  1. 7 Brinjal sliced
  2. 1/2 Onion chopped
  3. 1 Tomato chopped
  4. 1 Chillies sliced
  5. 3 Curry leaves strings
  6. 1 Ginger small piece crushed
  7. 6 Garlic cloves crushed
  8. 1 1/2 tbsp Chilli powder
  9. 1 1/2 tbsp Coriander powder
  10. 1 tbsp Turmeric
  11. 1 tbsp Cumin powder
  12. 1/2 tsp Asafoetida
  13. 1/2 tsp Mustard
  14. 5 tbsp Oil
  15. As needed Tamarind a small gooseberry size (juice)
  16. as per taste Salt

Cooking Instructions

    Let's put a pan in the stove once the pan is well heated we can pour the oil in it.once the oil is well heated we can add some chopped brinjal in it fry it.

    After allthe brinjal fried put mustard in it.After the mustard is all crackedthen add the crushed ginger and garlic and stir well. Then we can add coriander powder stir well then add chilli powder stir well then add turmeric powder cumin powder, and asafoetida powder stir well.

    Then add chopped onion,chillies and curry leaves stir well and add tamarind juice, half cup of water and salt to taste and add chopped tomatoes and cook it for 15 minutes

    After 15 minutes we can add fried brinjal in it and cook for another 5 minutes and turn off the stove and use the curry
