  • Guinness Beer Bread

    “There are a few recipes for beer bread out there, but none as simple (and tasty!) as this one. You can even mix it in the baking pan for easy cleanup. This is sensational when served with soups or just as a snack, but don't expect it to be around very long when your family gets a taste of it!” Guinness Beer Bread Serves - 6-8 Prep Time – 5 Minutes Cook Time – 1Hour 3 Minutes Ingredients: 3 cups flour, sifted. 3 teaspoons baking powder (omit if using Self-Rising Flour) 1 teaspoon salt (omit if using Self-Rising Flour) 1/4 cup sugar 1 (12 ounce) can Guinness beer - Guinness will give you a richer color bread due to the caramel color of the stout. But you can use whatever you have on hand or your favorite works great too!) 1/2 cup melted butter (1/4 cup will do just fine) Instructions: Preheat oven to 375°F. Mix dry ingredients and beer. Pour into a greased loaf pan, pour melted butter over mixture. Bake 1 hour, remove from pan and cool for at least 15 minutes. Recipe Notes: This recipe makes a very hearty bread with a crunchy, buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top. Variations: Garlic & Cheddar: add a cup of shredded cheese and two teaspoons of garlic powder for cheddar biscuit style bread. Scone: 2 cups of fresh blueberries, an additional 3/4 cup of sugar, (using 1/4 cup to sprinkle over top of melted butter) and 1 teaspoon vanilla extract for a scone style loaf bread. "This delicious loaf of bread is so easy to make and makes a great addition to any meal. Serve warm with a pat of butter, or slice and spread your favorite jam for breakfast. " Leprechaun Mint Coin Cookies Servings – 24 Prep Time – 20 Minutes Cook Time – 10 Minutes Ingredients: 2 1/4 cups all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup unsalted butter, softened 3/4 cup light brown sugar 3/4 cup white sugar 2 large egg 1 1/2 teaspoons vanilla extract 1/2 teaspoon peppermint extract 20 drops green food coloring 2 cups chocolate chips, or mint chocolate chips 1 cup chopped walnuts, or your favorite nuts optional Instructions: Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Mix flour, baking powder, baking soda, and salt together in a bowl. Cream butter, brown sugar, and white sugar in a large bowl with an electric mixer. Add egg, vanilla extract, mint extract and food coloring, and mix until well combined. Gradually add flour mixture to the wet ingredient and continue beating until all the green color is uniformly distributed. Mix in about 1 3/4 cup of the chips or candies and chopped nuts. Batter will be stiff. Scoop tablespoons of dough and roll into balls. Place on the prepared cookie sheets and decorate by gently pressing remaining chips or candies onto the tops of the balls. Years to perfect, making changes every time I baked a batch over the years. There are multiple ingredients and steps to this perfect recipe and I will reveal the secrets! These have the absolute chewiest chocolate chip cookie texture. Many tweaks to "The One With Phoebe's Cookies - " Nesele Toulouse " 🤭 (WYKYK) over the years I have finally mastered the best chocolate chip cookies ever!” 🍪 Servings – 16 XL or 20 large cookies Prep Time – 10 Minutes Cook Time - 14 Minutes Ingredients: 2 1/4 cups all-purpose flour, spooned & leveled 1 teaspoon baking soda 1 3/4 teaspoons cornstarch 3/4 teaspoon salt 1 1/2 sticks unsalted butter or margarine, melted 3/4 cup packed light or dark brown sugar 1/2 cup granulated sugar 1 large egg & 1 egg yolk 2 1/2 teaspoons pure vanilla extract 1 1/4 cups semi-sweet chocolate chips, chocolate chunks, or combination of both 1/2 to 1 cup chopped walnuts, optional - amount depends on your individual taste, I add 3/4 cup. Instructions: Whisk the flour, baking soda, cornstarch, and salt together in a large bowl. This will sift and incorporate all the ingredients together. You can use a fork if you do not have a whisk. Set aside. In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar together until no brown sugar lumps remain. Whisk in the egg and yolk; then whisk in the vanilla extract. The mixture will be thinner than you are use to. Pour in the combined dry ingredients and mix with a large spoon or rubber spatula. The dough will be very soft at first, then thicken, and may seem a little crumbly; this is perfect. Fold in the chocolate chips/chunks and optional walnuts. The chocolate chips may not stick to the dough because of the melted butter or margarine, do your best to combine them. I promise... it will all come together. This was part of my trial and error process. You can push them into the balls of dough as you roll them once the dough chills. Cover the dough tightly and chill in the refrigerator for at least 2–3 hours or up to 3 days, if you don't plan on baking them right away. (If I do this... the dough will be gone before I get to bake them... Yeah, not supposed to eat raw dough... blah blah blah... I'm still alive and healthy over all these years!... Just saying...) 🤷🏻‍♀️🤭🤣 * Chilling the dough causes less spreading and is the most super duper crucial part of the making of the chewy and soft part of these cookies. Take the dough out of the refrigerator and allow it to slightly soften at room temperature for about 5-10 minutes. Preheat oven to 325°F. Line large baking sheets with parchment paper or silicone baking mats. Set aside. Using a tablespoon measuring spoon (I personally love using ice cream scoops with the releaser in them.. Makes for easier and proportioned cookies.) measure 3 Tablespoons of dough. Roll into a ball, making the shape rather taller than wide—almost like a tubular shape. Do NOT flatten or pat down... I know we all have the tendancies to want to do this for some reason! (Like some will smash down a hamburger before eating it) his will ensure the cookies bake up thicker for that chewy part we want. Repeat with remaining dough. Place 6-8 balls of dough onto cookie sheet. Bake the cookies for 14 minutes (15-16 for XL) or until the edges are very lightly browned. The centers will look soft and almost undercooked, but the cookies will continue to set as they cool. Cool on the baking sheet for 15 minutes. You can press in a few extra chocolate chips onto the tops of the warm cookies. This just gives them the WOW factor!... ok and of coarse more chocolate... Who doesn't like more chocolate right?... Am I right? After 15 minutes of cooling on the baking sheet, transfer cookies to a wire rack to cool completely. Let them sit without touching for at least 20 minutes if you can help yourself... trust me... I always end up with what I call "pizza mouth" = which is burning the roof of your mouth with the hot cheese and sauce.. in this case it would be a hot chocolate chip! WHY? Because I have to eat one! ok...ok... two! 🤭🤣🤪🫣🍪 Cookies stay fresh covered at room temperature for up to 1 week. Notes: Want to freeze and make the dough ahead of time? You can make the cookie dough and chill it in the refrigerator for up to 3 days. Allow it to come to room temperature for 15 minutes then continue with baking process. Baked cookies freeze well for up to 3 months. (They never last that long for me once I bake them!) 🐽🤭 Unbaked cookie dough balls freeze well for up to 3 months. Bake frozen cookie dough balls for an extra minute or two, no need to thaw. These are great to have on hand when unexpected guests come over. You can pop them in the over really quick and have fresh cookies at your finger tips! Can I add different add-ins?   Of course you can! Like I always say.... Play with your food! Just keep the total amount of chosen add-ins around 1/2 - 1 cup, you can add whatever your heart desires. Try other chopped nuts such as pecans, peanuts, or even macadamia nuts, M&Ms, other chips like white chocolate chips, cream cheese chips, butterscotch or even mint chips, dried cranberries or other chopped fruits you like, chopped up heath bars, or peanut butter cups, etc. I personally like to add an added 1/2 cup of mini M&M's or Reese's Pieces. You can even add 1/2 cup sprinkles to give them color for a fun occasion. ( Great for sending a tray with the kiddos for their Birthday to share with the class... Just leave out any nuts if doing this.) And FINALLY... The SECRETS you have all been waiting for... Pièce de résistance... DUN DUN.... 🤣 An extra egg yolk and melted butter/margarine increases the chewy factor. More brown sugar than white sugar gives additional moisture from the molasses for a softer cookie, and rich coloring. Cornstarch produces a soft and thick cookies Chilling the dough results in a thicker cookie. This is SUPER important! - I have finally learned this over the years.. I was ALWAYS impatient and wanted the cookies NOW.. Which always ended up in a melted looking crispy, cunchy, brittle cookie. Hey they were still good... just crmpled over ice cream! And one of the best ways to do that is with a dessert or special treat! Here are a few tips: Don’t stress if you don’t have time for dessert! There are great ideas in your local grocery store, but other store-bought ideas include: Ice cream cake, frozen pies, cookies, and of course cupcakes. Another easy dessert idea my homemade Cookies and Cream Dip , cream cheese fruit dip or cannoli dip and have star shaped fruits, marshmallows, mini cookies and more to dip in. Use mason jars as glasses for Orange Iced Tea , Party Punch or ice cold beers. ( You can even put them in the freezer before hand for a few hours for a nice touch!) Sprinkle the table with firework confetti, party poppers, and or red, white and blue candies. You can even add individually wrapped Cake Pops to each plate or spread on the table as a treat for after dinner. Make sugar cookies for a treat and let the kids frost and decorate them as a activity to keep them busy. Dress it up by putting piece of tissue paper, or holiday/occasion inspired napkin, in the box before placing the cookies inside and finish it off with a pretty bow of ribbon or twine. Wrap in Cellophane: On a cute ceramic plate (great dollar store find) and then cover with plastic wrap or doily. Stack cookies in a pyramid form. Place the plate in the center of a piece of cellophane, bring all the sides up over the plate and gather them together. Tie with ribbon, tulle or twine. Bake the cookies the same size and stack them in a large mouth mason jar. Cover the lid, or with fabric or paper, or wrap jar in a pretty kitchen towel. Tie a ribbon around the top and add a cute tag. Save those Pringles cans! Wash and dry, then wrap the can with decorative paper (Check out my firecraker container). You can make fire Tube bags make the perfect pretty cookie packages as well as individually wrapping each cake pop and tying off with a ribbon. Stack your cookies, since the top closed and tie with a ribbon and personalized tag. A brown lunch bag is pretty in its simplicity. Stack cookies in a brown lunch bag. Fold the top over and punch two holes. Thread a simple ribbon through, tulle or raffia also work, and tie the top closed. Add a cute tag to the front of the bag. There’s a mix of classic and unique main dishes , side dishes , and desserts for every skill level and taste preference! Gift ideas. Some Dads love to grill but others may appreciate a break from the duty. Here are a few tips to help you step in: Take the meat out of the fridge 20-30 minutes before grilling. Create a chart that lays out what item will be grilled in what section, as well as how long each piece of meat will need to cook. Do not overlap the different types of food before or during grilling. Use a meat thermometer to test the temperature of each type of meat. (Be sure to clean it off with soapy water between uses so you don't cross contaminate.) It can be tempting to poke, prod, and flip the meat, but don’t. It would help if you only flipped it once. By doing so you allow each side to heat up enough to start forming a nice caramelized crust. Grilling vegetables takes a fraction of the time as the meat. Since meat needs to rest once it is done cooking, this is a perfect time to reduce the heat and grill up your veggies. If you add BBQ Sauce or other flavorful sauces too early, it just tends to char. Allow your meat to cook almost completely before coating it with the sauce. Allow meat to rest for a few minutes before cutting. This will hold in the juices so you don't loose all the flavor . I've have you covered for St. Patty's 2025! St. Patty's Dinner Ideas Are you in charge of this year's St. Patty's boiled dinner gathering? If so, here are some of my tips to help you plan this special menu. Appetizers: Plan for each guest to have 4-6 appetizers. Also, provide a variety of hot and cold, savory and sweet, light and heavy appetizers. Be sure to check out my collection of Appetizers . Sides: Plan to have 3-4 different sides for 6 or fewer guests. Add another side dish for every 5 more guests. Check here for my Side Dishes . Main Course: Plan to serve 6 ounces per person if you are serving one main dish. If you have more than one main course plan for 8 oz total per person. Check out my collection of Dinner Ideas . Preparations Prep ahead of time: Getting things done ahead of time will make the morning go more smoothly. Get your grocery shopping done early. Not only will you beat the crowds, but you don’t risk the store being out of a needed item. Clean the house! You can take a few days prior, and spot clean/tidy the day before. Decorate and set up tables the night before, so no worry of having to do it the day of. Prep any food items the day before. Like desserts can mostly be made ahead. Marinated items, ketchup them sit over night for maximum flavor. Veggie or Crudités, charcuterie boards, fruit trays can be made ahead, covered well with Saran Wrap. (Just don't add the crackers until last minute as they will get soggy!)
