This PR updates the OpenTelemetry Astronomy Shop application to the latest v2. However, there still seems to be a few in-flight PRs to squash a few bugs. So, I will leave this PR as a draft until those have been merged. I also still need to do some testing to ensure that the
flagdfaults are still working as expected.
