Garrador
Garrador (Spanish for "clawer") are mini-bosses in Resident Evil 4 Remake. These enemies gained super human strength through Plaga experimentation, but become overly aggressive as a result and needed to be imprisoned.

You will first encounter Garrador in Chapter 7. These enemies are blind, but their sense of hearing is incredibly keen so they will hear any action you do such as running, shooting, or running into objects like the hanging chains. They will charge at the source of the sound and trash wildly, dealing massive damage.
However the Garrador can also be tricked by shooting loud objects like bells. Their weak point is the Plaga on their back. If you sneak up on a Garrador you can backstab them like other enemies, but your best bet is just to shoot the Plaga with a Rifle or Shotgun.
It is also worth noting Garradors can harm the other enemies with their indiscriminate slashing.
Garrador (Armored)
This Garrador is encountered in Chapter 10. It is a little stronger than the other Garrador and covered in armor, but the Plaga on the back is still exposed so the strategy remains the same.
Below you will find legacy information that pertains to Resident Evil 4 (2005)
There are four Garradors to fight in the game. The most important piece of information remember when dealing with a Garrador is that it's blind. Instead of using sight, it uses hearing to pick up on any sound you make. It'll hear you if you run and also if you shoot. Once it knows where it's going, it gets there fast, so make sure you're out of the way of its massive claws.
The first battle takes place in a big enough area to where there's not much of an issue, and there are a couple of bells to use to distract it. If you shoot a bell, the Garrador will go attack it, most likely by getting its claws stuck in the wall. This provides enough time for you to shoot the parasite on its back. It should only take about six shotgun blasts to defeat it.
The second fight is initiated when you wind up trapped in a cage and it drops down right by you. In such a confined space, the fight is very difficult. That's why you want to get out of the cage right away. All you have to do is shoot at the lock a few times with your shotgun and just put distance between you and the Garrador, while also watching out for monks. It's a good idea to get out of the room with the cage and go into the hall right outside of it because there's more space.
The final fight is the hardest because it involves two Garradors. Even though it's not easy to do, the trick here is to get only one Garrador to come down to where you are. This can be achieved by shooting one with the rifle in its parasite when it turns its body, but that doesn't always work. Sometimes you also just get lucky and only one will come down even if you miss your shot. And then, of course, even if you get only one down there, shooting it might get the other's attention and bring it to that area as well.

The reason you want to stay in that area if possible is that if you go up the first flight of stairs, monks will show up and you'll have to worry about them as well. Any way you go about it, the idea is the same as before, where you have to get behind the Garradors to shoot the parasite on their backs.
