at six cafés at Emory University’s two campuses
- Create materials for and lead daily pre-meal trainings for chefs, café managers, and servers reviewing top food
allergens and dietary preference indicators
- Review weekly menus to ensure appropriate identification of the top eight food allergens, proper portion sizes, and
a varied menu mix of vegan, vegetarian, made without gluten-containing ingredient, and halal options
- Spearhead “Food For Your Well-Being,” a monthly newsletter and food-focused health initiative
- Inspect menu board and grab-and-go labels at cafés to ensure FDA compliance with nutrition fact panels
- Guide students to navigate cafés based on dietary restrictions and needs, and report concerns to dietitian
- Collaborate with sous chef to create a rotating global street food menu based on student and client feedback
- Interview and select Emory students as paid sustainability interns to assist with waste audits and local, sustainable
purchasing projects
- Oversee waste audits to determine cafés’ compliance with Emory’s compost and recycling expectations
- Develop partnerships with local food vendors and created new connections between off-site cafés and new
produce vendors
- Hold bi-weekly meetings with ten chefs from all cafés to discuss ordering from local vendors, needs from support
team, and upcoming sustainability initiatives
- Created centralized ordering system comparing pricing and availability of local produce to improve ordering
efficiency and organization
