Introduction:
Locust beans, scientifically known as Parkia biglobosa, are leguminous pods harvested
from the African locust bean tree (Adeyemi et al., 2013). Indigenous to West Africa,
particularly Nigeria, Ghana, and Senegal, locust beans have been integral to the region's
culture and cuisine for centuries (Nwokocha et al., 2012).
