Shireen JamoojiAlia Bhatt was once nicknamed aloo, and as it happens, it’s her favourite vegetable! Her go-to recipe is a simple aloo fry which their family often eats on her father’s birthday and was based on her grandmother’s recipe. Here’s an easy way to recreate the dish.

4 medium Potatoes, 1 ½ tbsp Red chilli powder, 3 cloves Garlic, ¼ tbsp Turmeric powder, Salt to taste, 2 tbsp Oil, ½ tbsp Mustard seeds, ½ tbsp Cumin seeds (Jeera), 2 dry Red chillies, 6 Curry leaves

Wash the potatoes thoroughly, peel, and cut into small pieces. Soak the pieces in water for 15-20 minutes.

Drain the water and spread the potato pieces on a kitchen towel to remove excess moisture.

Heat 2 tbsp oil in a pan. Once hot, add mustard seeds, cumin seeds, and dry red chillies. Stir until they start to splutter.

Add curry leaves and stir until they become crisp.

Add the potato pieces, turmeric powder, and salt. Stir gently and cook covered on a low flame for 8-10 minutes, stirring occasionally to prevent sticking.

In a mortar and pestle, crush the garlic and red chilli powder to form a coarse paste. Set aside.

Once the potatoes are soft, add the garlic-chilli paste. Stir on high flame until well mixed. Turn off the heat, cover with a lid, and let it sit for 5 minutes.
