Wow, what a niche this cookbook hits, and somehow hits perfectly !?

As the author rightly points out, their approach is a refreshing take on traditional recipes, mostly lightened up in flavor and fattiness to a point where I am really inspired to learn more about Polish cuisine by making both the recipes in this book and more traditional versions.

I also really appreciated the cultural background to many recipes, and how to make your own substitute ingredients without access to a Polish grocery store!
