In minesweeper, the number indicates how many MINES are in the 8 possible adjacent squares (including diagonals) to the square given. The total number of mines is not known. The squares with numbers have no mines on them by definition.
This means you can use the hyphen/- as a known empty square, and the letter M to represent a mine you know for sure.
