Love this recipe, easy to make and inexpensive. I played around with this recipe a lot. I've used different types of cheeses , made them with just cheese. You can stack them as high as you like even use more sauce or less. Whatever your preference is make it your own. Hope you enjoy!

Ingredients

  1. 4 chicken breasts
  2. 10 corn tortillas
  3. 1 onion, chopped( reserve 1/4 for garnish if desired)
  4. 1/2 chicken bouillon (cubes or jar)
  5. 1 jalapeño diced
  6. 1/2 cup vegetable oil (whatever oil you prefer (reserve tablespoon for chicken)
  7. 2 8oz cans of tomato sauce
  8. 1 black pepper ( to taste)
  9. 1 onion powder ( to taste)
  10. 1/2 tbsp salt
  11. 1 shredded cheese (I use Muenster you can use whatever you like, pre shredded works fine)

    Fry tortillas in oil until edges are crispy . Pat excess oil with paper towel or let drain. (Tortillas should still be ply able.

    Saute chicken breast in oil for about 10 to 12 min or until cooked through. Place jalapeño and onion in at about 8 min mark . Remove chicken and let rest for about 10 min. When cooled slice, chop, or shred chicken and set aside.

    To sauce pan add tomatoe sauce onion powder,black pepper, Chicken buillon (to taste about half) . Let sauce simmer on medium for 5min remove from heat.

    Pre heat oven to about 375 .In a baking dish place tortilla down and spoon two tablespoons of tomatoe sauce and spread until tortilla is completely covered. Place about a tablespoon of chicken on tortilla and sprinkle with cheese (as much as you like). Repeat process layer tortilla, sauce, chicken, cheese. Place in oven for about 10 to 15 min until cheese is melted remove from oven and serve.
