Nutty Orzo and Vegetables Recipe

Ingredients

2 cup(s) mixed vegetables, frozen

1/2 cup(s) orzo (rosamarina)

1 can(s) beans, garbanzo (chickpeas)

1 can(s) tomatoes, diced, no salt added

1 1/3 cup(s) spaghetti sauce, light

1 tablespoon thyme

1/4 cup(s) nuts, cashews

1/4 cup(s) cheese, mozzarella, part-skim, shredded

Preparation
1.

In a large saucepan cook the frozen vegetables and pasta according to pasta package
directions, except omit any oil or salt. Drain. Return pasta mixture to hot saucepan.

Stir in garbanzo beans, undrained tomatoes, spaghetti sauce, and thyme. Bring to boiling;
reduce heat. Cover and simmer for 5 minutes.

3.

Stir in cashews or almonds. Sprinkle individual servings with mozzarella cheese.
