Not long ago, she let me borrow her desserts recipe folder. And I, of course, was thrilled to look through it! Because people's personal folders are the absolute best recipe collections, holding all their favorites, tried-and-true.
Tucked into the very bottom of a plastic sleeve in my friend's folder, hand-scribbled on a piece of old accountant's paper, with just the ingredients list and a couple of cryptic direction notes, was the recipe for this scrumptious strawberry cobbler. And I had to try it. -- Because anything cryptically scribbled on an old sheet of grab-whatever-you-have paper simply has to be good.
And, oh it is good, for sure. In fact, this Strawberry Cobbler may just be one of my absolute favorite ways to enjoy those fresh spring field-ripened strawberries we love so much.
Fresh Strawberry Cobbler Ingredients:
It takes just 5 simple ingredients to make this totally-scrumptious fresh Strawberry Cobbler. To whip up a pan, you'll need:
- Fresh strawberries - Fresh berries straight from the field are phenomenal, but strawberries from the grocery store are fabulous in this, too!
- Granulated sugar - Used to sweeten both the berries and the cobbler batter.
- Butter - Dotted on top of the sliced strawberries, butter adds nice richness to the cobbler.
- Self-rising flour - If you don't have self-rising flour on hand, substitute 1 cup all-purpose flour + 1 & 1/2 teaspoons baking powder + 1/4 teaspoon salt, whisked together to combine.
- Milk - Use whole or 2% milk for the best result; we do not recommend skim milk for this recipe.
How to Make Fresh Strawberry Cobbler:
To get all this scrumptious strawberry cobbler deliciousness started, simply thickly slice some fresh strawberries into a baking dish, and toss them with a bit of granulated sugar.
Next dot the cut strawberries all over with little pieces of softened butter.
Then pop the pan in the oven and give it a good bake until the cobbler is lightly golden-browned and the berries are juicy and bubbly. The batter will bake up in irregular shaped bits all cobbled together, just as it should be, with those wonderfully juicy berries poking up all through it.

Scrumptious (5-Ingredient) Strawberry Cobbler

Ingredients
- 1 pint fresh strawberries
- 2 T. butter, softened
- 1 c. self-rising flour
- 3/4 c. + 3 T. granulated sugar
- 1 c. milk
Instructions
- Clean strawberries and slice into thick slices (for small berries, cut them in half).
- Place sliced strawberries in a 9x9-inch baking dish coated with non-stick cooking spray. Sprinkle sliced strawberries with the 3 tablespoons of granulated sugar, toss to coat with sugar, and dot berries with small pieces of the softened butter.
- In a bowl, mix self-rising flour, 3/4 cups of granulated sugar, and milk until just combined (seriously, mix until the flour has just barely gotten all wet ~ if you mix it too much, the cobbler will turn out a tad rubbery). Pour batter over strawberries.
- Bake at 350℉ for 1 hour until lightly golden browned and the berries are bubbly.

ReplyDeleteHi, Kate! Yes, you can 'make your own' self-rising flour. According to the source I looked at, for 1 cup of all-purpose flour, add 1 1/3 tsp. baking powder and 1/3 tsp. salt ... then you'll have a similar mix to self-rising flour. Can you use frozen strawberries instead of fresh in the strawberry cobbler?

Our son was also born in Jacksonville. We were stationed there again from 1987-1990. Our daughter was born in Beaufort, S.C. in 1982, when my husband was a Drill Instructor at Parris Island.
