1 INSTALLATION - RESERVED TO INSTALLER


1.1 Normatives and prescriptions
œ Read carefully the contents of this handbook, it contains important information
and instructions for installation, using, maintenance and product safety.
œ The appliance must be installed inside an environment considered suitable for
installation and using from competent authorities. All laws, standards and
regulations in force on the installation site must be observed, regarding fire
prevention.
œ Technological connection and appliance installation must be carried out by
qualify staff authorized to release a conformity certificate according with the
normative in force and current standards.
œ All the normative concerning civil town planning and/or industrial in force must
be respected inside environment installation of appliance.
œ All laws, standards and regulations in force on the installation site must be
observed, regarding: gas and flues, electricity, water and steam, drains and
waste disposal, forced ventilation/extraction, air intake and air conditioning. All
the local and energy supplier authorities’s prescriptions must be respected.
œ The installation must be carried out and certified according to the normative in
force regarding: work safety and accident prevention regulations, hygiene and
health, fire prevention, no-panic safety for activities open to public.
œ Gloves should be worn to protect the hands during installation and maintenance
operations.

1.2 Preliminary operations


œ Before installation, to check the appliance integrity. In case of doubt, do not use
the appliance and call the dealer.
œ To take away the safety cling film. To eliminate immediately every bonding
agent with specific detergent for plastic parts.

1.3 Appliance positioning


œ The room in which the appliance is to operate must be well ventilated.
œ In case of appliance installation in direct contact with flammable walls, it is
advisable to fit a suitable heat insulation.
œ The appliance should be installed and placed under an extractor hood according
with the normative in force.
œ This appliance type are not suitable to built in.
œ Do not obstruct air vents or heat dissipation openings.
œ Install the appliance horizontally, correct positioning is obtained by turning the
levelling feet.

œ Before to connect the appliance to the power supply, to check that the voltage
and frequency values displayed on the technical plate are compatibles with the
values of the power supply.
œ The supplied appliance is designed to perform the operation specified on the
technical plate located on the appliance (see pag. 6/12 for an example).
œ Turn off the main electrical switch and locate the connection junction–box: It is
located inside hollow on the front. For connection, it’s necessary to remove the
top, push the connection cable through the cable channel, connect the conductor
wires to the corresponding terminals in the junction–box and fix them into
place. Block the cable with the cable blocker. Reassemble the cover.
œ To connect the cable to an adequate electric socket. The appliance must be
connected to earth in accordance with current standard.

œ An omni pole switch and protection device adequate to rated load must be
installed between the appliance and the power grid. In accordance with
international normative, at appliance connection, an automatic device enabling
the disconnection of all contacts from the mains, must be installed above it; this
device must have a contacts opening of at least 3 mm.
œ The earth wire must be longer than the others so that if the cable blocker should
break, it will disconnect after the tension wires.
œ At operating machine, the applied voltage doesn’t move away from the rated
voltage ±10%.
œ The appliance must be connected to an equipotential system and the
effectiveness of this one is to check, according to normative in force. The

connection screw is identified by the symbol.


œ This appliance requires a water connections. The line must be fitted with an on-
off valve.
œ The cut-out switch, the plug and the on-off valve must be near the appliance and
easily to reach.
œ The power cable shall be of the kind described in the paragraph 1.5 and shall be
resistant to oil.

Connection to waterworks
œ Water inlet pressure must be between 50 and 300 kPa, otherwise install a
pressure regulator on the line before the appliance.
œ Install a cut-off valve for each supply on the line before the appliance.
œ Make connections according to regulations currently in force.

Warning
Before delivery the appliance to the user, it’s necessary:
œ To check that it operates correctly, in particular:
a) that the protective film has been removed from the external surfaces;
b) that the terminal board housing, removed for electrical connections, has
been reinstalled;
c) that connections have been made in accordance with the requirements and
directions indicated in this manual;
d) that all safety requirements in current standards, statutory regulations and
directives have been respected;
e) that the water connections are leak-free;
f) that the electrical connection has been performed according to standards;
g) In addition, check that once the appliance has been installed, the power
cord is neither subject to stretch nor in contact with nor surfaces.

2 USING - RESERVED TO USER


2.1 Important warnings

œ To read carefully this section’s instruction which are very important for use,
maintenance and appliance safety.
œ To take care of this handbook to use it every time it’s necessary.
œ The appliance illustrated in this handbook must be employed only from qualify
staff.
œ The appliance must be employed only for a professional cooking: others use
would be improper therefore dangerous.
œ The appliance functioning, create high temperature on some internal and
external surfaces, with which user could get in touch so it’s necessary the
maximum attention!
œ The operation of the machine must always happen under surveillance.
œ Don’t wash the appliance with direct or high pressure jets of water.
œ Shut-off the appliance in case of breakdown or bad functioning; disconnect or
close all supply (electrical net, waterworks, ecc..).
œ In case of recurrent failures contact a service technician.
œ Every maintenance operation, every repairs or substitution, must be done from
qualify staff or assistance centre. To use only original spare parts.
œ Do not obstruct air vents or heat dissipation openings.
œ Not used absolutly as frying mode.

2.2 Starting up

œ Before starting up the appliance for the first time, remove all the packing and
throughly clean the protective industrial grease from the cooking pan.
œ WARNING: Fill the cooking pan up to a maximum of 40 mm under the
overflow border, according to the maximum level mark, including the food to be
cooked.

Start up

œ Use the main switch to switch on the


appliance.
œ Turn the knob from “0” position to set
temperature, between 45°C and 295°C;
œ Heating of the cooking pan by means of three
heating elements (2900W 240V each one),
fitted to the bottom of the pan.

The signal lamps will light, the green one indicates that the appliance is switched on
and the orange one indicates that heating elements are switched on; when the desired
temperature is reached this signal lamp will go out.

Emptying the cooking pan

The tilting of the cooking pan is made by means of an handwheel placed on the RH
side of the front panel. Turning the handwheel clockwise the pan goes up, turning it
anti-clockwise the pan goes down.

Switch off
œ Turn the knob to “0” position.
œ If the appliance is not used, switch off the circuit breacker.

3 MAINTENANCE AND CLEANING


RESERVED TO USER
3.1 Daily maintenance

œ Every evening it’s necessary to clean carefully the appliance. A daily cleaning
ensure a perfect hygiene and a good functioning.
œ Before starting to clean the appliance, disconnect the power supply.
œ It is advisable to clean the appliance only once it has cooled down.
œ Do not wash the appliance with direct or high pressure jets of water, do not use
metal pads, brushes or scrapers in normal steel. If necessary, use stainless steel
pads, but do not rub them against the grain of the metal of the appliance.
œ The steel parts must be washed with hot water and neutral detergent, rinse
thoroughly and dry with a soft cloth. The appliance lustre is keep along cleaning
it with liquid POLISH.
œ Do not wash the appliance or the floor with hydrochloric acid.
œ If the appliance is not employ for a long time, it’s necessary to clean it
thoroughly, leaving not traces of food or dirt; the steel surfaces can be protected
by a soft cloth withVaseline oil, in order to make a little protective film. The
deep surface of the pan must be covered with a little film of oil for aliments.
Leave the lid open so that air can circulate inside the pan; be absolutely certain
to shut off all utilities (electrical power supply and water); air the room
appropriately.

3.2 Extraordinary maintenance

œ Once a year to check the appliance completely by a qualify technician.


œ We recommend to ask for an assistance centre to stipulate a yearly maintenance
contract.
œ Only technically qualified service centres can perform the operations described
below!

Disconnect the appliance (take off the fuses)


œ To easily have access at particulars to replace, remove the front panel after
having removed the control knob, the handle of water inlet tap and the
handwheel for tilting of pan.

Replacement of heating elements
œ Disconnect the electric cables to heating elements.
œ Remove the front fixed panel and the steady pin of the tilting pan lever.
œ Rotate the pan in the max. opening.
œ Remove the insulation protection, unloosing the fixing screws to the pan.
œ Remove the protection panel of heating elements.
œ Remove the heating element support plate from damaged heating element.
œ Fit the new heating element operating in the opposite order.

Replacement of signal lamp


œ Disconnect the power cables.
œ Remove the signal lamp, unscrewing the plastic nut that fixed it to the control
panel.
œ Fit the new signal lamp in the reverse order of operation.

Replacement of working or safety thermostat


œ Disconnect power cables, after having removed the front panel.
œ Remove the insulation protection, unloosing the fixing screws to the pan.
œ Remove the protection panel of heating elements.
œ Remove the support plate of central heating element.
œ Remove the central heating element and then the fixing bulb boss.
œ Replacing the new thermostat be careful about tightening of the boss on the
bulbs. If the bulbs would be squeezed, this would cause the damage of
thermostat.

Replacement of the switch


œ Disconnect the power cables, after having removed the front panel.
œ Replace the switch uloosing the fixing screws to the support , after having taken
off the coaxial working thermostat.
œ Fit the new switch in the reverse order of operation.

Possible failures and their elimination

Pan does not reach set temperature


œ Check connections to the switch.
œ Check connection to the working thermostat.
œ Check connection to electromagnetic switch.
œ Heating elements are burned.

Signal lamps do not light up


œ Check the connection to the switch.
œ Signal lamp is faulty.

The bratt pan works with disconnected themostat


œ Electromagnetic switch contacts are cut off.

Low efficienty of the pan


œ Check the heating elements.

3.3 Control and safety elements


œ All the parts of the appliance that are subject to wear can easily be accessed
from the front of the appliance by opening the door or after removing the front.
œ The appliance has a safety thermostat that disconnects the power supply to the
heating elements if the temperature in the pan exceeds the set level.
œ At thermostat safety intervention, it’s necessary to call the qualify staff in order
to check the thermostat.
