familiar with the way the order system works in the
establishment you are working at. Guests may place a room
service order by completing a doorknob menu or through a
telephone call. Some establishment now also use a
computerized system in order taking.

A doorknob menu is a menu card hung behind the


doorknob of a room or a suite. This menu card may
comprise a selection of dishes and beverages and
their rates or prices. The following are the
information that you get from the doorknob menu
1.The number of pax or the number of guests
who will be eating.
2. Room number
3. Name of guests
4. Menu items
5. The quantity of each item
6. Price for each item
7. Preferred serving time
8. Information on the delivery charge
9. Special instructions
10. Signature
Taking Orders from a Doorknob Menu

Typically, an assigned room service staff will be tasked to collect all


doorknob menu orders according to the schedule. For breakfast menus,
doorknob menu cards are collected at night.

The steps in taking orders from the doorknob menu are as follows:
1. Collect the doorknob menu orders floor by floor preferably starting from
the top floor downward. Write down the room number on each doorknob
menu order.

2. Post down orders at the point of sale terminal to prepare the bill.

3. Sort out all room service orders according to the time of service starting
from the earliest one. Give priority to VIP guests.

4. Estimate the time required for the preparation of the order.

5. In case of a delivery delay, politely inform the concerned guest.

Room service orders can be distributed manually or


electronically. Some hospitality establishments operate an
electronic room service order-taking system where
information is fed into a computer or a cash register which
produces the printed bill. At the same time, the order is
electronically transferred to the kitchen for preparation.

Meanwhile, other establishments use a manual system. This


involves a docket or an order slip filled up manually and then
transferred to the kitchen in the same way as a manual food
order docket is processed from the dining room or the
restaurant.
Once taken, the orders should be immediately transferred to the
appropriate locations such as the following:

1. Wine store or the bar

2. Pantry for room service

3. Kitchen

4. Bistro or cafe

5. Other departments (Concierge, housekeeping and sales and


marketing)
Preparing the Tray and Trolley for
Room Service

When preparing the tray and the trolley for room service, only
the necessary tableware and condiments are placed together
with the food order. The setup of trolleys and trays may also
include a vase or floral decorations and tray cards which can be
used for promotions and in giving information to guests
regarding the pickup of soiled tableware. 
It is advisable to use trays for orders of one or two guests only.
When the order includes menu items for three or more guests, it
is better to use a trolley. However, some establishment may
require using the trolley even for the order of a single guest.
