meat biryani:

Ingredients: 20 gms Garlic


100 gms Green Chillies
1 kg Rice 50 gms Fried Onion
1 kg Mutton 1 bunch Coriander Leaves
10 gms Cardamom 1bunch Pudina
10 gms Cinnamon 2 Lemon
10 gms Cumminseed 1/4 Curd
10 gms Cloves 1/4 kg Ghee
40 gms Ginger

How to make meat biryani:

• Wash mutton and take it in a vessel.


• Grind green chillies, ginger, garlic, spices, fried onion, and mix them all, then add this
mixture to the meat.
• Then add curd to it, mix the stuff thoroughly. Leave the material for half an hour.
• Take 2 litres of water in a vessel and put it on the stove.
• When water boils well put the rice in the vessel. Take out the semi-cooked rice and
spread it on the meat and spices mixture as a layer. Take some more rice and spread
as second layer. Finally, spread the fully cooked rice.
• Prepare a mixture of one cup of boiled water and 1/4 kg ghee and spill it on the rice.
• Now put a plate on the vessel and seal the edges with dough. Put the vessel on the
stove, cook for 15 minutes on medium flame.
• Then turn off the stove. Leave the stuff for 15 minutes.
• Hyderabadi mutton biryani is ready to serve.

meat biryani:
Ingredients: • 1 cup Onion (chopped)
• 1/2 kg Mutton (cleaned and cut into • 1 inch piece Ginger
pieces) • 1 tsp Poppy Seeds
• 2 cups Basmati Rice • 3 Peppercorns Cloves
• Few flakes garlic • 3 Cardamoms Cloves
• 3 tsp Coriander Powder • 1 cup Curd
• Dried coconut • 1/2 cup Onion
• 1 inch stick Cinnamon • 2 Bay leaf
• 3 Green Chillies • 8 tbsp Fat
• 1 tsp Chilli Powder • Salt to taste

How to make Mutton Biryani:


• Marinate the meat in curd taken in a bowl.
• Roast cardamom, cinnamon, peppercorns cloves. Make a fine powder.
• Grind ginger, red chillies, green chillies, half the onions, garlic and dried kernel of the
coconut.
• Now heat fat in a pan. Add chopped onions and ground spices.
• Fry until onions turn golden brown.
• Now add meat and fry well. Add poppy seed powder.
• Add salt and remaining curd. Cook till meat becomes tender.
• Add powdered spices to it and remove from the flame.
• Fry remaining onions in fat in a separate pan.
• Add cloves and bay leaf.
• Fry for few minutes and add rice.
• Fry for another few minutes.
• Put salt to taste and make the quantity of water double.
• Remove from the flame when rice gets cooked and no moisture is left.
• Arrange a part of cooked rice in a pan and sprinkle saffron water over it.
• Place the meat over it and cover with rice layer once again.
• Garnish with fried onions and nuts.
• Mutton Biryani is ready.

SWEET MANGO PICKLE RECIPE


Ingredients:

1 kg raw Mangoes (Aam) peeled and thinly sliced


120 grams Salt (Namak)
1 teaspoonful Turmeric (Haldi)
11/2 teaspoons Red chili pepper (Lal Mirchi)
3 teaspoons aniseed
2 teaspoons fenugreek seeds
2 3/4 cups Sugar (Cheeni)
1/2 teaspoon Onions seeds (Kalonji)

How to make sweet mango pickle :

• Mix all the above ingredients together, put in clean jar and cover with a closely fitting
lid.
• Keep in the sun and shake it once daily till mangoes are soft. LI>

Ingridients:
• 500 g mutton, pieces • 3 -4 pieces cinnamon
• 600 g basmati rice, washed, • 3 -4 cloves
drained and soaked for one • 8 -10 black peppercorns

• 1/4 cup oil or 1/4 cup ghee • 3 -5 leaves fresh coriander

Directions:

Prep Time: 1 1/2 hrs


Total Time: 3 1/2 hrs

1. 1 First of all, cut potatoes into quarters.


2. 2 Apply salt to them.
3. 3 Deep fry.
4. 4 Pour oil/ghee in a skillet.
5. 5 Fry the onions until pink in colour and crisp, remove them and keep
aside before adding the cinnamon, cloves and the pastes.
6. 6 Add cinnamon, cloves, peppercorns, bay leaves and green cardamoms.
7. 7 Add ginger-garlic pastes.
8. 8 Fry for 3 minutes.
9. 9 Add in the washed mutton pieces.
10.10 Saute until the mutton gives out its own juices.
11.11 Add the slit green chillies.
12.12 Add turmeric, chilli and cumin powders.
13.13 Mix well.
14.14 Saute for 5 minutes, stirring continuously.
15.15 Mix in fresh yogurt.
16.16 Simmer until the mutton is cooked.
17.17 Add salt.
18.18 Continue to cook until the oil separates from the meat.
19.19 Add finely chopped corriander and mint leaves.
20.20 In a separate pot, parboil rice until the grains are half cooked.
21.21 Strain the rice.
22.22 Spread out the mutton mixture in a heavy bottom pan.
23.23 Sprinkle the rice on top.
24.24 Add fried potatoes.
25.25 Sprinkle saffron milk over this.
26.26 Sprinkle crisp fried onions on top.
27.27 Cover the platter with a tight fitting lid.
28.28 Cook on low flame for 20 minutes.
29.29 Serve with plain chilled yogurt or raita (I'd love to have cucumber raita
as it's my favourite) and pappadams.

a few flakes garlic 2 cups pulao rice
3 tsp coriander powder ½ cup onion
3 green chillies 2-3 cloves
1 tsp chilli powder 1 inch piece cinnamon
? cup dried coconut 2-3 cardamom
1 tsp poppy seeds 2-3 bay leaf
2-3 cloves, cardamom, peppercorns Salt to taste
1 inch stick cinnamon 5 tbsp fat
1 cup curds
salt to taste

Method:
Clean and cut meat. Soak in curd.
Roast and powder cloves, cardamom, cinnamon and peppercorns.
Grind together red chillies half the onions, ginger, garlic and green chillies and copra. Heat
fat.
Add sliced onions. Add ground spices and fry.
Add meat. fry well. Add ground poppy seeds.
Add remaining curds and salt and cook gently till meat is tender.
Add powdered spices. Remove from fire.

For the Rice


Slice onions. Heat fat. Fry onions and remove. Add spices.
When they crackle, add rice and fry for a few minutes longer.
Add salt and double the quantity of hot water.
When rice is cooked and all moisture has evaporated, remove from fire.
For the Biryani
Make a layer of rice in a pan, sprinkle with saffron water, place meat layer over it and again
cover with rice.
Serve hot, garnished with fried onions and fried nuts

Chicken curry
Ingredients: 2 cups cooked chicken, diced
1 (3 ounce) can mushrooms, drained
1 tbsp butter Salt To Taste
1 cup chopped apple Rice Ring
1 cup sliced celery 1/4 cup butter
1 clove garlic, minced 1/2 cup chopped onion
1/2 cup chopped onion 1/4 cup slivered almonds
2 tbsp cornstarch 1/2 cup light raisins
2 to 3 tsp curry powder 6 cups hot cooked rice
3/4 cup cold chicken stock 6 1/2 cup ring mold
2 cups milk

How to make curry chicken :

• Melt butter in saucepan; add apple, celery, garlic and onion. Cook until onion is
tender. Combine cornstarch, curry powder, 3/4 teaspoon salt and broth.
• Stir into onion mixture; add milk. Cook until thickened, stirring constantly. Add
chicken and mushrooms; stir and heat through. Serve over rice ring.
• Rice Ring : Melt butter in skillet; add onion and almonds (until golden). Add raisins;
heat until plump. Add all to rice and mix.
• Press mixture into greased mold. Unmold at once on platter and fill with indian
chicken curry.

Chicken Biryani
Ingredients:

2 cups Basmati Rice 1/2 cup Milk


3/4 kg Chicken Pieces 1 cup Yogurt (curd)
3 sliced onion 2 tsp Garam Masala Powder
1 tsp Ginger Paste 1/2 tsp Green Cardamom Powder
1/2 tsp Garlic Paste Saffron a pinch
1 tsp Green Chilli Paste 1 tsp Coriander Powder
1/2 cup Tomato Puree 2 tbsp Green Coriander Leaves
2 tsp Red Chilli Powder Salt to taste
1 tsp Turmeric Powder 7 tbsp Oil
1 tsp Roasted cumin powder

Preparation:

• Mix tomato puree, yogurt, ginger garlic paste, green chilli paste, red chilli powder,
turmeric powder, roasted cumin powder, garam masala, coriander powder and salt.
Stir well.
• Marinate the chicken with this mixture and keep aside for 3-4 hours.
• Heat oil in a pan. Fry the onions until golden brown.
• Add the marinated chicken and cook for 10 minutes.
• Add 4 cups of water to the rice. Mix saffron in milk and add to it.
• Add cardamom powder. Add the chicken pieces.
• Pressure cook the rice. Mix gently.
• Garnish with green coriander leaves and serve hot.

Bahan:

1 kg Beras 10 gram Kayu manis


1 kg Mutton 10 gram Cumminseed
10 gram Kapulaga 10 gram Cengkeh
40 gram Jahe 1bunch Pudina
20 gram Bawang putih 2 Lemon
100 gram Cabe Hijau 1 / 4 Curd
50 gram Bawang Goreng 1 / 4 kg Ghee
1 ikat Daun Ketumbar

Cara membuat biryani daging:


• Cuci dan mengambil daging kambing dalam kapal.
• Grind cabe hijau, jahe, bawang putih, rempah-rempah, bawang goreng, dan
campuran mereka semua, kemudian tambahkan campuran ini ke daging.
• Kemudian tambahkan dadih untuk itu, campuran barang-barang secara
menyeluruh. Tinggalkan materi selama setengah jam.
• Ambil 2 liter air dalam kapal dan menaruhnya di atas kompor.
• Ketika air mendidih masukkan beras baik di kapal. Ambil beras-semi dimasak
dan menyebar di daging dan campuran rempah-rempah sebagai suatu lapisan.
Ambil nasi lebih banyak dan menyebar sebagai lapisan kedua. Akhirnya,
menyebarkan beras sepenuhnya matang.
• Siapkan campuran satu cangkir air matang dan 1 / 4 ghee kg dan tumpah di
nasi.
• Sekarang meletakkan piring di kapal dan segel tepi dengan adonan. Letakkan
kapal di atas kompor, masak selama 15 menit pada api sedang.
• Kemudian matikan kompor. Tinggalkan barang-barang itu selama 15 menit.

Metode:
Bersihkan dan daging dipotong. Rendam dalam dadih.
Panggang dan bubuk cengkeh, kapulaga, kayu manis dan merica.
Grind bersama cabe merah setengah bawang, jahe, bawang putih dan cabe hijau
dan kopra. Panas lemak.
Tambahkan irisan bawang bombay. Tambahkan bumbu halus dan goreng.
Tambahkan daging. masak hingga matang. Tambahkan biji poppy tanah.
Tambahkan dadih yang tersisa dan garam dan masak dengan lembut sampai
daging lunak.
Tambahkan bubuk bumbu. Hapus dari api.

Untuk Beras tersebut


Slice bawang. Panas lemak. Goreng bawang dan menghapus. Tambahkan
bumbu.
Ketika mereka kresek, tambahkan nasi dan goreng selama beberapa menit lagi.
Tambahkan garam dan menggandakan kuantitas air panas.
Bila padi dimasak dan kelembaban semua telah menguap, keluarkan dari api.
Untuk Biryani yang
Buat layer beras dalam panci, taburi dengan air kunyit, lapisan tempat daging di
atasnya dan tutup lagi dengan nasi.
Sajikan panas, hiasi dengan bawang goreng dan kacang goreng

kari, 3 / 4 sendok teh garam dan kaldu.
• Aduk ke dalam campuran bawang, tambahkan susu. Masak hingga mengental,
aduk terus. Tambahkan ayam dan jamur, aduk dan panas melalui. Sajikan atas
ring beras.
• Rice Ring: Lelehkan mentega dalam wajan, tambahkan bawang merah dan
almond (sampai emas). Tambahkan kismis; panas sampai gemuk. Tambahkan
semua untuk beras dan campuran.
• Tekan campuran ke dalam cetakan berminyak. Unmold sekaligus di piring dan
isi dengan kari ayam indian.

Chicken Biryani
Bahan:

2 cangkir Basmati Rice 1 sdt Kunyit Bubuk


Pieces kg ayam 3 / 4 1 sdt bubuk jintan sangrai
1 / 2 cangkir Susu 2 sdt Garam Masala Powder
1 cup Yogurt (curd) 1 / 2 sdt Bubuk Green Kapulaga
3 bawang merah iris Saffron keadaan darurat
1 sdt Jahe Paste 1 sdt Ketumbar Bubuk
1 / 2 sdt Bawang putih Tempel 2 sdm Ketumbar Daun Hijau
1 sdt Tempel Cabe Hijau Garam secukupnya
1 / 2 cangkir puree Tomat 7 sdm Minyak
2 sdt Bubuk Cabai Merah

Persiapan:
• Campur tomat pure, yoghurt, jahe pasta bawang putih, pasta cabai hijau, cabe
merah bubuk, bubuk kunyit, bubuk jintan panggang, garam masala, bubuk ketumbar
dan garam. Aduk rata.
• Rendam ayam dengan campuran ini dan tetap selain selama 3-4 jam.
• Panaskan minyak dalam wajan. Goreng bawang sampai berwarna cokelat keemasan.
• Tambahkan ayam berbumbu dan masak selama 10 menit.
• Tambahkan 4 cangkir air beras. safron Campurkan susu dan tambahkan padanya.
• Tambahkan bubuk kapulaga. Tambahkan potongan ayam.
Tekanan • masak nasi. Mix lembut.
• Hiasi dengan daun ketumbar hijau dan sajikan panas.
