protocol, daily schedule and a sample menu on the refrigerator.
Post green juice recipe next to the juicer.
Post recipe for coffee concentrate, Hippocrates Soup and oatmeal gruel near the
stove. You can even post the Gerson cooking methods there.
If storage space is sparse, install shelves for storage and easy access.
Designate a bin to serve as your healing reaction “tool box”.
14
Gerson Institute Gerson Basics
Keep a “cheat sheet” of ways to cope with healing reactions and pain management:
o Materials for clay and castor oil packs, peppermint and chamomile tea, etc.
o Oatmeal gruel recipe
TIPS:
Post a calendar on your refrigerator to track when you purchased produce, coffee,
supplements, etc. so you can develop an ordering schedule for these products.
Get creative! Search the internet for easy and affordable Do-It-Yourself tricks to
utilize the space you have and to create space for storage, organization, etc. Be
mindful of the Gerson principles of non-toxic materials.
Bathroom
Organize
Keep all of your enema supplies in one place.
-pillow -water bottle
-underpad (Chux) -hand towel
-towel -non-digital thermometer
-lubricant -timer
Keep castor oil enema supplies in a separate container.
-separate enema bucket

Toxins to Avoid
A typical household contains more than 60 hazardous chemicals. Check your home,
eliminate as many contaminants as possible and replace toxic products with healthier
alternatives. (See page 17 for more information on safe products). Unfortunately,
manufacturers of cleaning products and personal care items in the United States are not
required to test their products for safety. As a result, many products contain ingredients
that are known to be hazardous to human health and the environment. Companies are also
allowed to hide information about most of their ingredients from consumers. For your
safety, choose products that provide a complete list of ingredients and are 100% organic.
Plastic:
Avoid using plastic utensils and storing food in plastic containers, even if they are
labeled “BPA-free.” A recent study by a professor of neurobiology at the University of
Texas-Austin discovered that 70% of BPA-free plastic also contains synthetic estrogens1.
Use glass containers instead.
Note: Plastic can contain estrogenic chemicals that have been linked to illnesses such as
asthma, cancer, infertility, low sperm count, genital deformity, heart disease, liver
problems, and ADHD.
Microwave Ovens:
One study found that microwave ovens produce unnatural molecules and change the
shape of amino acids, transforming them into toxic forms2.
Another study discovered significant changes in the blood samples from volunteers
who ate food cooked in a microwave oven. Changes included a decrease in hemoglobin and
cholesterol values, especially of HDL and LDL values3.
Although research on this subject continues, we do not recommend that those on the
Gerson Therapy risk exposure to microwave ovens.
Pressure Cookers:
Pressure cookers are designed to cook at high temperature, and Dr. Gerson believed
that the high heat damages the colloidal structure of foods and proteins essential for
rebuilding the body. They are also frequently made of aluminum, which has been linked to
health problems such as neurological disorders and kidney disease.

Fragrance:
According to the Environmental Working Group, corporations are not required by
Federal law to list any of the chemicals in their fragrance mixture on the label. The Cancer
Prevention Coalition reports that the National Institute of Occupational Safety and Health
identified 3,000 ingredients used in fragrances, 900 of which are toxic. Fragrances often
contain hormone disruptors and trigger allergies in many people.
Additionally, products derived from “natural” substances, including essential oils, are
not necessarily safe. Avoid products with the word “fragrance” in the ingredients and
choose products that list each fragrance ingredient, although it is preferable to use
fragrance-free products.

Home Remodeling
A Gerson patient should not do any remodeling projects in the home or move to a new
home, due to the toxins that outgas from fresh paint, cabinets, carpeting, flooring and new
furniture. However, this may become a necessity during the course of the Gerson Therapy.
If so, you can hire a Certified Building Biologist by visiting the website for the
International Institute for Building Biology at http://hbelc.org. Certified Building Biologists
provide healthy home and office evaluations throughout the USA and Canada and are also
located in Europe, Australia and New Zealand.

Gerson Institute Gerson Basics
Although water alone is not used for hydration by patients on the Gerson Therapy,
water is an essential component of the Gerson Therapy. Water is used for tea, coffee
enemas, cooking, cleaning and bathing. Many American cities use chemicals such as
chlorine in an effort to clean their water supply, and also add fluoride for the supposed
dental benefits. If possible, it’s best to find a solution that will eliminate all of the ways that
one might be exposed to such chemicals.
We have compiled a series of guidelines to help you determine the best course of water
purification for your home. Finding the best solution for your situation may take some
personal research, but we have assembled a list of the necessary steps, possible scenarios,
suggestions, and resources to help make the process as easy as possible.
Reverse Osmosis
Reverse Osmosis is a process by which unclean water moves from lower
concentration to higher concentration. Pressure on one side forces the unclean water across
the membrane to the fresh water side because water seeks out equilibrium.
When one side is crowded with contaminants, pure water from the other side moves
over to make the concentration more equal or until the osmotic pressure (pressure that
happens as the molecules move) is reached.
You can use a Reverse Osmosis (RO) water filtration system with an activated carbon
filter. RO filters have trouble removing small organics such as radiator fluid, carburetor
cleaner, or herbicides that water districts don’t necessarily test for, so it is best to place an
activated carbon filter in front of it.
23
Gerson Institute Gerson Basics
Kitchen Water:
It is recommended that Gerson patients use a water distiller with an activated carbon
filter (any brand) to remove fluoride. Otherwise, you can:
Purchase distilled/purified water at your local grocery store
Have distilled/purified water delivered to your home
Contact water purification companies to see if you can rent the equipment
Bathroom Water:
Do not take tub baths.
Limit showers to 1-2 per week for 5 minutes.
Do not use hot water, as it opens the pores and allows more absorption.
Seriously ill patients can do sponge baths using distilled water.

carbon filter. RO filters have trouble removing small organics such as radiator
fluid, carburetor cleaner, or herbicides that water districts don’t necessarily

effective options are to use a water distiller along with a carbon filter, or to
purchase purified bottled water.
Bathroom Water:
Look for a shower filter that removes chlorine and other contaminants.

results before you purchase their products.
Companies that deliver purified and distilled bottled water to homes are
available in most cities.
More on Water
Well Water
Private well water supplies have few regulations. Typically, well water is required to
be evaluated for microbiological contamination only at the time the well is installed. It is up
to the well owner to monitor and ensure the quality of their well water supply.
The National Safety Foundation International (NSF) suggests annual microbiological
testing for total coliform (bacteria) and for nitrates/nitrites from agricultural operations or
on-site septic systems.
Fluoride
The fluoride that is added to municipal water supplies is not the naturally occurring
element. Instead, water companies add sodium silicofluoride and hydrofloursilie acid, which
are by-products of the steel, cement, aluminum and nuclear weapons processing industries.
Ingesting these chemicals has been linked to skeletal fluorosis, arthritis, joint pain, bone
fracture, hypothyroidism, brain damage/impairment and other health effects.
Bottled Water
Some spring waters may or may not be safe to drink, depending on the company
and the source of the spring. Some companies add fluoride to the water, so it is best to
inquire directly with the company to obtain a water testing report.
Shower Filters
It is important to also filter your shower water. In order to choose a shower filter,
first determine which contaminants you are trying to remove, e.g. chlorine or chloramine.
Note: It is very difficult for shower filters to remove fluoride. Taking less frequent and
shorter showers will reduce your exposure to toxins.
Chlorine
A majority of harmful chlorine exposure can be due to skin absorption and inhalation
while showering, which can go directly into your bloodstream. The steam inhaled during a
shower can contain up to 20 times the concentration of chlorine as tap water. Try to shower
in cooler water.
Chloramine
Some water utilities use chloramines (formed when ammonia is added to chlorine)
instead of chlorine to treat drinking water. The EPA reports that more than one in five
Americans uses drinking water treated with chloramines. They are difficult to remove from
your shower water.
Radon
The two most common methods used to remove radon from water are granular
activated carbon filters (which use activated carbon to remove the radon), and aeration
devices (which bubble air through the water and carry radon gas out into the atmosphere
through an exhaust fan). You can also boil your water to remove radon.

Electro-Magnetic Fields
The human body radiates its own electromagnetic frequency (EMF) that is in line with
nature and low in intensity. Man-made EMFs from electronics, power lines, and cell phones
have brought us to a higher intensity of exposure and we are connecting this exposure to
impairments in our cell metabolism, which is leading to disease.
Electric fields exist whenever an electronic device is plugged in, and even when it is
turned off. Magnetic fields only exist when the device is turned on. Both of these fields
quickly get weaker the further you are from the source, so distance matters a great deal.
The strength of these fields can be tested. Check inside and outside your home for sources
of electro-magnetic fields (EMFs).
We recommend eliminating or distancing devices with EMFs as much as you can. It
is especially important to eliminate exposure in your bedroom during the hours
that you are sleeping, because that is when your body regenerates and heals. The
human body is 75% water and conducts electricity. The alternating current (AC) from
electric fields disrupts the body’s cells all night long by agitating the atoms and electrons 60
times per second, which suppresses melatonin production and stages 3 and 4 of deep sleep.
Those that are suffering from an illness should consider consulting with a Building
Biologist, www.hbelc.org, to check the sources of EMFs in your sleeping area (including
wiring in the walls) and advise on how to mitigate those sources.
The following are suggestions for ways you can minimize EMF exposure.
Bedroom
It can be difficult to completely rid yourself of all EMFs, but it is very important to try
and minimize them as much as you can where you sleep. You can take these steps to
prevent or minimize EMF exposure in the bedroom:
Move cell phone and any other charging stations out of the bedroom.
Move your router out of the bedroom.
Move your bed at least 6 feet away from sources of EMF’s, such as lamps and clocks.
Move the bed to a different wall if there are devices on the other side of the wall that
can’t be unplugged e.g. a refrigerator, or if you share a wall with a neighbor, or if
you detect a strong electrical current from the wiring in the wall.
Use a battery-powered clock.
Unplug lamps or other electrical devices at night that are plugged in next to your
bed.
Turn off the circuit breaker to your bedroom.
Do not use waterbeds, heating pads or electric blankets.
Computers
You can take these steps to prevent or minimize EMF exposure from computers:
Move the computer tower a few feet away from your knees.
Move the power strip 3-4 feet away from your feet.
Make sure the outlet you plug your computer into is grounded.
Replace the power chord with an AC shielded power chord.
27
Gerson Institute Gerson Basics
Use a grounded (three-pronged) chord with your laptop or run it on battery mode
only. Recharge it only when you are not using it.
Replace Wireless (Wi-Fi) with Ethernet cables to connect devices with each other and
disable the Wi-Fi on your computer and router.
Additional steps to avoid EMF’s from other sources:
Don’t plug in grounded 3-pronged plugs into ungrounded 2-pronged extension cords
or adapters.
Sit at a distance at least 4 times the width of the TV screen.
Use low EMF hair dryers
Sit at least 3 feet away from your refrigerator or other appliances.
Cook at arm’s length away from electric stoves and ovens.
Do not use dimmer switches, which create high levels of EMFs.
At night, light in your bedroom disrupts circadian rhythms and melatonin production,
which affects your health and sleep. To minimize disruption:
Use red bulbs if you use night lights.
Avoid looking at TV and computer screens 2 to 3 hours before bed.
Sleep in a totally dark room.
Cell phone towers, radio and TV broadcast towers: There are ways to minimize exposure
to the radio frequencies from these towers and antennas outside of the home, including
mesh window screens, metal or stucco siding to your home, special paint and radio wave-
blocking fabrics.
Transmission and distribution power lines: The best protection from the magnetic fields
emitted from power lines is to increase your distance from them.

Microbes living within certain houseplants can help to remove pollutants from the air,
such as benzene from cigarette smoke, fumes from copy machines, cleaning compounds,
paints and formaldehyde from carpeting, drapes and particle board in furniture, all of which

Gerson Juices
Why juicing?
Juices on the Gerson Therapy are a critical aspect of the regimen providing most of
the vitamins, minerals, enzymes, phytochemicals and other nutrients essential for healing
along with adequate fluid intake. We are often asked why patients cannot simply eat the
foods instead of making them into juices.
Part of the answer can be found in the fact that the typical Gerson Therapy patient
will ingest up to thirteen 8 ounce glasses – about 104 ounces of juice daily! This
tremendous influx of liquid provides the nutritional equivalent of almost seventeen pounds
of food a day. The consumption of that quantity of food on a daily basis would be
impossible. Secondly, patients suffering from degenerative diseases almost always have
difficulty properly digesting and absorbing food.
A secondary reason for the use of juices has to do with absorption and utilization of
all of the nutrients found in the foods from which the juices are made. People suffering from
degenerative diseases almost always have difficulty properly digesting and absorbing food.
This can be a result of toxicity, malfunction of the digestive system, a decrease in stomach
acid production, or a variety of other causes. This digestive weakness is the same reason
that many people have difficulty digesting and absorbing vitamin and mineral supplements
in pill or capsule form.
Dr. Gerson found it necessary to find ways of dramatically increasing absorption of
nutrients in order to effect healing and produce the remissions and cures of the otherwise
terminal cases that he treated. His clinical experimentation showed that fresh juice from
raw foods provided the easiest and most effective way of providing high quality nutrition
and most importantly, produced the best clinical results.
34
Gerson Institute Gerson Basics
Preparation:
1. Wash greens and rinse off sand or soil that is often present at the base of the
leaves.
2. Shake off water or put in salad spinner to remove excess moisture. Cut off
bottom portion of stems of chard or any other fibrous leaves.
3. Using a two-step (grinder/press) juicer, grind and collect pulp in a bowl.
4. When all produce has been ground stir thoroughly, but not so much as to
introduce unnecessary air into the pulp.
5. Follow operating and juicing instructions for the juicer you own (see operation for
Norwalk and Champion juicers on pages 43-46)
-If you’re using an electric press, raise the juice part slowly to avoid having pulp
squirt out of cloth and onto the juice person.
Note: You may fold over the squashed cloth/pulp package and press it again to get a
little more juice out of the pulp.
The green juice is much more active than the carrot or carrot/apple juices and should
be consumed immediately. Dr. Gerson did not recommend storage of the green juice for
any length of time before consumption.
35
Gerson Institute Gerson Basics
This juice is one of the two “core” juices used on the Gerson Therapy. It has a
pleasant flavor, is easy on the digestive system, and is usually consumed in larger
quantities than any other juice (Five glasses per day in the normal regimen).
Research has revealed an apparently synergistic relationship between the carrots
and apples that proves greater nutrient absorption when the apples and carrots are juiced
together than when the juice of either is used alone. The malic acid present in apples assists
in absorption of beta-carotene in the carrots.
There are, of course, many other elements derived from the juices in addition to
beta-carotene. This juice is high in calcium, provides protein, trace minerals and numerous
other minerals, vitamins, and phytochemicals.
Ingredients (8oz. of juice): Approx. 3-4 carrots to 1 medium apple - Tart apples are
preferred; Granny Smith, Macintosh, Ida red, Pippin and Gala are all good choices. Red and
gold delicious are least desirable since the sweeter apples are higher in sugar, and can raise
blood sugar levels unacceptably high, but in a pinch any apple will work.
Preparation:
1. Wash apples, cut and remove core and seed, but do not peel. An inexpensive
apple corer makes this easy.
2. Wash carrots and scrub with a brush or nylon scouring pad, but do not peel or
scrape.
3. Using a two-step (grinder/press) juicer, grind apples and carrots and collect pulp
in a bowl, rather than the juicing bags that come with some juicers.
4. When all produce has been ground, stir thoroughly (but not so much as to
introduce unnecessary air into the pulp).
5. Follow operating and juicing instructions for the juicer you own (see operation for
Norwalk and Champion juicers on pages 43-46)
The carrot/apple juice, like all of the other juices, should be consumed immediately
after pressing, but may be kept for 2-3 hours in a glass-lined thermos or air-tight canning
jar if the patient has returned to work or must go out of the house for any other reason.
The preparation of juices in advance should be done only when there is no other alternative
or, on consultation with an experience Gerson physician.
36
Gerson Institute Gerson Basics
This juice was seldom used by Dr.Gerson, but was introduced to the standard Gerson
protocol in 1989, when it became obvious that the quality of veal liver available was so
substandard that juice made from it could no longer be used as a regular part of the Gerson
Therapy. The carrot juice is usually used three times per day, at times when the liver/carrot
juice was formerly used.
Preparation and comments are the same as the carrot/apple except for exclusion of
the apples.
Ingredients (8oz. of juice): Approximately 4-5 carrots – take into consideration the size
of the carrots
Preparation:
1. Wash carrots, but do not peel or scrape.
2. Using a two-step (grinder/press) juicer, grind carrots and collect pulp in a bowl.
3. Place 1 to 2 cups in juicing cloth, fold and press into a large class measuring cup.
You may have a couple juice cloths on hand to press two juice packets at a time
to produce more juice at once.
4. Follow operating and juicing instructions for the juicer you own (see operation for
Norwalk and Champion juicers on pages 43-46)
37
Gerson Institute Gerson Basics
Dr. Gerson felt that this was the least important juice and added it primarily for the
convenience of the patient in that so many people are used to orange juice to start the day.
Any patient experiencing adverse reactions or simply dislike for the orange juice may,
unless otherwise indicated, replace it with apple juice or one of the other standard Gerson
juices. Take no more than one citrus juice a day.
Ingredients (8oz. of juice): 3-4 oranges or 1-2 grapefruits – any kind as long as it’s
organic.
Preparation:
1. Use a reamer-type juicer, either manual or electric. Some models have aluminum
screens or reservoirs for the juice. These should be avoided in favor of plastic or
stainless steel. We do not recommend the use of non-reamer type juicers into
which a half orange or lemon is inserted whole. The citrus peels contain
undesirable fatty and aromatic acids, and are commonly coated with beeswax or
another protective sealant.
2. Cut the oranges or grapefruits in half and place on reamer. Ream enough
oranges or grapefruit to create 8 oz. of juice
Note: Oranges and grapefruits should be kept refrigerated. If you prefer juice to be closer
to room temperature, remove three or four oranges from the refrigerator before going to
bed.

Many of my Gerson patients will add various “greens” that they have read about to
their green juice. Bit by bit they keep sneaking ones in, particularly when ingredients may
be difficult to get hold of, and it isn’t until I do a check or inadvertently ask an innocent
question that I discover that the Gerson green juice is no longer the medication that it was
designed to be. We have to remember that on the Gerson Therapy the food and the juices
are the medication and that failure to take all the foods in their correct quantities or
according to the recipes is akin to changing the medication.
39
Gerson Institute Gerson Basics
Why some vegetables are preferred and why some are avoided
Celery: has a poor potassium/sodium ratio of around 3.25 whereas most vegetables
have a ratio between 5 and 10. This means 5-10 parts of potassium to sodium. The juices
need to have a high potassium ratio, amplified with the additional potassium salts. The
juices are a medicine, taken hourly to flush the cells and allow potassium to gain entry into
the cells in order to dislodge the sodium. Sodium inside the cell will suppress oxidation and
lead to changes in the conditions at cell level which do not support healing. Therefore, as a
medicine, it is important not to disturb the mineral balance by adding vegetables that would
reduce this capacity for flushing and cleansing.
The brassica family (broccoli, cauliflower, Brussel’s sprouts, cabbage, mustard, kale,
turnips) are goitrogenic which means that they interfere with the production of thyroid
hormone by inhibiting the uptake of iodine by the gland. They can induce hypothyroidism in
those predisposed or borderline. However, these vegetables, when cooked, do not have the
same goitrogenic capacity. Cooking for 30 minutes significantly reduces the amount of
goitrogens. Red cabbage is, however, used in the juices due to its added nutritional
benefits. It contains up to four times the amount of phytonutrients than green cabbage,
such as the anthocyanin polyphenols, and 6-8 times more vitamin C than green cabbage.
The “red” color of the cabbage is due to its high content of the anthocyanin polyphenols. On
the Gerson therapy where we are looking to support thyroid function, it would be counter-
productive to include goitrogenic vegetables in juicing, and one should be careful to remain
within the guidelines for the red cabbage.
Vegetables high in oxalic acid: Most vegetables contain varying amounts of oxalic
acid which is lost with cooking. Oxalic acid, in high amounts, can interfere with the
absorption of calcium and magnesium and it also interferes with the uptake of iron from
vegetable sources (non-heme iron). So although foods, such as spinach and parsley, may
be very high in iron and calcium, they are also high in oxalic acid which will reduce the
bioavailability of these two minerals. Therefore, it is best not to juice vegetables high in
oxalic acid (such as spinach and parsley), and stay with the ones recommended and in the
quantities prescribed for the Gerson green juice. Oxalic acid may also aggravate certain
health conditions, such as kidney stone formation and gout. If you have a high uric acid or
are predisposed to either of these conditions, then be mindful about juicing these
vegetables.
Green apples: the green apples are sourer than the red variety; and the sourer they
are the better for juicing purposes. Sour apples are higher in potassium malate and higher
in pectin (good for chelating heavy metals), they can also extract higher amounts of
nutrients from the pulped vegetables due to their higher acidity, so you end up with a more
nutrient-rich juice. Dr. Gerson added three potassium salts to the juices: potassium acetate,
potassium gluconate and potassium monophosphate. He did not add potassium malate as
the green apples delivered sufficient amounts of this potassium salt. The combination of
these four specific potassium salts encouraged a faster elimination of sodium and toxins
from the cells and sped up the detoxification and healing process. In colder climates cooking
apples may be used, such as the Bramley apple.
Dr. Gerson spent 6 years and 300 experiments perfecting the potassium blend to
achieve the results he was looking for. He also spent many years experimenting with the
exact blend of vegetables for the green juice to fulfill the criteria of his program. The green
juice, in addition to supporting cellular detoxification, will also build the blood and support
liver detoxification. It will also support the bones being high in both calcium and vitamin K.
If you get the recipe wrong then you could risk ending up with a sodium-rich juice that will
oppose the potassium shift, a juice that may suppress the thyroid or inhibit the uptake of
valuable nutrients such as calcium, iron and magnesium.

Recommended Juicers
Dr. Gerson believed the method of juice extraction decidedly affects the
concentration of the nutrients. This has been demonstrated through the analysis of juices
produced by each type of machine, and the clinical results experienced by patients using
each type of juice proved further support for Gerson’s recommendations. He found the two
best juicers to be a triturator and press combination or a masticating juicer with separate
press.
Produces 25 to 50% more juice from the same amount of raw produce than other
juicers, and even more when extracting from leafy vegetables.
The Norwalk juicer is generally more expensive than other types of juicers, about
$2,400. More than 80% of Gerson patients choose the Norwalk for their Therapy.
Features:
Combined with a separate hydraulic press these juicers can produce an acceptable
quality of juice as the grinder/press combination at a lower cost (about $600).
Gerson patients can use the Champion or a Green Star as a grinder only in
conjunction with a hand-operated hydraulic press.
For patients doing the Gerson Therapy for non-malignant conditions, or healthy
people juicing to enhance their health, it is not as strictly necessary to use a two-step
juicer, though it is still recommended.
One-step masticating juicers are acceptable alternatives for non-cancer
patients doing the Gerson Therapy, as they extract a sufficient amount of juice, and
preserve enzyme activity. There are many brands of masticating and twin-gear juicers to

choose from. A few that our patients have used which are suitable for the Gerson Therapy
for non-malignant conditions include:
The Champion
Angel Juicer
Green Star
Green Power
Solo Star
Hurom Slow Juicer
Omega Juicers (masticating models only)
4. Citrus Juicers
Citrus juicers are reamer-type juicers used to juice orange and grapefruit juice.
5. Centrifugal Juicers
These are the most common and generally the least expensive juice extractors but
not suitable for the Gerson Therapy.

the center so that the folds are about 1/3 the width of the press cloth.
3. Place Pyrex under the tubing from the lower tray to catch the juice.
4. Use one end of the metal rod to unscrew the lower plate to remove the metal
tray. Place juice cloth in the lower tray and place back on the plate. Tighten the
plate.
5. Use the other end to jack up the lower plate to the top and the juice will flow
from the tube.
6. Two of these packs should be pressed at one time while two more are being
prepared.

Juicing Tips
Storage of Juices
The carrot/apple juice, like all of the other juices, should be consumed immediately
after pressing. Preparing juices in advance is never a desirable choice but may be necessary
for patients who must work or who need to get out of the house for several hours. In these
cases, a glass-lined vacuum bottle (Thermos) may be used, but should be completely filled
to avoid excess exposure of the juice to air. Another useful method is to fill an 8oz. canning
jar to the rim, slide the lid over the top and then screw the cap on tightly. This will prohibit
air from getting in and oxidizing the juice. Place it in a cooler. Drink at room temperature.
A small container is better than a thermos or a larger jar, as each time a larger container is
opened, more air gets in and further oxidizes the juice. A smaller container is best because
it is not opened multiple times. Add the prescribed potassium and Lugol’s just before
drinking.
47

1. Scrub the parts soaking in the water with a sponge and Dr. Bronner’s. Use a long
brush to scrub the housing and smaller brushes for the blade, grid, and grid holders.
2. Rinse the parts with water.

Gerson Institute Gerson Basics
“Foods are the primary prescription for healing, comparable to a drug in allopathic
treatment. Significant deviation from the diet can be as serious for Gerson patients as
missing an insulin shot can be for a diabetic patient.” – Dr. Gerson
The two most important aspects of the Gerson diet are freshness and purity. All
foods ingested must be fresh, organically grown, and consumed in their most natural form.
The Gerson diet eliminates all added sodium and adds large quantities of high potassium
foods and juices. The foods prescribed maximize the body’s ability to function with minimal
effort. The dietary guidelines outlined below activate specific biochemical processes in the
body that promote healing, which are discussed further in Dr. Gerson’s book A Cancer
Therapy – Result of Fifty Cases, and Charlotte Gerson’s book Healing the Gerson Way.
The diet must be adhered to strictly over the duration of the therapy. Long-term
and strict compliance is vital to overcoming disease. We strongly recommend that you do
not add to or change the following dietary guidelines without the advice of a certified Gerson
Therapy practitioner or the Gerson Institute. There will be some adjustments and additions
to the diet during the first six months to one year based on the progress of the patient.
The first section lists the foods that are permitted and the foods that are restricted
on the Gerson Therapy. If a particular food is not listed, do not use it unless you get
confirmation from the Gerson Institute. The prohibited foods were eliminated by Dr. Gerson
and subsequent Gerson doctors, based on clinical experience with Gerson patients. Some of
the foods are beneficial to a healthy individual, but were found to not respond well with a
Gerson patient.

they do not have any sensitivity to citrus which can aggravate this condition. For all others,
citrus juice is optional. Only one citrus juice a day is allowed and may be replaced with a

Prohibited Foods
54
Gerson Institute Gerson Basics
General prohibitions
All manufactured (processed) foods: bottled, canned, frozen, preserved, refined,
salted, smoked, and sulfured.
Dairy products
All milk and milk products (including goat’s milk), such as cheese, cream, ice cream,
ice milk, butter or buttermilk. Dairy products are generally extremely high in fat; an 8 oz.
serving of 2% milk contains more fat than two strips of bacon! Cheeses can be as much as
65% fat, and are usually very high in sodium. Even “fat free” cheeses usually have
undesirable additives, and are high in sodium. Buttermilk is prohibited because the
commercial buttermilk now available is “cultured”, rather than churned, and is high in fat
and sodium.
The exception is plain, organic, non-fat yogurt used after 6-8 weeks on the therapy
at a ½ cup a day. Dr. Gerson also allowed pot cheese after 6-8 weeks, but the non-fat,
unsalted large curd type of cottage cheese is no longer available. Current day cottage
cheese is salted and cream is added. The only way patients can use cottage cheeses is if
they are able to obtain organic skim milk and allow it to curdle and pass through several
55
Gerson Institute Gerson Basics
layers of cheese cloth to separate the curds from the whey. Occasionally you may be able to
find organic Farmer’s Cheese, which contains no fat or salt. Some bakeries produce Baker’s
Cheese or Dry Curd which is acceptable if it has no salt or fat.
If you are lactose intolerant and cannot eat the yogurt, your doctor may advise you
to take spirulina, blue-green manna, or bee pollen. Bee pollen can sometimes cause allergic
reactions. If you are trying it for the first time, use just a few grains at first and increase
slowly to the prescribed amount. If it causes an allergic reaction then discontinue it.
Alcohol
Alcohol is prohibited because it limits the blood’s ability to carry oxygen, places
additional strain on the liver to detoxify and remove it from the body, and is, in general,
toxic.
Avocados
Avocados are too high in fat.
Cucumbers
Cucumbers, in combination with the juices, are difficult to digest and are high in
sodium.
Spices
Certain spices such as black pepper, paprika, basil, and oregano are prohibited
because of their high content of aromatic acids that can interfere with the healing response
and they are also irritants.
Dr. Gerson limited use of herbs and spices to the relevantly mild ones. Please see the Other
Gerson Foods for a list of the allowed spices.
56
Gerson Institute Gerson Basics
Drinking water
Contrary to the commonly heard recommendation to “drink 8 glasses of water a
day”, Dr. Gerson strongly believed that a patient should not drink water, so as to avoid
diluting the stomach acid, and to allow maximum capacity for nutrition from fresh foods and
juices. If the patient is taking less than 13 juices, he/she may need to augment with tea or
other fluid which could include some pure water away from food or juice.
Mushrooms
Standard white mushrooms are not a vegetable, but a fungus. They are difficult to
digest, and provide little nutrition.
57
Gerson Institute Gerson Basics
Hot Peppers
Hot peppers (jalapeños, etc.) contain the same strong aromatics found in prohibited
spices. These may inhibit healing responses and should be avoided. Green, yellow, and
sweet red bell peppers may be used without limitation.

Oatmeal -- High in protein and potassium. One cup contains: 307 calories, 55.9 g
carbohydrate, 5.3 g fat, 10.6 g protein, 42.1 mg calcium, 112 mg magnesium, 293 mg
potassium, 4.9 mg sodium, 23.4 mg selenium and small amounts of B vitamins.
Potatoes -- High in protein and potassium. One large potato contains: 278 calories, 7.5 g
protein, 63.2 g carbohydrate, .4 g fat, 1600mg potassium, 29.9 mg sodium, 83 mg
magnesium, 44.8 mg. calcium, 87 mcg, 29.9 mg, vitamin A, 28.7 mg, vitamin C 28.7mg,
and small amounts of B vitamins. In addition to high amounts of vitamin C and iron, the
highly-colored potato varieties are rich in antioxidants, anthocyanins and carotenoids which
are associated with a lower incidence of chronic diseases such as cardiovascular disease,
atherosclerosis, rheumatoid arthritis and cancer.
Hippocrates soup -- This soup is a very important part of Gerson Therapy. A minimum of
8oz should be taken at lunch and dinner. It is alkalinizing, cleansing, and good for the
kidneys, along with being high in antioxidants and essential vitamins and minerals, including
potassium and vitamin K.
Watercress -- This is used in the green juice and belongs to the cruciferous vegetable
family and is high in glucosinolates. It contains PEITC, a form of glucosinolate which
prevents tumors from sending the signal to the body that requests a blood supply. Do not
skimp on watercress in the green juice, it is a potent anti-cancer food. It is also a plant
easily infested with parasites, so wash carefully!
Carrot juice—A glass of juice made from 1 lb. of fresh carrots (approx. 8 oz.) contains: 12
g protein, 18 g carbohydrate, 69 mg calcium, 1.3 mg iron, 636 mg potassium, 20,460 IU
vitamin A as beta carotene, 15 mg vitamin C and small amounts of B vitamins.
**Carrots contain a compound called falcarinol which is a natural pesticide. It protects the
roots from fungal disease. A team of researchers from the University of Newcastle in
England and Denmark found this natural pesticide reduced the risk of cancer developing in
rats by one third. Research has confirmed that this substance has more anti-cancer
properties than beta-carotene. While carrots lose some vitamins and minerals in the cooking
process, the amount of falcarinol is increased, although it is still available in raw carrots.
This information can explain in part why carrots may not exacerbate candida infections. It is
59
Gerson Institute Gerson Basics
still too early to know everything about this new discovery, but it can help answer questions
for people who are concerned about the natural sugar in carrots.
Chard -This is used in the juice and the diet. Swiss chard is an excellent source of vitamins
C, E, beta carotene and the minerals calcium, magnesium, vitamin K, zinc and manganese,
as well as about 3 dozen antioxidant phytonutrients, including the carotenoids lutein and
zeaxanthin and the flavonoid quercitin. These phytonutrients provide excellent anti-oxidant
and anti-inflammatory benefits. The unique flavonoid phytonutrients offer special benefits
for blood sugar control. Chard inhibits activity of an enzyme called alpha-glucosidase which
is used to break down carbohydrates into simple sugars. It also stabilizes blood sugar levels
due to its high fiber and protein content. The ancient Greeks and later the Romans honored
chard for its medicinal properties.
Red cabbage - This is an item in the green juice. Red cabbage contains high amounts of
the omega 3 fatty acid called alpha-linoleic acid or ALA. It also contains 6-8 times the
amount of vitamin C than in green cabbage. Its antioxidant and anti-inflammatory nutrients
include beta-carotene, glucosinolates, anthocyanins and glutamine. One of the
glucosinolates called sinigrin has received special attention in cancer prevention research,
especially in respect to bladder, colon and prostate cancer. The glutamine content helps
heal stomach ulcers and inflammation as well as regulates any bacterial populations of
Helicobacter pylori inside the stomach.
Apples - They are in the juices and can also be eaten raw or in apple sauce. Apples contain
many phytonutrients and antioxidant nutrients, as well as fiber. Quercetin and other
flavonoids inhibit carbohydrate digesting enzymes like alpha-amylase and alpha-
glucosidase. When these enzymes are inhibited, fewer carbohydrates are broken down into
simple sugars, which keep the blood sugar in balance. Apples have antioxidant benefits that
lower the risk of asthma and the risk of lung, colon and breast cancer. Other anti-
inflammatory benefits are found to reduce blood levels of C-reactive protein, mainly from
the quercetin.
Apples also decrease the oxidation of cell membrane fats, helping to prevent
atherosclerosis. The fiber, pectin, is linked to reducing the risk of cardiovascular disease by
providing protection from oxidation of fats.

Gerson Institute Gerson Basics
Dr. Gerson strongly believed that foods should be tender and easy to chew and
digest in order to help the weakened digestive system get the greatest amount of nutrition
in the most accessible form from the food consumed. Soft cooked foods also help to provide
a buffer for the considerable volume of juices and raw foods ingested.
Preparation:
1. Carefully wash and clean all vegetables. Peeling or scraping is forbidden, because
important mineral salts and vitamins are deposited directly under the skin.
Add 5-6 drops Lugol’s to a sink full of cold water. Soak vegetables and fruit
for no more than 5 minutes. Rinse with pure water. This will kill bacteria
and insects.
Tip: Wash your produce for the day all at once in the morning.
Cooking methods:
Stove top - Gerson foods are cooked slowly over low heat to retain nutrients. There are two
methods of stove top cooking with Gerson foods. One is to use onions, tomatoes, or apples
on the bottom of the pan to add extra moisture and flavor for cooking. This method takes
longer, but really adds flavor. The second is to cook the vegetable with a tablespoon of
water or soup stock in the pan. No oil is used.
1. Thinly slice one onion and/or tomato or apple and layer the bottom of the pan. Or
use two tablespoons of soup stock or water.
2. Chop or break apart the vegetable you will be using and place on top of onions.
3. Put a heat diffuser on the stove under the pan, leave uncovered and turn to
medium heat. Once you see the onions or water steaming, cover with a lid. When
the pot lid becomes hot to the touch turn the stove down to the lowest heat - just
below boiling 212º F (100º C) - add water or soup stock if extra moisture is
needed.
4. Cook for 1 to 1 ½ hours depending on the vegetable.
61
Gerson Institute Gerson Basics
Tip: The following vegetables are cooked best using this method: asparagus,
broccoli, Brussel’s sprouts, carrots, cabbage, cauliflower, chard, collards,
eggplant, green beans, kale, spinach, and zucchini
Tip: Dispose of water after cooking spinach because it contains oxalic acid that
can reduce calcium intake.
Note: Each stove’s temperature is different. Monitor yours to see how long it
takes for food to boil or simmer to figure out your proper cooking times.
Baking – You can bake most any of the vegetables, but baking is generally used with
artichokes, beets, bell peppers, eggplant, potatoes, winter squash, sweet potatoes, and
yams. This method of baking is virtually waterless. Use onions, tomatoes, or sprinkle with
lemon to add moisture when necessary.
1. Pre-heat oven to 200-300° F (93-177º C) – depending on which vegetable you
are cooking, potatoes require 350° F (177° C).
2. Wash and prep vegetables. Poke holes in potatoes and yams to release steam.
3. Place vegetable(s) in a casserole dish with a tight fitting lid. Artichokes, beets,
potatoes or yams should be placed on a baking sheet or directly on the rack.
4. Bake for 1-2.5 hours – depending on the vegetable.
Steaming – used for lentils that can be eaten 6 months after the start of the therapy with
permission of Gerson doctor.
1. Wash and strain lentils with loose-knit mesh strainer.
2. Pour into Pyrex, cover with water and soak overnight.
3. Rinse and drain water and cover with a towel let sprout for one day (this releases
the trypsin in the bean, which can be gas causing).
3. Put in a steaming basket with an inch of water and steam over low-medium heat
for 20 minutes, or until tender.

Oatmeal
A large portion of oatmeal should be eaten every day for breakfast. Other cereals
should not be used unless someone is allergic to oats. Not only do oats supply healthy fiber,
B-vitamins and needed proteins; most importantly, they provide a soft cushion in the
intestinal tract for the raw juices that will be ingested throughout the day.
Ingredients (for 1 person):
- ½ cup organic rolled oats (may soak overnight for a creamier texture)
- 12 oz. distilled water
Directions:
63
Gerson Institute Gerson Basics
Tip: Make sure to cut off roots and area that can hold dirt on the celery root.
Tip: When running food through mill spin counter-clockwise occasionally and
scrape the bottom to loosen up the fibers for the liquid to pass through.
Tip: Chop up raw onion and garlic as garnish to soup for added flavor.
Tip: You may refrigerate the soup for up to 24 hours after you have made it.
Salads
The salads bring a nice balance of raw food to the Gerson meals, although we
discourage filling up on salad and not eating the other foods. If you are hungry we suggest
eating more of the oatmeal, potato, or soup. You will receive plenty of benefits from raw
foods through the juices you will drink throughout the day.
The following salad ingredients can be finely chopped, grated, minced, mixed together or
eaten separately:
Lettuce greens - Romaine Chicory
Carrots Radishes
Green onions Green peppers
Knob or Branch Celery Tomatoes
Apples Watercress
Endive Escarole
Chives Onions
Note: Use all chopped up raw vegetables as soon as possible to prevent nutrient loss. Do
not refrigerate for later use.
Salad Dressing
Dilute organic red wine or apple cider vinegar with water to taste. Add a little spray-dried,
organic cane juice, Sucanat or rapidura, some herbs, onion, and/or garlic. Or combine flax
seed oil, lemon juice and crushed garlic for a delicious and a healthy salad dressing. See
Healing the Gerson Way for more dressing recipes.

Clean Up:
Have on hand a bowl or small bucket of 3-4 drops of Lugol’s and water solution
containing a washrag for cleaning cutting boards and counter tops.
Rinse off your knife in between cutting different vegetable. Eliminate cross
contamination.
The Gerson way of preparing and eating food naturally reduces the chances of
contamination.
Food storage:
Fruit and tomatoes are best left outside the refrigerator. Refrigeration will weaken
their taste.
65
Gerson Institute Gerson Basics
It is best to store potatoes and onions separately because onions will cause potatoes
to sprout more quickly.
Keep fruits stored separately rather than in a bowl together. The natural gases of the
fruits can cause decay of others.
Store watercress in a glass inside the refrigerator, with roots in 1 inch of water.
Store romaine lettuce covered with a wet cloth in a closed container.
After you make chamomile tea you can store it in the refrigerator overnight and use
for two days after.
Gruel should be made fresh and can be kept on the counter in a mason jar
throughout the day. If all the gruel is not used you can store in the refrigerator
overnight, but no more than 24 hours from when it was originally made.
Presentation of meals – after you have been on the therapy 3-6 months and
develop a routine:
Use different plates, glasses, placemats, etc.
Serve meals in different locations in the house; on the patio, in the yard, by the fire,
or on an elegant tray in bed.

Shopping List
Below is a list of organic produce for one person for a week. The amount listed under juicing
is for someone taking 13 juices a day. If you are taking less juice then you will require less
produce. We suggest making copies of this list to take to the store.
For Juicing:
*Please note: The amount of lettuce needed will vary depending upon the size of the heads.
Once you have practice in making the green juice, it will be easier to estimate the amounts
needed.
General Foods: Choose at least 4-5 different vegetables each week from the Desirable
Foods List. Shop frequently if possible, and buy different vegetables each time.

Gerson Institute Gerson Basics
One is encouraged to read the chapter of A Cancer Therapy beginning on page 205
entitled “Short Practical Explanation of the Medication”. Dr. Gerson explains the indications
and uses of each of the medications in terms everyone can understand. It is also
recommended that you read chapter 14 in Healing the Gerson Way book for further
description of the Gerson medications. One needs the expertise of a qualified Gerson doctor
to prescribe the correct supplements with appropriate dosages. If you are not able to work
with a Gerson doctor then choose the protocol that best fits your condition. Then make
modifications as necessary for individual circumstances based on age, prescription
medications, complicating factors, and multiple health issues other than cancer.
The supplements taken at mealtime have a preferred schedule. Acidol (long capsule with
whitish filling) should be taken a few minutes before mealtime. The three Pancreatin tablets
should be taken at the close of the meal. The rest of the medications are taken during the
meal.
Potassium Compound Salts
This solution is made from 33 mg each of potassium acetate, monophosphate and
gluconate (100 g bottle of powder) diluted in 32 oz of distilled water. Typical dosage may
vary from 1-4 teaspoons 10 times a day of the prepared solution, representing 1.5
to 6 grams of potassium per day. This medication is added in equal amounts to each of
the carrot/apple, green and orange juices (but not the pure carrot juice) daily, typically 1 to
4 teaspoons per juice.
This medication is primary for the treatment of tissue damage syndrome, found in all
cancers, and in most other degenerative diseases. It combines with the other medications
and dietary regimen to increase cellular potassium levels, reduce intercellular edema and
restore normal cell function.
Be sure to empty the entire bottle into 1 quart of distilled water. Do not use the
powder directly from the bottle.
The potassium solution should be stored in glass rather than plastic or metal. It does not
need refrigeration but should be stored in a dark place or a dark container. One quart of
potassium will last one or three weeks, depending on prescribed dosage. The potassium
solution should be discarded and replaced if it becomes cloudy.
Thyroid
Thyroid enhances production of mitochondria and is also involved in the increase of ATP
production.
The Gerson program uses pure, desiccated thyroid gland rather than the synthetics. It is
a prescription item. Broda Barnes, M.D., noted endocrinologist and hypothyroidism
73
Gerson Institute Gerson Basics
researcher, reports that in many cases, not all of the symptoms of hypothyroidism will
disappear with use of the synthetic thyroid medication. Only when the natural material
containing both T3 and T4 is used are all of the symptoms relieved. The synthetics do not
seem to cover the full spectrum of thyroid activity.
Dosages are initially determined by a Gerson practitioner or by using the
protocols in Healing the Gerson Way (unless contraindications exist). Adjustments
are made on monthly blood tests for T3, T4, and TSH. The first morning axillary
temperature can be taken to monitor the basal metabolic rate and to see how well the
thyroid is functioning. It does not replace the blood tests.
The Basal Metabolic Temperature (BMT) must be taken upon awaking in the morning,
before eating, drinking or arising from bed. Shake down the thermometer and place it on
the bedside table before going to bed. Immediately upon waking, place the thermometer
snugly in the armpit for ten minutes. Record the result. The normal basal temperature is
between 97.8 and 98.2 Fahrenheit (36.6° and 36.8° Celsius). A temperature below 97.8°
(36.6° C) indicates the possibility of low thyroid activity. Over 98.2° (36.8° C) means the
patient may have too much thyroid activity, except when observed during infection, healing
reaction, severe pain, or with the use of an electric blanket. In the absence of these
conditions, a BMT exceeding 98.2° (36.8° C) over three consecutive days indicates the need
to reduce thyroid dosage.
Some patients have expressed concern about the long-term use of thyroid. Our
experience has been that the body’s natural thyroid production will not be suppressed as
long as thyroid medication dosages are appropriately monitored. Gerson was usually able to
eventually wean his patients off of thyroid; today, we often see that patients must continue
taking some dosage of thyroid in the long term. This is probably due to increased thyroid
toxicity due to environmental and nutritional factors.
74
Gerson Institute Gerson Basics
Pancreatin Tablets
- (325 mg) Typical dosage is 3 tablets, 4 times a day.
- Pancreatin aids digestion, and is also valuable in assisting the process of tumor
debulking.
Contraindications: In the case of gout, desiccated liver may aggravate the condition
and would need to be temporarily omitted.
Niacin
Also known as nicotinic acid and Vitamin B3 (50mg), the typical dosage is 1 tablet, 6
times a day. Niacin serves as a vasodilator. It is a factor in tryptophan/niacin exchange,
assists in improving circulation, and therefore raises skin temperature, thereby increasing
oxygenation and cellular nutrition and detoxification. It also increases peristalsis and aids
protein digestion.
Transient tachycardia (increased heart rate) may be experienced during a “niacin flush”.
This process may cause mild discomfort, but is entirely harmless, except in those patients
with bleeding lesions or other conditions where niacin is contraindicated. In most cases,
niacin reactions are minimized when taken concurrently with a meal or when the tablet is
dissolved under the tongue. Other niacin (niacinamide) or “no-flush” niacin is not a
satisfactory replacement, as it is the vasodilatation effect, among others, that we are
seeking to promote on the therapy.
75
Gerson Institute Gerson Basics
CoQ10
CoQ10 is a good antioxidant which can improve the mitochondrial function of the cell.
CoQ10 was found in high amounts in raw liver juice, so it can replace the liver juice to some
extent. Ubiquinol is a good form of the CoQ10 and can be taken by slowly starting out
with a lower dose and worked up to 300 mg a day with meals.
Bee Pollen
Bee pollen can be used as a protein source, 2-4 teaspoons a day, at the point at which
proteins are introduced to the diet. Start cautiously with a few grams, as some people have
strong allergies to bee pollen.
B-12
B-12 supports the formation and maturation of red blood cells, platelets and
granulocytes. The Gerson Therapy diet is low in B-12 and many patients have low digestive
capacity and are unable to absorb this nutrient. It comes in the form of either
cyanocobalamin, hydroxycobalamin or methylcobalmin for injection. The injectable form is a
prescription item and the preferred form is methylcobalamin or hydroxycobalamin, but you
can use cyanocobalamin if that is all that can be obtained. The dosage for the injectable
B-12 by itself would be 1 cc a week initially and it will need to be reduced later. If
you cannot obtain a prescription for the injectable B-12 you can take it orally. The best
form for oral use is methylcobalmin in a sublingual form. The initial dose would be 1000
mcg a day. Later in the course of the Therapy it is reduced.

If you do not attend the clinic, another option is if you have a physician in the US
who will write you a prescription from a compounding pharmacy. Call the Gerson Institute
for details if you have a physician willing to do this.

D. INJECTION PROCEDURE
1. Clean the skin with alcohol and allow it to dry (this prevents any skin
stinging).
2. Inject the needle swiftly into the skin, allowing the needle to fully go into the
muscle since this depth provides less pain and better absorption.
3. Inject the fluid into the muscle in a smooth, gentle (not too slow, not too fast)
motion and then remove quickly. Rub the area with pressure with a cotton
swab for a few seconds to disperse the medication.

Gerson Institute Gerson Basics
In addition to the intensive Gerson Therapy regimen, the Gerson Institute has
approved the use of certain adjuvant treatments. These are scientifically based additions
that the Gerson Institute staff and Gerson-trained physicians have found useful to enhance
healing and improve the chance of recovery in some patients. None of the supplemental
treatments described below should be considered stand-alone treatments for
cancer or any other disease. They are used only as an adjunct to the full Gerson
protocol. Your Gerson physician will recommend the specific adjunctive therapies
appropriate for your condition.
Laetrile is the purified form of amygdalin, also called B-17, which occurs naturally in
the pits of apricots and in some other foods. Laetrile does not cure cancer by itself. Gerson
physicians use it to reduce bone pain primarily in breast, prostate, and lung cancer. Do not
use apricot seeds as they are too high in fat and protein.
Tahebo Tea (or Pau d’Arco) and Essiac Tea are certain herbal combinations,
which have been used by Native Americans. They are known to have anti-cancer properties.
Homeopathic medicine was developed nearly two hundred years ago by Samuel
Hahnemann. Homeopathy comes from two Greek words: Omio means the same and Pathos
means suffering, thus homeopathic remedy produces the same symptoms as those of the
illness and assists the body’s own healing energies rather than overriding them.
Homeopathics are natural remedies that work with the body’s natural healing capacity. They
have no side effects and can be combined with all other treatments. These are frequently
effective for symptomatic relief of pain, nausea and healing reaction symptoms.
81

Acupuncture and Traditional Oriental Medicine are healing techniques from the
East that have been used for over 5,000 years. The addition of certain Chinese herbs, the
use of acupuncture, acupressure, and Oriental diagnoses frequently helps in stimulating an
immune response and enhances healing.
Grapefruit seed extract is taken to protect patients from catching colds or the flu.
Grapefruit seed extract, which has antiviral and antibacterial properties, was recently added
to the program and has been useful. Taken orally and used as a gargle, it can ward off a
cold if taken at the very first suspicion of trouble. Another excellent preparation is the
homeopathic flu solution by Dolisos America, Inc. (www.dolisosamerica.com).
Colostrum (Imugen) is used for people who have a low white blood count and can
help boost the immune system.
Charcoal Tablets are used to control diarrhea, to absorb gas in the intestinal tract
and externally in clay packs. The charcoal tablets are 10 grain, highly-reamed wood
charcoal. Follow dosages on the label for specific symptom.

- This estimate is based on the main essential supplements needed and the lowest price
offered by companies which carry the Gerson supplements. Some companies, you will note,
have higher prices which will raise the estimate if you order from them. The estimate is also
based on the amount for someone starting on the full protocol. The full protocol requires
higher amounts of the potassium compound, Lugol’s and thyroid for the first month. If one
is starting on a modified level of Therapy, fewer bottles of thyroid and potassium can be
ordered.
- Crude liver is periodically available and not included in the cost estimate. When available
ISHI can sell this to patients that went to the clinic in Mexico for $40-50/ 30 ml vial.
- Other medications and amounts may vary based on individual needs, as prescribed by the
Gerson physician.

In some cases, oatmeal and fruit have to be omitted at breakfast for the first few
days, and replaced with raw salads, Hippocrates soup or cooked vegetables.
Eliminate the apple from the carrot juice and reduce the number of carrot juices, and
replace with green juices. For example, instead of the usual 5 cups (8oz. glasses) of
carrot juice, drink only 3 and take 2 extra green juices.
Also, for the first week or two, omit bananas, dried fruit, grapes and other very
sweet fruit. Apple sauce is acceptable.
Instead of orange juice at breakfast, drink grapefruit juice which contains less sugar.
However, you must check to make sure you are not taking a prescription medication
that the grapefruit juice would adversely affect.
Take thyroid, Lugol’s solution and potassium in reduced amounts. No more than 1
grain of thyroid a day, 2-3 drops of Lugol’s a day and 1 tsp of potassium in each
juice, if not contraindicated for other reasons. It is recommended to take 3
capsules/day of chromium picolinate (200 mcg per capsule). This amount can be
reduced, usually within a week or two, when blood sugar levels remain stable.
Monitor blood sugar levels daily. When they reach a normal level, return to carrot
apple juices and the regular therapy, including oatmeal with fruit for breakfast and
also orange juice. Avoid dried fruit and bananas for a longer period of time.
This information does not take the place of the advice of your medical doctors.
If the condition is severe and has existed for some time, it is recommended to
start the therapy under the supervision of a Gerson trained physician or visit the
Gerson clinic. Once a patient has been started on dialysis, the Gerson Therapy
cannot be used.

Gerson Institute Gerson Basics
In Chapter 3 of his book, A Cancer Therapy – Result of 50 Cases, Dr. Gerson offers
nutritional guidance for people who want to maintain a good level of health. Below is a
summary of what he has written.
All food should be fresh and organically grown. Seventy-five percent of the diet
should include the following:
Vegetables
All vegetables should be freshly prepared or stewed in their own juices (*see note on
cooking method). Especially recommended are: carrots, peas, tomatoes, Swiss chard,
spinach, string beans, Brussels sprouts, artichokes, beets, cauliflower, red cabbage and
broccoli.
Salads can be made of green leaves mixed with tomatoes, fruits and other
vegetables. Carrots, cauliflower and celery can be finely grated. Fresh garden herbs such as
onions, parsley, chives, and celery should be used freely.
Fruit
Include all kinds of fresh fruit, including fruit salad, mashed bananas, raw grated
apples and applesauce. Some can be dried, but not frozen. Berries are ok for healthy
people. Also include freshly prepared fruit juices such as orange, grapefruit, grape, etc.
Other
Potatoes are best when baked or boiled in their jackets and seldom fried.
Bread may contain whole rye or whole wheat flour or mixed, and as little refined as
possible.
Oatmeal can be used freely. **Brown sugar, honey, maple sugar and maple candy
are optional.
**Milk and milk products which are not greatly salted or spiced, such as buttermilk, yogurt
or butter are acceptable. Cream and ice cream should be reduced to a minimum or
restricted to holidays.
The remaining 25 % of the dietary regime which allows for personal choice may
consist of meat, fish, eggs, nuts, **candies or cakes.
90
Gerson Institute Gerson Basics
Reduce alcohol to a minimum. Avoid nicotine, salt, bicarbonate of soda, smoked fish
and sharp condiments such as pepper and ginger. Reduce alcohol to a minimum. Coffee
and tea should be replaced by herbal teas.
Note: The topics of juicing and coffee enemas were not included in Chapter 3, but the
Gerson Institute does feel they can be beneficial to a health enhancement program.
Juicing
Most health authorities today advocate the benefits of fresh juicing, especially
organic vegetables. Incorporating freshly made juices daily or weekly is considered health
enhancing. You may use the Gerson juice recipes as well as other juice recipes that you
feel are beneficial to you.
Coffee Enemas
Due to increased environmental exposures, most people are absorbing more toxins
today than 50-60 years ago. Coffee enemas can help the liver process this extra burden
and clean the blood. If one is juicing daily, a few coffee enemas a week or one daily is
generally acceptable. If you choose to do daily coffee enemas the ratio guideline is to be
drinking three juices for each enema.
Gerson Supplements
There is no recommendation for use of the Gerson supplements for people following
these general guidelines for health enhancement. It is recommended to use one’s own
judgment or consult with an alternative physician or nutritionist for your specific needs.
*COOKING METHOD: Cook vegetables slowly for one and one-half to two hours without
water. To prevent burning, use a flame diffuser and add a couple tablespoons of soup stock,
or add onions, tomatoes or apples on the bottom of the pan for the liquid they provide.
Wash and scrub vegetables thoroughly, but do not peel or scrape them. Saucepan covers
must be heavy or close fitting to prevent steam from escaping. Cooked vegetables may be
kept over one night and reheated slowly.
**Much has been learned over the past 50 years about optimal nutrition and biochemical
individuality. For more specific recommendations, particularly for the 25% non-Gerson
foods, it is recommended you consult with a reputable alternative practitioner in regard to
your individual requirements or sensitivities. Many people do not tolerate milk, milk
products, wheat or gluten. Cakes and cookies and other sweeteners are not currently
recommended.

Gerson Institute Gerson Basics
We would like to briefly reiterate the purpose of coffee enemas since people new to
the therapy ask about this, as well as a reminder to “veterans” as to how we can explain
this to others.
Coffee enemas are a vital part of the detoxification process of Gerson Therapy. The
purpose of the enema is to remove toxins accumulated in the liver and to remove free
radicals from the bloodstream. In the 1920’s, two German professors tested the effects of
infused caffeine on rats. They found that the caffeine travels via the hemorrhoidal vein and
the portal system to the liver, and then opens up the bile ducts and allows the liver to
release bile, which contains toxins. The theobromine, theophylline, and the caffeine in
coffee dilate blood vessels and bile ducts, relax smooth muscles, and increase the bile flow.
Doctors at the University of Minnesota showed that coffee administered to mice also
stimulates an enzyme system in the liver called glutathione S-transferase by 600-700%
above normal activity levels. This enzyme reacts with free radicals (which cause cell
damage) in the bloodstream and makes them inert. These neutralized substances become
dissolved in the bile, are released through the bile flow from the liver and gallbladder, and
are excreted through the intestinal tract. A Gerson patient holds the coffee enema in the
colon for 12-15 minutes. During this time, the body’s entire blood supply passes through
the liver 4-5 times, carrying poisons picked up from the tissues. The enema acts as a form
of dialysis for the blood across the gut wall.
The purpose of the coffee enema is not to clear out the intestines, but the quart of
water in the enema stimulates peristalsis in the gut. A portion of the water also dilutes the
bile and increases the bile flow, thereby flushing toxic bile (loaded with toxins by the
glutathione S-transferase enzyme system) out of the intestines.
A patient coping with a chronic degenerative disease or an acute illness can achieve the
following benefits from the lowering of blood serum toxin levels achieved by regular
administration of coffee enemas:

Add 15 tablespoons (little less than 1 cup) of coffee to a quart of boiling water.
Boil for 3-5 minutes uncovered and then cover and simmer for 15 minutes.
Strain mixture using a fine-knit strainer to remove all grounds and add additional
water to make 32 oz.
Pour concentrate evenly into 5 – 32 oz. canning jars and add water to bring up to 32
oz. or pour 32 oz. of concentrate in 1 jar and distribute 8 oz. of concentrate per
enema adding in the additional 24 oz. of distilled water each time
Always shake the concentrate jar to mix the fine sediment on the bottom before
dispensing. (adjust solution amount per your prescribed enema strength)
Tip: If you are taking 5 coffee enemas a day, it is advisable to make the coffee concentrate
in a double batch to provide you with a two day supply. This way you only have to make the
concentrate every other day.
**Let the coffee cool to body temperature before performing the enema.**

If someone who is anticipating starting the Gerson Therapy has a long history of
constipation, it might be acceptable to do a series of colonics before starting the therapy to
decongest the bowel. However, once the Gerson Therapy is started, only coffee enemas are
used.
With a healthy Gerson diet, which includes plenty of fiber, the intestines manufacture
and replenish the friendly flora on a daily basis so there is usually no risk of the enemas
causing dysbiosis, a microbial imbalance in the digestive system.
97
Gerson Institute Gerson Basics
A colostomy limits the ability to do coffee enemas. Coffee enemas will work best if the
colostomy is in the sigmoid or descending part of the colon and at least half of the colon
remains intact. Do coffee enemas with irrigation kit after the surgery site is well healed and
there are no other complications. There could be some important reasons why some people
should not irrigate, so be sure to consult with your surgeon or ostomy nurse before using an
irrigation kit. The ostomy nurse will fit you with the colostomy irrigation kit and explain how
to use it.
It is recommended to do only two coffee enemas a day with the irrigation kit and to start
with only 24 oz. of solution (as opposed to the 32 oz. used in a regular coffee enema). This
solution should consist of equal parts of coffee and chamomile tea.
1. Hold or hang the irrigation bag at about 18 inches above the body. You can sit or lie
on your right side.
2. Lubricate the cone at the end of the irrigation tube and place it into the stoma. Be
careful not to press too firmly. The solution will flow into the colon. It will take about 5
minutes to instill 24 ounces.
3. Hold the solution 10-12 minutes and then release into the drainage bag that comes
with the kit.
As we do not recommend that a patient with a colostomy use more than two coffee
enemas per day, the patient will have to follow a reduced Gerson Therapy protocol. A
patient with a colostomy can follow the regular Gerson diet, but they will need to keep the
juices and coffee enemas in balance so that the liver can process the released toxins
without a backup into the system. The supplements taken will depend on the level of
protocol chosen.

DETOXIFICATION ON THE
GERSON THERAPY
Thank You
The health of the teeth, gums and periodontal tissues have a great impact on one’s
general health. The low grade infections caused by the bacteria housed in abscesses or deep
pockets in the gums are a constant stress on the immune system. A cancer patient, in
particular, cannot afford to detract their immune system from fighting the malignancy. We
suggest that anyone who is about to embark on the Gerson Therapy for a serious illness,
such as cancer, has a comprehensive dental exam by a biological dentist (holistic). The
following guidelines will help you determine what steps to take if you have any dental
conditions.
Abscesses
Abscesses should be eliminated promptly and the foci of infection cleared.
Amalgam Fillings
There is considerable literature regarding the toxicity of silver-mercury amalgam
fillings. While research tends to support the health enhancing effects of removing these
fillings, we do not recommend removal of amalgam fillings in the early stages of the Gerson
treatment. All methods we are aware of for mercury removal can result in ingestion of
some portion of mercury, which can put a toxic burden on the already sick body. Once you
are stronger and showing improvement, you may have the fillings may be removed by a
biological dentist who uses safe methods for this procedure. We do not advise doing this
before being on the therapy for 6-9 months. At this point, you are stronger and better able
to tolerate the procedure.
Schedule removal of mercury fillings in a series of sessions; never remove all
mercury fillings at once. It is recommend to take 5 grams of vitamin C in divided doses
orally for 5 days before and after the removal. One exception to this is that vitamin C can
lessen the effects of the dental anesthetic, so the dentist may not want you to take vitamin
C on the day of the treatment. It is recommended that any dental work be done by a
biological dentist who uses materials and procedures that are safe and systemically

compatible. You can find such a dentist through the IAOMT. You can read about their safe
procedures at www.IAOMT.org/safe-removal-amalgam-fillings/ (see resources at the end of
this chapter)
Root Canals
The work of Weston Price, D.D.S., as reported by George Meinig, D.D.S. appears to
offer strong evidence of immune suppression caused by the presence of a root canal. It is
believed that the bacteria in teeth with a root canal can migrate throughout one’s system
and infect the heart, kidneys, joints, nervous system, brain and eyes. These infections are
responsible for a high percentage of degenerative disease that has become an epidemic in
our country today and they tax the immune system. This work is empirically supported by
the work of Joseph Issels, who states that as many as 90% of his cancer patients have root
canals when they present for treatment. Issels states that he has not experienced a single
recovery from cancer in patients who preserve root canal treated teeth.
If you are in good condition, we recommend immediate extraction of the root canal.
If you are in a weakened condition, then start the therapy at the level appropriate for you
and remove the root canals at the first signs of improvement. Take 5 grams of vitamin C
orally starting 5 days before the procedure and during treatment. Check with your dentist
since vitamin C can reduce the effects of dental anesthesia and you may need to avoid
taking it the day of the procedure. For those who are debilitated, no dental work is
recommended until the general condition is improved.
Replacements
We recommend that you work with a biological dentist who will choose the safest,
bio-compatible composite resins to replace amalgam fillings and the safest materials and
methods for crowns, on lays, inlays and bridges.
Toothpaste
Do not use fluoridated toothpastes. Baking soda toothpastes are also prohibited due
to their sodium content. You need very little toothpaste to freshen the mouth. Brush with
an electric toothbrush to remove the biofilm.
Weleda’s Children’s Tooth Gel is an excellent brand. It contains simply glycerin,
water, silica, algin, calendula officinalis, prunus, sweet almond oil and limonene.
You can also make your own toothpaste with the following:
1/2 cup virgin coconut oil (not hydrogenated)
1 tablespoon of fine pumice
Xylitol to taste, depending on how sweet you like your paste
3 drops of essential oil, such as cinnamon or peppermint.
o Soften coconut oil with gentle heat
o Add ingredients and mix well
o Place in a glass jar
o Allow to cool

Healing Reactions
Healing reactions are an essential part of the Gerson Therapy and should be
welcomed as evidence that the therapy is working and the immune system is being revived.
Definitions
Healing reactions are classified into three types for the convenience of understanding
more specifically what is happening. However, it is possible that all three could occur at the
same time. The important thing to understand is how to address the symptoms as soon as
possible.
Toxic Reaction: Toxins are being pushed out of the cells and into the blood stream faster
than can be eliminated by the body.
102
Gerson Institute Gerson Basics
Unclear thinking
Memories from the past
Foul odors
Food cravings
Flu-like symptoms
Joint aches and muscle pain
Muscle spasms, especially in lower legs
Detox Reaction: Symptoms arising from the discharge of toxins through the digestive
tract or to the outside of the body. The body is attempting to rid itself of dead and diseased
tissue, which is necessary to do before it can rebuild healthy tissues. These toxins irritate
the tissues.
Detox and toxic reactions can occur at any time, once the body starts discharging
toxins.
In the case of a healing inflammation reaction involving the immune system, the first
reaction often occurs about seven to ten days after starting the full therapy. The first
103
Gerson Institute Gerson Basics
reaction usually lasts one to three days. Subsequent reactions will occur at increasing
intervals. In patients who have not had previous chemotherapy, the heaviest reaction
usually occurs in the third or fourth month after initiation of treatment. In patients with a
history of chemotherapy, the heaviest reaction period is more likely not to occur until the
fifth or sixth months.
1. Toxic Reactions:
For the symptoms of toxic reactions, the first remedy should be to do an extra coffee
enema. If you are consuming 13 juices, you can increase the enema frequency from every
4 hours to every 3 hours. If you are taking less than 13 juices, the rule of thumb is to do 1
enema for every 3 juices. However, you can increase this ratio with an extra enema during
the reaction if all prescribed juices are being consumed. Discontinue the extra enema once
the reaction subsides.
For some people, depression can be a forewarning of an impending reaction as much
as 72 hours in advance. This reaction tends to be more prominent during the first few
months. It is due in part to the toxins being released into the blood and reacting in the
brain and affecting its functions. Be open to accepting lots of support and encouragement.
Companionship and family support are especially critical here.
2. Detox Reactions:
Nausea
This reaction may be intense and last for several days.
A copious amount of peppermint tea stimulates hydrochloric acid production
and mechanically flushes accumulated bile from the stomach. Often it is the alkaline bile
backing up into the acidic stomach that causes the nausea. If you have gastritis or a
stomach ulcer, peppermint tea would not be indicated. Chamomile tea would be better. A
small amount (1 teaspoon.) of raw sugar or honey can be added to the tea each 24 hours
during reactions unless you have diabetes.
You may need to decrease intake of solid food intake or instead eat raw grated
carrots, mashed banana, and watermelon or apple sauce during this time.
Oatmeal gruel can be consumed in large amounts. Gruel also flushes the bile from
the stomach. In addition, it functions to sooth and protect the lining of the stomach and
intestines and to buffer the effects of the food and juices. An important side benefit is that
gruel provides good nutrition and calories at a time when the body may not be able to
accept much nutrition from any other source.
Oatmeal gruel can be taken in two forms:
1. By the cup from a warm thermos
2. Mixed up to 50/50 with each juice
104
Gerson Institute Gerson Basics
You can add sweeteners to the plain gruel if needed. Stay within the amount of sweeteners
allowed per day on the Gerson Therapy.
Rather than depending on just tea or just gruel, it is better to use both. They each play a
role. See page 112 for gruel recipe.
Vomiting
This occurs less frequently and usually lasts 24 hours or less.
Increase peppermint tea—can continually sip throughout the day
Substitute oatmeal for regular meals
Decrease intake of solid food and exchange for raw grated apples, applesauce, raw
grated carrots, mashed bananas and watermelon (as above)
Add gruel up to 50% per juice and can take gruel straight between juices
If there is vomiting of bile (green and bitter) reduce coffee enemas to 1-2 a day and
take chamomile tea enemas between coffee enemas.
Juices by Enema
If nausea and vomiting prevent the intake of juices during severe reactions, they can
be taken temporarily by rectum which can provide some hydration and nutrition. This is
only a short term option for a temporary situation. An 8 oz. juice is easy to hold rectally for
15 to 20 minutes for complete absorption. They should be warm (body temperature) but do
not heat on the stove. Do not dilute the juices with water.
Please note: If vomiting lasts longer than 24 hours, or if severe, it will need to be
addressed by another method such as an antiemetic given either orally or by IV and IV fluid
replacement may be needed. This will need to be done under the supervision of a medical
doctor.
Diarrhea
Diarrhea is usually a defense mechanism of the intestinal tract against irritating
factors such as the toxic-laden bile. The first few hours of diarrhea are of some benefit
because the irritating factors are being flushed out of the body. If it lasts longer than a few
hours, or for an already weakened individual, an effort needs to be made to bring it under
control. Use the following protocol for diarrhea control for the first 1-2 days. If these
measures do not bring the diarrhea under control it could be caused by bacteria rather than
a healing reaction. At that point, you should contact your doctor. IV fluids may be
necessary, especially if diarrhea is complicated by increased loss of other body fluids from
vomiting.
105
Gerson Institute Gerson Basics
Foul Smells
This category includes breath, body odor, and smelly enemas.
At least one of these symptoms is fairly common in the early detox reactions.
They are self-limiting, lasting up to 48 hours.
Hemorrhoids
Hemorrhoid irritation can develop while on the Therapy, especially in people who
already have hemorrhoids. Irritation around the anal opening can also be caused by the
caustic burning nature of the toxic material being released, particularly in people who have
had chemotherapy. Irritation may last days to weeks to months.
106
Gerson Institute Gerson Basics
Cold sores/fever blisters and canker sores (often experienced after chemotherapy)
Herpilyn ointment (a natural brand remedy found at health food stores).
Apply Aloe Vera gel on oral sores (fresh plant works best)
Swish aloe vera juice around mouth and spit out
Fever
Fever can also be caused by an infection or from the malignancy itself (tumoral
fever)
Infection
Fever from malignancy (tumoral fever)
Healing Inflammation
Severe infections require antibiotics. Fevers from infections are more noticeable in the
afternoon and may last for many days if not treated.
Fever from malignancy (tumoral fever) tends to come on in the afternoon or evening. It
can break anytime. It is a response to tumor activity.
107
Gerson Institute Gerson Basics
*If fever rises above 104 degrees F despite the above management, you
should seek medical assistance.
Please Note: Some people may heal completely without ever experiencing a fever.
This is especially true for those with non-malignant degenerative disease.
Pain
Pain can arise from inflammation, damaged or healing tissue or tumor pressure. It
may be a forewarning of a healing reaction, in which case the duration is only up to 72 hrs.
Swelling
An inflammatory healing crisis from an old injury or history of severe infection in the
past can cause swelling
Elevate the body part whenever possible
Apply either a castor oil pack or clay pack. If the area is red, hot and swollen, a clay
pack is the best choice.
Skin Rash
Rashes are a very common way for the body to rid itself of toxins and are usually
self-limiting.
Take oatmeal baths if you have a pure water supply without fluoridation.
Apply aloe vera gel
Apply cool compresses
Dry Skin
Although this is not directly related to healing reactions, dry skin can be a problem.
Dry skin will naturally self-limit within a few weeks on the Therapy
Apply vegetable based glycerin mixed with a little distilled water over the affected
area several times a day.
Apply aloe vera gel to area
108
Gerson Institute Gerson Basics
Oatmeal baths can sooth dry skin (must not have chlorine or fluoride in water)
Dry brush massage will help to loosen and remove the dead layers of skin and also
stimulate the lymphatic glands. This can facilitate the release of toxins through the
skin and activate the lymphatic glands.
The average Gerson patient will not usually experience all of the above symptoms and some
exhibit only a few. People who have participated in other detoxification programs before
starting the therapy are less toxic may not have strong reactions.
It is very important to understand that some adverse symptoms may be due to the
progression of the disease and if there is any question about this, a doctor should be
consulted.

Gruel is an important part of the therapy. Dr. Gerson suggests adding gruel to juices
as one of the items to use with flare-up symptoms such as nausea and/or upset stomachs.
The gruel helps soothe the irritated stomach when the patient is unable to resume
the intake of juices. In addition, it also helps soothe the intestinal tract if the patient has
diarrhea. Two ounces of gruel can be added to 6 ounces of juice or peppermint tea.
During healing reactions, if juice is not tolerated very well, drink the gruel alone or
the gruel with peppermint tea. Resume juices when symptoms have stabilized.
Making Gruel
4. Cool and pass through a fine strainer, pushing the oats through the fine mesh
so you can obtain a semi-liquid, viscous, drinkable mix.
112
Gerson Institute Gerson Basics
Procedure:
1. Fill one tub with the hottest water (98ºF-105ºF) that you can tolerate and the other
with the coldest (50ºF-70ºF). You want the hot water at the level just up to your navel
when you sit in it and the cold just below your navel.
If you do not have two tubs, you can fill the bathtub with the hot water to the level that
would bring the hot water up to your navel while sitting in the tub. Fill the tub with ice-cold
water and set it in the tub. Switch back and forth.
Hot Cold
2. Start by sitting in the hot water for 5 minutes. Keep the lower part of your thighs
and legs out of the water.
3. Switch immediately into the cold tub and sit for 3 minutes.
4. Repeat this procedure for 3 times ending with the cold tub.
5. Towel dry and rest.
Action: while in the hot water you are attracting blood into an area where the heat is
desired; while in the cold, you are pushing blood out of the area thereby creating a pumping
mechanism to rid the pelvic area of congestion.

The use of castor oil is centuries old and recent research has found it effective as an
antitoxin agent and beneficial for the lymphatic and immune system. Grady4 (1988) found
an increase in lymphocyte production and the activity of T-lymphocytes. Packs are often
used in conjunction with clay packs to relieve symptoms.
Therapeutic actions
The detoxification process mobilizes toxins that can affect muscles causing stiffness,
contractions and pain. Warm packs can be used for muscle tension, spasms, cramping and
bone pain. They improve circulation to the area, assist in releasing the muscles and
dispersing the toxins. The neck and shoulder area are often affected but it is also useful
over the abdomen for intestinal spasms and cramps.
Do not use:
- Lymphoma
- Hepatitis C
- Directly over tumor (will increase blood flow to the tumor)
- Directly over liver with tumor (s)
- Directly over the Thyroid Gland
- Area that is already “hot”
*In these instances, use a Clay Pack instead

Procedure:
1. Use at least 2-4 layers of cloth, about 10” to 12” for pelvic and abdominal
application. Can be smaller size for smaller areas.
2. Lay out the plastic sheet (on top of the metal baking sheet, if you elect to use that).
3. Take the first piece of cloth and pour the castor oil onto the cloth, leaving about 1”
around the perimeter.
a. The cloth should be well saturated, but not dripping.
4. Fold and spread the oil evenly.
5. Repeat this process for each layer (minimum of 2 layers, maximum of 4 layers).
115
Gerson Institute Gerson Basics
6. Place a bath towel and additional plastic lining under the patient.
7. Apply the castor oil pack over the desired area.
a. Lay a plastic sheet over the pack to keep it in place and minimize leakage.
8. Place hot water bottle on top of the castor oil pack.
a. You can heat the castor oil pack in the over in a glass-baking dish to provide
warmth right away, but don’t overheat – heat should be easily tolerated by
the skin.
9. Pack should remain in place for a minimum of 1 ½ hours.
a. Can be kept overnight if one can easily sleep so as not to jostle the pack and
water bottle.
10. After use, wipe skin with paper towel or dry cloth to remove as much oil as possible.
Then, wash with mild soap.
11. Castor oil pack can be kept in a plastic container in the refrigerator for future use.
Add more castor oil for each use to ensure that it is well saturated.
a. Discard if the pack starts to smell/look foul or rancid.

The well-known Cayce health remedy has a demonstrable effect on the immune
system.
By Harvey Grady
It is said that life is not a problem to be solved; it is a mystery to be lived. That
expresses how we’ve felt the past two years at the A.R.E. Clinic’s Fetzer Energy
Medicine Research Institute as we tried to solve the mystery of one of the simplest of
Cayce remedies, the humble castor oil pack.
The castor oil pack is not as impressive-looking as the electromagnetic
instruments that we use for therapy. It doesn’t beep at us or give us computer readouts.
While modern conventional medicine has largely ignored it, countless people have used
this simple therapy- and been helped. Many have recommended it to others. We use it
at the Clinic and recommend it to many patients, having found it to be effective in
accelerating the healing process.
I first heard of castor oil packs from Drs. Bill and Gladys McGarey, and I was
pleased with the results the first time that I used one. Dr. Bill had written a book on the
subject, Edgar Cayce and the Palma Christi, which reports that castor oil had been used
therapeutically in ancient India, China, Persia, Egypt, Africa, Greece, Rome, and in the
Americas. One of his patients said that her parents had used castor oil packs in
Yugoslavia at the turn of the 20th century. My own grandmother has similar
recollections from her youth in Indiana.
So the assumption is that it was a part of folk medicine and perhaps widely used.
But physicians also recommended it in the 17th-century Europe for both internal and
external use. There is one reference in 1772 to a patient being helped by rubbing it on
his belly.
In modern times, however, it appears that castor oil has been valued mostly for
industrial purposes, mainly as a high-speed engine lubricant. It retains uniform viscosity
under extreme temperatures and pressures. It is also an excellent emollient or softener.
As for medical applications, the literature shows it has been used for treatment of
gastrointestinal problems, lacerations and other skin disorders such as psoriasis, and as
an evacuator in preparation for radiological exams. It has more recently been used as a
vehicle for introducing medications into the body.
In our attempt to understand more about castor oil as a health remedy, we
conducted a study of all of the Cayce readings- 545 of them- that recommend castor oil
packs. These readings covered a 20-year period from 1924 to 1944. Our computer
analysis of these readings showed that the castor oil packs were recommended for 30
different purposes, most frequently for (1) increasing eliminations from the gastro-
intestinal tract, (2) stimulating the liver, gallbladder and other organs to improve
assimilation and general systems functioning, (3) healing lesions and adhesions, (4)
relief of pain, (5) improvement of coordination in nervous systems, (6) reduction of
118
Gerson Institute Gerson Basics
inflammation, (7) increasing inflammation of the lymph system, and (8) drawing acids
out of bodily tissues.
Some of the other purposes for which it was suggested were to dissolve
gallstones and tumors, relieve headaches, reduce swelling, increase blood circulation,
and reduce flatulence and nausea.
Clearly, the castor oil pack for Cayce came close to being the all-purpose
remedy. Scientists, however, are always weary of a therapy that is said to produce
healing effects for a wide variety of ailments. They recognize the power of the mind and
usually suspect the presence of the placebo effect. In other words, if the patient
expects a therapy to work, the patient’s mind will sometimes produce the physiological
changes that are associated with healing. Moreover, if the physician believes it will be
effective, the patient will most likely develop an even stronger belief in the power of the
therapy. The “snake oil” sold at old-time medicine shows, the talismans of the shaman,
the sugar pill occasionally dispensed by doctors- all exemplify the placebo effect.
In designing a research project, we took into account the possibility that the
castor oil pack might be effective mainly through the placebo effect, which is part of
each person’s capacity for self-regulation of health. The emergence of the field of
psychoneuroimmunology has assisted this examination by providing a more
comprehensive approach to this type of study, new testing methods, and an expanding
database of research.
In analyzing the castor oil pack readings, we noted the positions of the body
recommended for applying the pack. We found that a specific position was mentioned
in 431 readings, and of these 90 percent recommended that it be positioned on some
part of the abdomen. It was positioned on the right side of the abdomen 75 percent of
the time and on the upper portion of the abdomen 53 percent of the time. Other parts of
the body were suggested in 44 readings.
As for the specific organs mentioned as targets, the liver area seems to have
been the primary site for treatment: 63 percent of the 431 references were aimed at the
liver itself; and about 90 percent suggested positions that included the liver.
Other organs that are affected by placement in the upper right quadrant of the
abdomen, according to the readings, are the gallbladder, pancreas, stomach, the
transverse colon, and the small intestine. The lower right position covers, in addition,
the appendix, the ascending colon, cecum, and the lacteal ducts. The upper left
quadrant targets the spleen as well, and the lower left reaches the descending colon.
In developing a hypothesis, we considered the possibility of castor oil having a
beneficial effect on the immune system. But, we asked, what part of the immune
system could be affected, considering the body positions most recommended? We
could hypothesize that the lymphatics would be affected, considering the lymphatic
activity associated with the liver and with the lacteal ducts of the small intestines.
Hence, application of the pack to the upper and lower right quadrants might affect
lymphocyte production associated with those two areas.
But there were other factors to consider, namely the characteristics of the pack
and the oil itself. About 250 readings recommended a specific number of layers of
flannel, ranging from two to five; and over 300 readings recommended that the oil be
heated. Over 100 readings suggested that the oil be heated. Over 100 readings
suggested that the oil be as hot as the body could stand, others that it be simply hot or
119
Gerson Institute Gerson Basics
warm. The number of layers of the pack increased as more heat was recommended.
While either wool or cotton flannel was recommended, wool was considered preferable
for its heat-retention capacity.
These factors led us to consider the pack’s effect on skin electrical conductance
and its effect on the acupuncture system of the body.
Others factors to be considered in our research project were the length of time
and frequency of each treatment and the duration of the period for treatment. Over 50
percent of the readings had suggested keeping the pack on for an hour, but in one case
only 10 minutes was recommended and in another case three days was the prescribed
period. The frequency most often recommended was three times a week. The duration
varied from a single application to repeated application for six months, but for most
conditions the therapy was recommended for a period of two to four weeks.
Specific rest periods were also mentioned in some readings. The most common
cycle was to use the pack three days a week for an hour at a time for three weeks and
then take a rest period of one week before repeating the cycle. When the pack is to be
kept on for several hours at a time, short rest periods of 20 to 30 minutes were
sometimes suggested. The cycle of use and rest presumably is intended to stimulate
the body to develop its own balance and capability of functioning.
Finally, in preparing our research project we considered the experience of others.
In searching the literature we found that the only related research had been done in
Belgium, where castor oil was used as an antitoxin agent, and in Japan where it was
found to have an impact on the lymphatic delivery system. The McGareys had found in
their practice that the pack had stimulated internal physiological processes, including
the immune system, and the Cayce readings had claimed that the packs stimulated
lymphatic circulation.
Because of the growing need for a cost-effective immune system stimulant, due
to the rise of AIDS, cancer, and other immune disorders, our research staff determined
to explore the effects of the castor oil packs on the immune system. Our study focused
on lymphocyte testing, inasmuch as recent developments in the field of immunology had
produced lab tests for measuring lymphocyte numbers and their activity level.
Lymphocytes are cells which are active defenders of the health of the body, like knights
who protect the castle by killing off invaders. The questions we posed were:
Do castor oil packs placed on the abdomen cause an increase in the numbers of
lymphocytes?
Do they cause an increase in the level of lymphocyte activity?
120
Gerson Institute Gerson Basics
Neither the 11 subjects nor the research staff knew which packs they were using, for
the packs had been coded by the research director. The volunteers chosen for the
study had no previous experience using such packs. All of them were in good health.
The procedure was to take blood samples before and after the packs were applied
to see if any effect could be noted. The testing began in June, 1986, with the volunteers
reporting to our Oak House facility, where they were assigned packs and placed in
beds. The first blood sample was drawn just before the pack was placed on the
abdomen. The second sample was taken two hours later when the packs were
removed. A third sample was drawn five hours later. The following morning a fourth
sample was drawn.
During this 24-hour test period, the volunteers abstained from caffeine, nicotine,
alcohol, or extreme physical or emotional stimulation. Any exemptions were noted. The
blood samples were then sent to a lab in Los Angeles.
The test results showed an apparent increase in lymphocyte production and the
level of activity of T-cell lymphocytes in the group that used castor oil packs. T-cell
lymphocytes originate from bone marrow and the thymus gland. They are small
lymphocytes that identify and kill such invaders as viruses, fungi and bacteria.
The number of subjects in the group was too small, however, to establish statistical
significance. So in the second phase of the study we used 36 people- six men and 30
women. The test results for this larger group, analyzed by an independent statistics
firm, found that the group treated with castor oil showed significant results in the total
production of lymphocytes and T-11 cells. Specifically, the analysis of variance
revealed increases in the T-11 cell counts for the castor oil group at the significance
level of p=.01, which the paraffin group did not evidence; and multiple analysis of
variance upheld these finding at a significant level of p=.008 for the T-11 cell increase,
ruling out the possible age, sex, and circadian (daily rhythm) effects.
Having evidence that a minimal dose of a castor oil pack does influence the
immune system, we confront greater mysteries. What is the mechanism by which the
pack works? How strong an influence could it have on chronically ill persons whose
immune systems are weakened?
We have considered two possible mechanisms: bioenergetics and biochemical.
The bioenergetics theories are based on the statement in the readings that castor oil
acts to facilitate the relationship between the physical body and its animating forces,
bringing greater vitality to the body’s tissues. It is described as a “limbering agent.”
Reading 1523-15 compares it to lubricating oil used on a hinge to make it move
properly.
If castor oil has this type of bioenergetics property, then it might radiate a subtle
energy, especially in contact with the body. We have heard of observations by persons
who claim to see auras that castor oil emanates a white light which is visible six to eight
inches around its container. It could, therefore, be a white light generator, radiating a
wide range of frequencies of some type of energy.
It may be that castor oil’s extraordinary molecular properties, which make it the
standard for viscosity testing, give it energetic properties similar to that of crystal, which
organizes energies in its immediate proximity by its orderly matrix of atoms. Such
theories may not be testable for some time because of the limited capacity of today’s
electromagnetic detection devices.
121
Gerson Institute Gerson Basics
The biochemical theories are based on assumptions that castor oil has chemical
properties that affect the immune system. Such theories are more likely to gain
scientific acceptance. One theory is that castor oil acts as a trigger mechanism of
immune system T-cells in the skin, causing them to activate a local and possibly general
immune-system reaction through the lymphatics. The skin is known to be an integral
part of the immune system. T-lymphocytes are scattered throughout the skin, primarily
in the epidermis or outer layer. These T-lymphocytes communicate with and influence
the level of the general immune system.
The next question is: How would castor oil act as a trigger? In searching for an
answer, we are led to consider the role of prostaglandins, which are membrane-
associated lipids composed of 20 carbon fatty acids containing a cyclopentane ring,
distributed in the cell membranes throughout the body. Prostaglandins are potent
substances that have a number of effects on the body. They stimulate smooth muscle
contraction; raise and lower blood pressure; regulate metabolism, acid secretion of the
stomach, blood-platelet aggregation, and body temperature; control inflammation and
vascular permeability; and transmit nerve impulses.
If castor oil packs stimulate prostaglandin activity, could this be a mechanism for
accomplishing the wide variety of physiological effects that have been identified by
Cayce and observed clinically? Prostaglandins play key roles in regulating cell division
in the body, including B- and T-lymphocytes, and therefore are involved in the immune
response.
In addition to the similarity of their effects, their chemical structure is similar. Is it
possible that the body’s production of prostaglandins can be stimulated by castor oil?
Some laboratory research points in this direction.
Another chemical link between castor oil and prostaglandins is seen in the ability of
castor oil to produce prostanoids, precursors to prostaglandins. This suggests that
castor oil may act as a biochemical precursor of prostaglandins. But more research is
needed, not only to document the potential effect of castor oil pack therapy on
chronically ill persons but also to test the other possible effects suggested in the Cayce
readings and found in the clinical experience of the A.R.E. Clinic.
Our next step is to test the effects on people suffering from chronic active hepatitis, a
serious liver disease that is considered unresponsive to conventional medical treatment.
The subjects will receive castor oil packs for at least two months, and the study will
include the same immune system tests as the initial study for purposes of comparison.
In addition, liver function tests will also be conducted in order to evaluate potential
improvement in the condition of the liver.
This phase of our research may take longer due to the need to raise sufficient
funding, estimated at $100,000. The preliminary results, however, more than justify this
investment in understanding the beneficial nature of the humble castor oil pack.
Through the pioneering work of the McGareys, we have obtained extensive clinical
evidence of the cost-effectiveness of this therapy. Indeed, the castor oil pack is a $10-
a-year immune system booster. It has a great potential for persons throughout the
world who cannot afford expensive modern health care, as well as for those who can.

But now, finally, there is more than faith or personal experience to justify one’s
confidence that castor oil is as effective as Edgar Cayce claimed. We now have
scientific evidence to document its therapeutic effects, and more is on its way.

Clay Packs
The clay pack is used as an anti-inflammatory and it draws out toxins through the
skin into the clay. It is excellent for all bites such as mosquito or spider bites. It is also good
for rheumatoid arthritis at the painful joints, boils, cysts, etc. Remember to discard the clay
pack after each use. Each pack should only be used one time.
The castor oil pack increases circulation in the area and stimulates the lymphatic
system to carry off toxins. It is excellent for organ pain, especially liver, pancreas and
kidney pain. It aids in detoxification and gives relief.
Clay
Clay is useful in alleviating pain, dealing with toxicity, managing flare-ups and
healing crises, and dealing with gastro-intestinal problems. It is a very effective first line
treatment for patients doing the Gerson Therapy.
Clay packs are used to alleviate headaches, hot inflammatory pain, joint pain,
arthritis, reduce tumor inflammation and areas of fluid retention caused by trauma, infection
or generalized edema. They absorb toxins and alleviate congestion and spasm in the deep
organs of the liver, gall bladder, and kidneys. They also help relieve muscle spasms. They
are useful in bone rebuilding, for stomach pains and diarrhea.
Internal use
Only a small amount is necessary, it acts by radiations. It aids the organism to fix
the missing elements. When used at breakfast or in the evening the clay will have a
different effect. If it causes constipation take it several times during the day between meals.
Oral dose: 1 teaspoon for adults; ½ teaspoon for children of Green clay/Ion Min in half glass
of unboiled distilled water.
124
Gerson Institute Gerson Basics
Use wooden spoon/spatula to mix 12 hours beforehand and leave to settle. Take on rising
or going to bed or an hour before eating. One could start with drinking only the water and
build up to mixing and drinking the clay as well.
Patients on the Gerson Therapy are advised to take ¼ teaspoon of clay with ¼
teaspoon of Potassium gluconate in peppermint tea to relieve diarrhea. Clay for internal use
is usually the Montmorillonite clay, not sea clay.

Gerson Institute Gerson Basics
I see that the Gerson Institute is located in San Diego. Do you have a clinic there where
I can go for treatment?
No, the Gerson Institute in San Diego is the office for our non-profit organization,
not a treatment center.
What is the Charlotte Gerson Health Restoration Center in San Diego? Can I go there for
treatment instead of Mexico or Hungary?
The Charlotte Gerson Health Restoration Center is not a clinic, it is a limited
program that we hold every one or two months for healthy people to come and
undergo a modified version of the Gerson Therapy for six days. As it is not a
treatment center, we cannot accept guests who are sick. If you are ill and wish
to begin the Gerson Therapy at a treatment center, please apply to either our
clinic in Mexico or Hungary.
When will I start to see results? Will a two-week stay at the clinic be enough to rid me of
my illness completely?
When a patient goes to one of our clinics, they are merely beginning the healing
process. A cancer patient will need to follow the Gerson Therapy for at
least two years after leaving the clinic. Most patients will go through their
first healing reaction within the first week or two, and will begin to see changes in
their blood work in that time period as well. There is no set timeline for when a
patient will begin to see physical changes such as tumor reduction or
elimination—healing is a very individual process, and there are many variables
that affect how long it can take for a patient to heal (i.e., diet, diagnosis, whether
or not a patient has already been through conventional treatments, etc).
What happens after I leave the clinic? Do I need to return to the clinic for check-ups?
After you leave the clinic, you will go home and continue the Gerson Therapy
protocol as prescribed by the clinic doctors. Most patients do not return to the
clinic, unless they opt to return for another stay there. Patients do follow-up
consultations with the doctors by phone, by sending their blood work and medical
records for the doctors to review, so that the doctors can track their progress and
adjust the protocol as needed.
139
Gerson Institute Gerson Basics
I am currently undergoing chemotherapy. Can I still apply to the clinic while I am taking
chemo?
No. Chemotherapy works in conflict with the Gerson Therapy, which detoxifies
the body in order to restore the body’s natural defenses. If a patient has
undergone chemotherapy, they need to wait a minimum of 2-3 weeks
after their last treatment to begin the Gerson Therapy. At that point, they
need to begin the Gerson Therapy at a modified level, so that they do not
detoxify too quickly. For this reason, we recommend that any patient pre-treated
with chemotherapy begin the Gerson Therapy at a clinic, so that they can be
safely and gradually introduced to the therapy under a doctor’s supervision.
I’m very interested in undergoing the Gerson Therapy, but I simply can’t afford to go to
a clinic. What other options do I have?
The Gerson Therapy can be self-administered entirely from home, using
the instructions in the Home Package, the set of books and DVDs that contain the
full instructions for the Gerson Therapy. The Home Package is available through
our online store, www.gerson.org/store. Ideally, a patient undergoing the
Gerson Therapy from home would see a licensed Gerson practitioner, but if there
are no local Gerson doctors, it is best to follow up with a naturopath, or a doctor
friendly to and familiar with natural healing. A patient doing the therapy from
home can also look into hiring a certified Gerson Home Set-up Trainer or
attending one of our Gerson Basics Workshops to learn the basics of the Gerson
Therapy so that they can practice it from home.
I am a doctor, and I would like to open up a new Gerson clinic. How can I begin that
process?
To open a licensed Gerson treatment center, there are many considerations and
steps to be made. First, and most importantly, you must have at least one
licensed Gerson practitioner. We provide our Gerson Therapy Practitioner
Training Program (link) to train and license doctors in the Gerson Therapy. Once
you have a doctor that is fully certified as a Gerson practitioner, you can begin
the process of applying to open a Gerson clinic. For more questions about
opening clinics, email [email protected].
140
Gerson Institute Gerson Basics
Do I need to come in for a consultation or appointment first? Should I come to the clinic
or the Gerson Institute to apply in person?
No, the clinic doctors do a thorough evaluation of each individual case to
determine if the patient is a good candidate for the Gerson Therapy. The
application is sent by fax or by mail—there is no need to apply in person or come
in for an appointment.
How quickly can I be admitted to a treatment center? Is there a long waiting list?
You must go through the application process and be accepted as a
patient before we can reserve you a room and arrange for your arrival.
It usually takes about 10 days from the time a patient is accepted to the time
they can arrive to check in at the clinic. If the clinic is very busy, it may take 3-4
weeks for a new patient to be admitted.
Does the clinic accept any kind of payment plans? Can I pay in installments, or use a
credit card?
No, the fees for the clinic can only be accepted upfront, prior to the
patient’s arrival at the clinic. The clinic is usually not covered by insurance or
Medicare.
What is the role of the companion? Will they undergo the Gerson Therapy as well?
The companion comes to support the patient, and to learn the Gerson Therapy,
so that they can assist the patient in continuing to implement the Gerson Therapy
once they return home. The companion is provided all the Gerson meals and
some juices during the day, but as they are not patients, they do not undergo the
full Gerson protocol.

How do I get to the clinic? Do I fly into Tijuana or San Diego? Do I need a passport to
enter the country
Most patients fly in to San Diego International Airport, as it is the major airport
closest to the clinic. There is an independent shuttle service that can take you
from San Diego down to the clinic’s front door. It is necessary to have a passport
in order to re-enter the United States. Please, do not make any travel
arrangements until you have been accepted as a patient.
Is Tijuana safe? I’ve heard a lot of bad reports in the news about the drug wars down in
Mexico.
While we are aware of people’s safety concerns regarding Tijuana, our patients
have never had any troubles in that regard, and we take every precaution to
ensure our patients’ security. A shuttle service takes patients directly from San
Diego to the clinic’s front door. CNV is located in a safe, suburban neighborhood
by the beach. Charlotte Gerson herself drives down to Tijuana every week to
visit patients at the clinic!
