Steam the crab with ginger and spring onion 12 mins. Put aside.

Heat oil and butter. Add garlic, curry leaves and chilli until fragrant.

Add evaporated milk, salt, pepper, mashed egg yolk. Stir and cook until the sauce gets thickened.

Add the crab and toss well to coat. Ready to serve.
