Sesame Herbed Potatoes


8-10 large potatoes 1 tsp. salt
1 tsp. sweet basil 1 tsp. oregano
1 tsp. parsley flakes 1 tsp. onion powder
1 ½ Tbsp. nutritional yeast flakes 2 Tbsp. sesame oil
Preheat oven to 350 degrees. Wash potatoes (peel if desired). Cut potatoes into cubes.
Put all potato pieces into large bowl, then dribble on sesame oil and toss well. Add
remaining ingredients and toss again. Coat large, flat pan with “PAM” or lecithin/oil; add
potatoes one layer thick and bake until tender and browning (may take 1 hour if cubes
are large).

Potato Broccoli Bake


8 c. potatoes, thinly sliced 2 recipes or about 4 ½ c. Quick
4 c. broccoli, bite size pieces and Easy Cheese Sauce (white)
3 Tbsp. hulled sesame seeds
Layer into medium sized lecithin/oiled baking dish in the following order:
4 c. potatoes — 1 ½ c. cheese sauce — 1 Tbsp. sesame seeds
4 c. broccoli — 1 ½ c. cheese sauce — 1 Tbsp. sesame seeds
4 c. potatoes — 1 ½ - 1 ¾ c. cheese sauce — 1 Tbsp. sesame seeds
Bake at 350 degrees for 45 minutes, covered, or longer if necessary until all potatoes
fall apart when pricked with a fork. Uncover and bake 15 minutes longer if needed to
brown. Remove and serve hot.
Variation: Substitute cauliflower or more potatoes for broccoli.

Baked Eggplant #1
Cut eggplant into ½” slices. Coat one side with Tomato Sunflower Seed Dressing or
Ketchup and Soy Mayonnaise mixed in equal parts. Then dip into or sprinkle on Breading
Meal #1. Place on sprayed cookie sheet, breaded side down. Then repeat procedure for
the side that is up. Bake at 350 degrees for 10 minutes on one side. Flip and bake an
additional 10 minutes on the other side.

Corn-On-The-Cob
Take off husks and silks of corn. Cut out any bad kernels. Place in steamer and steam
for 10 minutes. Serve hot with salt and margarine if desired.

Dressed Cabbage
Cut cabbage into thin wedges. Place in steamer and steam until cabbage is tender but
still crisp. Place wedges on serving plate or in individual bowls and sprinkle with salt.
May be served with soy sour cream or other dressing. Serve 1-2 wedges per person.
