Idiyappam also referred to as ‘Nool Puttu’ are string hoppers that are basically considered a reminisce of sevai or seviya prepared primarily with rice flour. For all the weight watchers and food enthusiasts out there, you can find great alternatives for this recipe.
Ragi or finger millet flour is incorporated into the idiyappam recipe along with rice flour to elevate the nutrition profile of this South Indian dish. For soft, healthy and smooth idiyappam, roasting ragi flour before preparing the dish is equally important.

Prepared with a blend of simple ingredients, follow these simple steps and enjoy!
Ingredients
  • 1 cup ragi flour
  • ¼ cup rice flour
  • 2 cups water
  • 1 tsp sesame oil
  • Salt to taste
For the chutney
  • 1 cup grated fresh coconut
  • 6 green chillies
  • 2 tsp tamarind pulp
  • Handful of Curry leaves
For the seasoning
  • 1 tsp mustard seeds
  • 1 tsp oil
Method
  • To prepare ragi idiyappam at home, heat water in a kadai and bring it to a rolling boil. Stir ragi flour in kadai and allow it to roast for 5-7 minutes. Stir rice flour and salt into the mixture and mix everything well.
  • Pour hot water over the mixture and mix everything well. Once the mixture starts coming together, cover the bowl with a lid and let it sit for 15 minutes. Add a tsp of oil after 15 minutes and prepare a soft dough.
  • In the meantime, prepare the chutney by adding chutney ingredients including freshly grated coconut, green chillies, tamarind pulp, green chillies, water and salt in a mixer blender. Prepare a smooth puree and add water for an even consistency.
  • For the seasoning, heat oil and stor mustard seeds into it. Pour the crackling mustard seeds over the chutney and mix everything well. Now, for the perfect idiyappam, take a string hopper and fill it with the finger millet dough. Spin the spring maker, so that you get the threads over it. Steam it for around 8-10 minutes and serve with prepared chutney or tomato curry for a flavourful taste.
