I got this recipie from my aunt. One of the best frozen pies, period!
Melt margarine in large skillet over medium heat, adding pecans and coconut. Cook, stirring frequently for 10-15 minutes until the coconut is no longer white and has become a deep golden brown.
Combine cream cheese and condensed milk, beating until smooth then fold in Cool Whip. Layer 1/4 of cream cheese mixture into each pie shell. Sprinkle with coconut-pecan mixture then drizzle caramel topping over the top. Repeat layers ending with coconut-caramel on top.
Cover with foil and freeze at least four hours or overnight. Before serving, let the pies stand at room temerature 8-10 minutes after removing from the freezer. Always keep frozen until ready to serve.
You may think you're burning the coconut mixture. Trust me, you're not. Just make sure there is no more white left in the coconut. Gets nice and crunchy!
