PROCEDURE
1. Drying plates were removed from the support frame and the scale is tare to zero.
2. Drying plates were inserted individually into the support frame. The weight of the
individuals drying plates on the digital scale were read and noted.
3. The heating level was switched on and set up.
4. Material to be dried (bananas which was sliced thinly) was spread on the drying plates.

5. Drying plates were inserted in the support frame and the total weight (initial mass of the

bananas) was recorded.

The initial temperature and humidity which shown on the tray dryers taken and recorded.
The fan was switched on and the velocity was recorded.
The drying experiment was started and time was measured by using a stopwatch.
Temperature, humidity, velocity and mass of the material were recorded in 10 minutes

interval until total time reached 1 hour.

10. The heater was switched off but fan was let on to cool down the channel.
11. The drying plates were removed and cleaned.
12. The Tray Drier Training Unit was shut down.
13. The moisture content and the drying rate were calculated.
14. The graph of drying rate against moisture content was plotted.

RECOMMENDATIONS
From this experiment, there are some recommendations which could be done in order to improve
the experiment which can result in more accurate data;
1. The surface area of drying material should be reduced to increase the rate of reaction,
hence the rate of evaporation will increase.
2. The heating of the tray dryer is set up until an optimum temperature which suits the
drying material.

3. Make sure hands are not wet when working with the equipment. Before opening the
control cabinet and working on the electrical system, disconnect the unit from the mains.
4. The dryer should be cleaned from dust, dirt and moisture because good air circulation is
important to reduce the drying time.
