In a food processor, combine onions, green chillies, garlic and ginger, coriander and cumin seeds, red chilli powder and a splash of water until it becomes a thick paste.
In hot oil (in a wok) cook shrimp on high heat for 1 to 2 minutes until cooked. Remove shrimp from oil. Heat more oil in wok and on medium high heat, add bay leaves and cumin seeds. Then add turmeric and red chilli powder. Add the paste from the food processor and cook for several minutes until oil separates. Add diced tomatoes and reduce heat. Cook for 3 minutes until tomatoes are soft and cooked. Add 1/2 - 1 cup water. Add cooked shrimp, and salt to taste. Cook on medium heat fit about 5 minutes. Add a dash of garam masala, and serve with fresh cilantro.
