Aji Amarillo Chilli Seeds
Aji (A-hee) Amarillo Chilli Seeds. The Aji Amarillo (C. Baccatum) is a wonderful Baccatum variety that originates from Peru. It is a huuuge producer of large, glorious golden chillies. Not to be confused with the Aji Golden! The Aji Amarillo is a variety in its own right. In spanish "Amarillo" mean "yellow" - but in reality these pods go a orange colour when fully ripe. So this does cause confusion, but they are in actual fact orange when fully ripe. This having been said, this variety just grows - and grows and grows and grows. Our plant grew to around 1,5m in height - some growers have had plants larger. It does depend on your growing conditions. This plant will need support as it grows. The plant structure is bushy and wispy, so pods do tend to make the plant droop to thr ground. This plant is also a massive producer of pods, so this will have the plant hanging on the ground. And if that wasn't enough, the pods are huge - so staking is a certainty with this variety! As we have found with most Baccatums, they do take a looooong time to ripen. Pods change from light green to orange when fully ripe. This can take most of the grow season - so an early start in the season is recommended. The pods themselves are pointy and elongated with crooked pods. An attractive chilli and one that is very popular is Peruvian cuisine - in fact, it was named the most important ingredient in Peruvian cuisine. It is used fresh, in sauces, made into paste, used in cooking and also as a powder. This is a very versatile chilli and has a very subtle sweet, vegetative - almost carrot flavour about them. The pods can grow to about 8 - 9 inches in length, are thick skinned, crisp and juicy. Heat and burn are subtle and well suited to cooking applications where just a little kick is required. This chilli would be great for chicken and fish dishes as well as soups.
