Palada Payasam or rice kheer is a traditional dessert made in Kerala style with small rice grains known as 'Ada'. In Odisha also we use scented small grain rice called 'Pimpudibasa' to make kheer on special occasions and celebrations.

Ingredients

40 minutes
4-6 servings
  1. 4 cups Amul full fat milk
  2. 1/4 cup small grain rice
  3. 2 Tbsp sugar
  4. 2 Tbsp jaggery
  5. 1 pinch salt
  6. 1/4 Tsp cardamom powder
  7. 1 Tsp ghee
  8. 1 pinch saffron strands
  9. 2 raisins and cashew nuts
  10. 1 Tbsp chopped dry fruits

Cooking Instructions

    Wash the Ada rice 2-3 tines and soak in wan water for 30 minutes. Decant the water.

    Take the milk in a wide pan. Allow to boil. Add rice and saffron strands.

    When milk reduces and sugar, jaggery, salt and cardamom powder and ghee.

    Mix well. Serve the Palada Payasam, garnishing with fried cashew, raisins and dry fruits.
