Every Herb Salad Dressing

‘Tis the season of fresh herbs! I love picking a jarful from my garden and using the fresh herbs throughout the week.

(Have any of you ever seen an herby wedding bouquet? That would be cool!) 

I took a handful of the herbs I picked and turned them into this super fresh, green salad dressing. Blend once and eat on five different salads.

The ingredients are simple: olive oil, yogurt for creaminess, lemon for bite, salt and pepper, and of course all those herbs. I used basil, thyme, parsley, and dill but feel free to mix and match as you please! Any herb would be delicious.

Just stick the ingredients in a blender and blend! (And use a garlic clove if you enjoy garlic breath : ) )

Ingredients

  • 1/2 cup mixed herbs
  • 3 tbsp olive oil oil
  • 3 tbsp plain yogurt
  • 2 tbsp lemon juice
  • 1/4 tsp garlic powder
  • 1/8 tsp kosher salt
  • Dash black pepper

Instructions

  • Place all ingredients into a blender and whirl away!

    I had an herby wedding bouquet! I based all the flowers in my wedding on the Victorian Language of Flowers, so I used certain herbs in my bouquets for their meanings. For instance, Rosemary for remembrance (may we remember our vows) and arbor vitae for friendship (used in bridesmaid and groomsmen flowers).

    Garlic powder will give you garlic breath also btw 🙂

    Kath, when you were losing weight, did you measure your veggies before or after cooking ? I know that meat and grains should be meadured before cooking

      Either is fine, but I wouldn’t worry too much about veggie portion sizes! The more the better!

    That salad dressing looks divine…and I love the idea of adding any herb you have on hand to it. I could make this every day at the moment. I’m staying at my in-laws house in Italy (for two months!) and they have every single herb imaginable! The only one they are missing is fresh dill (which I don’t even think exists here). That one would be a MUST for me to add to my salad dressing!
