Organic miso paste is made from a blend of cooked soybeans and grains of usually rice or barley, mixed with salt and a fungus called Aspergillus oryzae, or koji. This left to ferment in pots from a few weeks to over a year. Depending on the type of grains and how long it’s left to age, misos can range from light to dark, along with their flavour profile.
The Japanese are well known for their longevity which has been largely attributed to their eating habits. Miso has shown in some cases as a suppressing effect against cancer and in eliminating radioactive substances in our body. Miso also helps to lower cholesterol levels, prevents skin ageing and maintains nutritional balance.

Awase Miso with Rice/Barley - A blend of well-aged barley miso with a light koji miso
Brown Rice Miso - Made with brown rice, koji, soya beans and sea salt, certified organic by OCIA
Hatcho Miso - Made from 100% soybean, koji and sea salt, certified organic.
Barley Miso - Made with barley koji, soybeans and sea salt, duly certified organic by OCIA.
Natto Miso -Natto miso is a miso condiment, ready to be eaten and enjoyed with cooked rice, porridge, spread on toast. Made from soybeans, barley, barley malt syrup, sea salt, ginger, kombu and koji.
Shiro Miso - Shiro Miso uses a large proportion of rice koji and less amount of sea salt compared to other kinds of miso
Dashi is a traditional Japanese soup broth made from Kombu seaweed and shiitake mushrooms, sometimes with katsuobushi or dried tuna flakes. Kombu provides amino acids, iodine, potassium, calcium, iron, potassium, magnesium, zinc, and Vitamins B, C, D and E.
Katsuobushi is rich in amino acids which are fundamental to keep your body healthy, and lower your blood pressure, increase circulation and boost cognition.
It is often found in a powdered form that can be added to make broth with udon, cooked vegetables, stew, clear soup, miso soup, fried rice, and sautéed vegetables. It contains no MSG, no preservatives and no additives.
