広隆寺、蚕ノ社に続き嵐山へ
竹林はこんな暑い京都でも清涼感を与えてくれます
ひとしきり歩いたところでお腹が空いたのでお昼に
通りすがりのこちらのお店へ入りました
お蕎麦屋さんの方は満席だったため併設されている豆腐料理屋さんに通されカウンターに着座
僕は天ぷら蕎麦と生ビールを注文しました
京都の水は超軟水でミネラルを含まず無味無臭
だから素材の味を楽しむことができ薄味になったとつい最近知りました
対して関東は硬水でミネラルの味が強いため負けないように味を濃くするということ、そのため発祥は関西ながら千葉で醤油が発達した、ということも
出てきた蕎麦もツユは少し透明感のあるもので薄味
水の話を聞いたからか薄味のお蕎麦もいつもより美味しく感じられました
別皿で出てきた2尾の海老天は大きくはないのですがうまく揚がっていて美味
想像してた程高くはなかった点も嬉しいです
やっぱり京都はいいですね ^_^
