update rustc_driver examples

It's been a while since the rustc driver examples were updated and they no longer compile because new fields were added to rustc_interface::config::Config, so I thought I'd submit a PR to fix them up. Their values don't seem very important for the purposes of the specific examples so I just left them at their default value.

Hi, I couldn't run the example. I cloned the rust repository and specified the dependencies in Cargo.toml but when I try to run, It throws this error:

error[E0433]: failed to resolve: could not find `provider` in `fallback`
 --> rust/compiler/rustc_baked_icu_data/src/data/fallback/likelysubtags_v1/mod.rs:2:61
