Almond-Sunflower Seed Protein Cookies

Ingredients
- 1/2 c.
protein powder
- 3/4 c.
oat flour
- 1 1/4 pt.
almond meal
- 1/2 tsp.
baking soda
- 1/4 tsp.
salt
- 6 Tbsp.
butter (3/4 stick), melted and cooled
- 1/4 c.
brown sugar
- 1/4 c.
sugar
- 1/4 c.
almond butter
- 2
large eggs
- 1 tsp.
vanilla extract
- 1 1/2 c.
natural almonds, sliced
- 1 c.
sunflower seeds
Directions
- Step 1Preheat oven to 350°F.
- Step 2In a medium bowl, sift together protein powder, oat flour, almond meal, baking soda and salt; set aside.
- Step 3In a large bowl, whisk together melted butter, brown sugar, sugar and almond butter. Whisk in the eggs, one at a time, then vanilla. Add flour mixture and mix until fully incorporated.
- Step 4Fold in almonds and sunflower seeds. Let dough sit to hydrate, covered with plastic wrap at room temp for 10 minutes.
- Step 5Scoop ¼ cup mounds, Space evenly on parchment lined sheet trays, and press tops of cookies down to form flattened discs and bake for 10 minutes. Rotate the pan and bake until set around the edges, about 3 minutes more.
