Click the selection tool to get a bounding box around the text, then go to Type > Create Outlines. This makes a group of separate objects of the letters.
Using the line tool, draw lines across the letters that will be used to divide the text into pieces. Select all of the lines and the text by dragging around them with the selection tool.
Pathfinder Divide
Open the Pathfinder palette ( Window > Pathfinder ) and click the Divide button. Illustrator will use the lines to divide the text into pieces.
Go to Object > Ungroup, and then select each piece separately and move it away from the other pieces to shatter the text.
